HOMEMADE TATER TOTS RECIPE

It's well worth it to make these twice-fried tots from scratch. No store-bought version can give you the freedom to customize flavors like a homemade tot.

2 pounds russet potatoes, peeled and cut into rough 1-inch chunks
2 quarts peanut, vegetable, or canola oil
2 teaspoons kosher salt
1 tablesoon cornstarch or potato starch
1/2 teaspoon granulated sugar
Freshly ground black pepper

Steps:

  • Place potatoes in a bowl of cold water and agitate for 10 seconds. Transfer to a fine-mesh strainer and allow to drain for 5 minutes. Meanwhile, heat oil in large wok or Dutch oven over high heat to 350°F (177°C). Fry potatoes, stirring them with a wire spider until light golden brown and tender, 6 to 8 minutes, adjusting flame to maintain oil temperature. Transfer to a paper towel-lined bowl and allow to cool for 10 minutes. Reduce heat to low.
  • Transfer 1/4 of the potatoes to the bowl of a food processor and pulse until broken down into rough 1/4- to-1/8 inch pieces, about 8 one-second pulses. Transfer to a mixing bowl and repeat with the remaining potatoes, working in 3 more batches.
  • Add salt, starch, sugar, black pepper to taste, and any flavorings if desired. Gently mix with your hands to combine. Shape into cylinders about 3/4-inch wide and 1-inch long.
  • Reheat oil to 350°F and add Tater Tots. Allow to fry for 1 minute, then gently agitate with a metal spider to separate them. Continue to cook, adjusting flame to maintain heat, until golden brown and crisp, about 4 minutes longer. Transfer to a paper towel-lined plate to drain. Season immediately with salt. Serve hot.

CRISPY BAKED PARMESAN TATER TOTS

Oven baked and made simply with shredded potatoes, parmesan cheese, olive oil, herbs, garlic + salt...yum!

2 (16 ounce) bags frozen potatoes, thawed
1 tablespoon extra virgin olive oil, plus more for coating
1 cup plus 1 tablespoon grated parmesan cheese
2 tablespoons all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 large pinch kosher salt
1/2 a clove garlic, grated
1 tablespoon fresh thyme or oregano leaves

Steps:

  • 1. Preheat the oven to 450° F. Grease a baking sheet with olive oil. 2. In a food processor, pulse the potatoes together until finely chopped. If you don't have a food processor, you can skip this step. 3. Add the potatoes to a large bowl. Add the olive oil, 1 cup parmesan, flour, onion powder, garlic powder, oregano, and a large pinch of salt. Mix until combined and the mixture is moistened. 4. Scoop 1 tablespoon of the potatoes out of the bowl, pack it together with your hands until it holds a ball, then form into a cylinder and place on the prepared baking sheet. Repeat with the remaining mix. Don't stress about the shape, they don't need to be perfect. Brush/mist each tot with olive oil, be generous. Transfer to the oven and bake 10-12 minutes, slide a spatula underneath the tots, then flip and bake 10 more minutes. Flip once to the uncooked side, bake 10-12 minutes, until golden and crisp. 5. In a small bowl, combine 1-2 tablespoons parmesan, the garlic, and thyme/oregano. Sprinkle the warm tots with the parmesan. Serve tots with lots of ketchup for dipping. ENJOY.

2 large russet potatoes, scrubbed
1 teaspoon olive oil
1/4 cup chopped red onion
2 cups sliced mushrooms
1 clove garlic, minced
1 tablespoon fresh lemon juice
1/2 tablespoon chopped fresh dill or 1/2 teaspoon dried dill
1/4 teaspoon salt
1/4 black pepper
1/4 cup nonfat sour cream
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 425*.
  • Pierce potatoes several times with a fork.
  • Bake potatoes until tender, about 1 hour.
  • Place potatoes on a wire rack and cool slightly.
  • In a large skillet, heat oil over medium heat.
  • Add red onion; saute until tender, about 3 minutes.
  • Add mushrooms and cook, stirring, for 5 minutes.
  • Add garlic, lemon juice, dill, salt and pepper.
  • Cook for 2 minutes.
  • Using a sharp knife, slice potatoes in half lengthwise.
  • Using a small spoon, scoop out potato pulp, leaving a small amount attached to the skin to form a shell.
  • In a large bowl, combine potato pulp, mushroom mixture, sour cream and parmesan.
  • Mix well.
  • Spoon potato mixture evenly into shells.
  • Place potatoes on a baking sheet.
  • Bake until heated through, about 20 minutes.
  • Serve immediately.

2-1/2 pounds baby Yukon Gold potatoes
1 cup 2% milk, warmed
1/2 cup spreadable garlic and herb cream cheese
3 tablespoons butter, softened
1 pound bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
1/2 cup shredded Parmesan cheese
3 green onions, chopped
1/3 cup oil-packed sun-dried tomatoes, chopped

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 15-20 minutes or until tender., Drain; return to pan. 2 large baking potatoes, scrubbed and pricked
3 small yellow squash, coarsely chopped (1 1/4 lb)
1/4 lb small mushroom, sliced
1 medium onion, chopped
1 -2 garlic clove, minced
1 tablespoon butter
1/4 cup milk
2 tablespoons butter
1/4 teaspoon salt
1/2 cup shredded cheddar cheese (or mozzarella)

Steps:

  • Preheat oven to 425. Bake potatoes until fork tender, about 50 to 60 minutes.
  • Meanwhile, saute the squash, mushrooms, garlic and onions in 1 tablespoons butter until tender, about 10-15 minutes.
  • Scoop insides out of potatoes, whip with milk, 2 tbsp butter, salt and then stir in cheese.
  • Refill potato shells. Place on plates and mound the saute'd veggies over the top. Serve immediately.

1 cup uncooked instant rice
4 large firm tomatoes
1 tablespoon finely chopped green bell pepper
1 tablespoon finely chopped onion
1 tablespoon finely minced fresh parsley
½ teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a small saucepan over high heat, bring water to a boil. Stir in rice; cover and remove from heat. Let stand covered 5 minutes or until water is absorbed. Fluff with fork.
  • Slice off the top of each tomato and scoop out the pulp, leaving a 1/4 inch thick shell. Reserve 3 tablespoons of pulp, chopped. Invert the tomatoes to drain.
  • In a medium bowl combine rice, tomato pulp, green pepper, onion, parsley, salt, garlic and olive oil; mix well. Spoon filling into tomato shells.
  • Bake in preheated oven for 20 to 25 minutes.
