BAKED COD SHAKSHUKA

Steps:
- Preheat oven to 400 degrees F.
- Set a large Dutch oven over medium heat. Add the olive oil and heat to shimmering, then add the onion, bell pepper, garlic and jalapeno, paprika, cayenne, cumin, and a pinch of salt. Cook, stirring occasionally, until the vegetables are tender and begin to brown, about 3 minutes.
- Add tomatoes along with their juices, season with another pinch of salt and twist of black pepper, and bring to a boil. Reduce the heat to medium-low to maintain a gentle simmer, partially cover, and cook until vegetables soften and the liquid has mostly reduced, about 15 minutes.
- Remove from the heat and stir in the vinegar. Season the fish on all sides with salt and pepper and partially submerge in the sauce, leaving space between the pieces. Spoon some sauce over each fillet. Transfer the pot to the oven and cook, uncovered, until the flesh of the fish turns opaque and begins to flake, about 15 minutes. Garnish with parsley and a drizzle of olive oil and serve.
POLISH HONEY CAKE

- Brush 4 (1 1/2 cup) brioche tins with melted butter, and sprinkle with 1/4 cup of the bread crumbs. Set aside.
- Preheat oven to 375 degrees F.
- Place honey in a mixing bowl and set over a pot of steaming water; warm until it gets loose. Add the sugar and egg yolks to the honey, and whisk until frothy. Remove the bowl from the heat and whisk in remaining bread crumbs and hazelnuts.
- In a separate bowl, whisk the egg whites until stiff and fold into the batter. Place mixture into the brioche tins and bake for 45 minutes.
- When cool remove from pan and garnish with whipped cream and a drizzle of honey.

POLISH POTATO OVEN OMELET
The "Polish" in this comes from polska kielbasa. This is a great dish for a breakfast in bed or casual brunch, and is sure to please - and fill up - the whole family!

Steps:
- Pre-heat oven to 400 degrees (F). Grease bottom and sides of a 9x13 pan.
- Grate parboiled potatos and mold them into the bottom and sides of greased 9x13 pan. Salt and pepper to taste.
- Place pan in oven for 20 minutes while other ingredients are prepped.
- Pan fry minced onions until they are translucent.
- Chop polska kielbasa into bite sized pieces, place with onions.
- Blend eggs, powdered garlic, and yogurt with a stick blender for a couple minutes until fluffy.
- Remove pan from oven carefully and reduce heat to 350 degrees (F). Add polska kielbasa, cooked onions, and half of the grated cheese to the pan.
- Pour on the egg mixture.
- Return the pan to the oven and cook for approximately 30 minutes, gently stirring egg layer once to ensure even cooking.
- Top with cheese and broil until melted.
- Serve hot!
