June's Take on Wendy's Apple Pecan Chicken Salad image

A friend introduced me to the Chicken Apple Pecan Salad served at Wendy's Restaurant Chain. I loved it and decided to try to duplicate it at home. This is what I came up with. I think its delicious and comes very close to the Wendy's version, but at a much lower price!

Number Of Ingredients 15

Ingredients

1 chicken breast, cooked and cut into bite size pieces
1/2 c pecans, toasted and lightly chopped
1/2 c dried cranberries
1/2 red apple, peeled and chopped
1/2 green apple, peeled and chopped
1/2 c bleu cheese, crumbled
1 pkg mixed salad greens
POMEGRANATE VINAIGRETTE
1/4 c pomegranate juice
1/4 c olive oil
3 Tbsp red wine vinegar
1-2 Tbsp honey
1-2 tsp dijon mustard
1 tsp poppy seeds (optional)
salt and pepper to taste

Steps:

1. To toast pecans the easy way, heat stove top in a nonstick frying pan. Shake pan frequently to avoid burning. Remove from heat when nuts are lightly browned.
2. Place all salad ingredients in a large bowl.
3. Combine vinaigrette ingredients in a separate bowl. Mix well.
4. Add vinaigrette to salad.Toss and serve.

1 red delicious apple (cut into chunks)
¼ cup dried cranberries
½ cup boneless, skinless chicken breasts (cooked and cubed)
¼ cup bleu cheese (crumbled)
¼ cup honey roasted pecans

Steps:

Mix all ingredients together in a large bowl. Serve with your favorite dressing.

2-3 c spring mix lettuce greens ( sold in salad section )
1/2 small unpeeled red apple, chunked
1 Tbsp heaping, feta cheese crumbles
1 Tbsp craisins
1 Tbsp chopped toasted pecans
1 oz grilled chicken breast, cut up bite size ( i have used tyson's pre-cooked) in the fresh meat section

Steps:

1. Layer items in your salad bowl in order given,
2. Heat chicken before adding to salad
3. add pomegranete vinegarette dressing, toss and enjoy

3 tablespoons honey mustard
2 tablespoons lemon juice
Salt (to taste)
Freshly ground black pepper (to taste)
3 cups cooked chicken (chopped)
1 Granny Smith apple (chopped)
1 cup small pecans
1/2 cup dried cherries or cranberries

Steps:

Gather the ingredients.
Combine mayonnaise, honey mustard, lemon juice, and salt and pepper to taste in a medium bowl.
Stir in cooked chicken, chopped apple, pecans, and dried cherries or cranberries to coat.
Cover and chill salad for 1 to 2 hours before serving.

Use a paper towel to blot away excess moisture from the chicken breast. In a small bowl combine salt, pepper, garlic powder, and parsley flakes. Sprinkle the spice mixture on both sides of your chicken. Place chicken into the skillet, and cook for 4 to 6 minutes on each side. You can use a meat thermometer to make sure the chicken has fully cooked. Allow meat to rest while you make the rest of your salad.
Wash the lettuce and spinach, divide the salads between two bowls. Build each salad by adding to each bowl: 2 tablespoons of dried cranberries, 1/2 of the red apple, 1/2 of the green apple, 1 tablespoon of chopped pecans, and 1/4 cup chopped blue cheese. Cut the chicken into bite-sized pieces and divide the meat evenly between the two bowls. Top the salad with the dressing of your choice.
