  • Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until well browned on both sides.
  • Stir the soup and water in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the pork is cooked through.

6 -8 boneless pork loin chops, one inch thick
1/4 teaspoon salt
1/2 teaspoon pepper
1 tablespoon capers
1 tablespoon caper juice
1 tablespoon Dijon mustard
2 tablespoons brown sugar, divided (I used splenda brown mix)
1 (8 ounce) can pineapple rings, drained, reserve juice
3/4 cup red onion, chopped
1 tablespoon olive oil

Steps:

  • Sprinkle chops with salt and pepper.
  • Place chops on cutting board and pound with the spiked side of mallet to approximately 1/2 inch thick; place in a zip lock plastic bag.
  • Marinade:.
  • In a small bowl mix together, capers, caper juice, mustard, 1 tablespoon brown sugar and reserved pineapple juice; mix well. Pour marinade into zip lock bag and massage into pork chops; marinate in fridge for at least 1 hour, 4 hours is best.
  • Heat olive oil in a large fry pan; sauté onions on medium high heat, approximately 6 minutes; push to the side of the fry pan, reduce heat to medium. Drain chops well; add to the fry pan with the onions and brown, approximately 5 minutes on each side. Remove chops to platter and keep warm.
  • Add marinade to pan with onions; on medium high heat reduce to half; push to the side of the pan, return chops to the pan.
  • Cut the pineapple rings in half and place one half ring on top of each chop. Spoon reduced onion/marinade mix on top of pineapple slice; sprinkle with remaining brown sugar.
  • Continue to heat only until sugar has melted and pineapple is heated through, 3 or 4 minutes.
  • Very nice served over brown rice.

4 (8 oz.) pork chops, about 1 inch thick
2 cups water
3 tablespoons salt
1/4 cup sugar
2 cups ice water
2 tablespoons canola oil
2 tablespoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon ground mustard
1 teaspoon pepper
1/2 teaspoon chili powder
2 tablespoons brown sugar

Steps:

  • In a large saucepan, combine water, salt and sugar. Cook and stir over medium heat until salt and sugar are dissolved.
  • Remove from heat and stir in ice water to bring brine to room temperature. Place pork chops in a large, zip-top plastic bag. Pour the brine over the chops and seal the bag, pressing out as much air as possible. Place in a large baking dish and refrigerate for 8-12 hours.
  • Remove chops from brine; discard brine. Rinse pork chops and pat dry. Brush pork chops with oil
  • In a small bowl, combine paprika, garlic powder, onion powder, cumin, ground mustard, pepper, chili powder and grown sugar. Rub over pork chops. Let chops stand at room temperature for 20-30 minutes.
  • Preheat grill for medium heat. Grill chops, covered, for about 4-6 minutes per side, or until a thermometer inserted in the center reads 145 degrees. Let stand 5 minutes before serving.

1 bay leaf

My husband loves pork chops again. He didnt like pork chops because they were always served to him dry and tough. That is until he got to sample mine. They always come out moist and tender. We have these at least two or three times a month.

4 boneless, pork chops - ~1 inch thick
1/2 tsp black pepper
1 tsp seasoning salt
1 tsp garlic powder
1 tsp onion powder
1 to 2 Tbsp olive oil
1/2 to 1 c water

Steps:

  • 1. Preheat oven to 300 degrees.
  • 2. Mix together black pepper, seasoning salt, garlic & onion powder. Rub evenly all over each pork chop. (Season to your taste. My husband doesnt like his as salt so I season his less.)
  • 3. Heat olive oil in a frying pan over med-high heat. Lay pork chops on pan and allow to sear for 2 minutes without moving them. Flip the pork chops over and allow to sear for 1 minute longer.
  • 4. Remove pork chops and place in an oven safe baking dish. I use a 19 x 13 pyrex baking dish.
  • 5. Pour in the water. You will want the water to come about 1/3 the way up the pork chop.
  • 6. Cover baking dish tightly. I use tinfoil and seal the sides very tight. Place in preheated oven.
  • 7. Bake for 1 1/2 to 2 hours. Your pork should be at 160 degrees when done. I would not check until at least an 1 1/2 hours have past. You will let out all the steam that is keeping the chops moist.
  • 8. The juices in the baking dish make a wonderful gravy.

3 cups cold water, divided
3 tablespoons kosher salt (or 2 1/2 tablespoons table salt)
Optional flavorings: 2 smashed garlic cloves, 1/2 teaspoon black peppercorns, 1 bay leaf
2 to 4 center cut, bone-in pork chops (3/4-inch to 1-inch thick, about 1 pound each)
Olive oil
Salt
Pepper

Steps:

  • Brine the pork chops (optional). If you have time, brining the pork for even a brief period adds flavor and ensures juiciness in the finished chop. Bring 1 cup of the water to a boil, add the salt and optional flavorings, and stir to dissolve the salt. Add 2 more cups of cold water to bring the temperature of the brine down to room temperature. Place the pork chops in a shallow dish and pour the brine over top. The brine should cover the chops - if not, add additional water and salt (1 cup water to 1 tablespoon salt) until the chops are submerged. Cover the dish and refrigerate for 30 minutes or up to 4 hours.
  • Heat the oven and skillet. Arrange a rack in the middle of the oven and heat to 400°F. Place a large ovensafe skillet in the oven to heat as well. While the oven heats, prepare the pork chops.
  • Season the pork chops. Remove the chops from the brine; if you didn't brine, remove the chops from their packaging. Pat dry with paper towels. Rub both sides with olive oil, then season with salt and pepper. Set the chops aside while the oven finishes heating.
  • Remove the skillet from the oven. Using oven mitts, carefully remove the hot skillet from the oven and set it over medium-high heat on the stovetop. Turn on a vent fan or open a window.
  • Sear the pork chops. Place the pork chops in the hot skillet. You should hear them immediately begin to sizzle. Sear until the bottom of the chops are golden-brown, about 3 minutes. The chops may start to smoke a little - that's ok. Turn down the heat if it becomes excessive.
  • Flip the chops and transfer to the oven. Use tongs to flip the pork chops. Using oven mitts, immediately place the skillet in the oven.
  • Roast the chops until cooked through. Roast until the pork chops are cooked through and register 140°F to 145°F in the thickest part of the meat with an instant-read thermometer. Cooking time will be 6 to 10 minutes depending on the thickness of the chops, how cool they were at the start of cooking, and whether they were brined. Start checking the chops at 6 minutes and continue checking every minute or two until the chops are ready.
  • Rest the chops. Transfer the pork chops to a plate and pour any pan juices over the top (or reserve for making a pan sauce or gravy). Tent loosely with foil and let the chops rest for at least 5 minutes before serving.

2 large garlic cloves (grated)
2 tsp oregano (dried)
1 tsp thyme (dried)
1 1/2 tsp smoked paprika
1 1/4 tsp salt

2 tbsp oil (for frying)
1 cup any broth (low sodium)
1/4 cup white or red wine
1/4 cup cold water
3 tbsp cornstarch
1 tbsp parsley (for garnish)

Steps:

  • Trim extra fat from the pork chops.
  • In a small bowl, combine oregano, smoked paprika, thyme, salt and pepper. Set aside.
  • Lay pork chops on a plate or board and rub with garlic on both sides.
  • Then sprinkle with spice mixture on both sides as well.
  • On 6 or 8 quart Instant Pot, press Saute and wait until displays says Hot.
  • Swirl a bit of oil to coat and brown pork chops for 2 minutes per side, working in batches and transferring onto the plate.

1 teaspoon kosher salt

2 tablespoons extra-virgin olive oil (or other high-heat oil like canola)
1 tablespoon fresh chopped oregano (or 1 teaspoon dried)
1 tablespoon fresh thyme (or 1 teaspoon dried)
2 cloves garlic (minced)
1 lemon (zested and cut into wedges)
1/2 cup dry white wine (such as sauvignon blanc, chardonnay, or pinot grigio)
1/2 cup chicken stock
1 tablespoon butter

Steps:

  • Preheat your oven to 375 degrees F and place an oven rack in the center. Pat the pork chops dry with a paper towel and season evenly on all sides with the kosher salt (1 teaspoon) and black pepper (1/2 teaspoon).
  • Heat an oven-safe skillet on high or medium-high heat, depending on your burners, until very hot. This will take only 30 seconds or so with stainless steel, but up to 5 minutes with cast iron. (to test, you shouldn't be able to hold your hand a couple inches over the skillet's surface for more than a few seconds.)
  • Add the oil (2 tablespoons) and swirl to coat the bottom of the pan (or use a spatula to evenly distribute it). Add the pork chops to the skillet and allow to sear, undisturbed, for 2 minutes. While they are searing, sprinkle 1 teaspoon of the fresh oregano and thyme (or less than 1/2 teaspoon if using dried), once minced clove of garlic, and half the lemon zest on the top side of the pork chops.
  • Turn off the heat on the burner and flip the pork chops. (Tip: they should release easily from the bottom of the skillet- if they don't, they may need more time searing.) With the seared side facing up, sprinkle the remainder of the fresh herbs, minced garlic, and lemon zest on top of the pork chops. Place the lemon wedges in the spaces around the pork chops. Slide skillet onto center oven rack and bake for 10-15 minutes, or until internal temperature is 145 degrees F (cooking time will vary depending on thickness and oven temperature).
  • Remove pork chops to a plate or cutting board and allow to rest for 5 minutes (tent with foil if resting for longer than that to keep them warm).

1 teaspoon garlic powder

2 tablespoons olive oil
1 tablespoon butter
1 small yellow onion, (finely diced)
8 ounces fresh sliced mushrooms
1½ cup chicken broth
1 tablespoon cornstarch
1 tablespoon water
¼ cup heavy cream, (optional)
Fresh chopped parsley, (for garnish)

Steps:

  • Season pork chops with garlic powder, paprika, salt, pepper, basil, and rosemary.
  • Turn on the Instant Pot and press the "Saute" button.
  • Add olive oil and butter to the instant pot.

1 cup ketchup
⅔ cup brown sugar (packed)
3 tablespoons worcestershire sauce

1 teaspoon mesquite seasoning (see note)
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon cracked black pepper (if using ground pepper, reduce to 1/8 teaspoon)

Steps:

  • In a medium sauce pan over medium heat, combine all ingredients for the bbq sauce. Bring to a boil, reduce to low and simmer for 5 minutes, stirring throughout. Reduce from heat and set aside.
  • Preheat grill to medium and oil the grates.
  • Season pork chops generously with salt and pepper on both sides.
  • Place pork chops on the grill, cook for 2-3 minutes, then turn over and brush bbq sauce all over the tops and sides of the pork chops. Cook another 5-7 minutes, then turn and brush bbq sauce all over the tops and sides again.
  • Cook 5-7 minutes longer until internal temperature reaches 140 degrees F or there is no longer any pink in the center. Allow to rest on a plate or cutting board - covered - for at least 5 minutes before serving - this is KEY to keeping the pork chops nice and juicy.

  • Give it a thorough mix and set it aside.

4 pork chops, about 1-inch thick and 6 to 7 ounces each, see notes
Salt, to taste
1 tablespoon all-purpose flour
1 teaspoon chili powder, see our homemade chili powder recipe
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1 tablespoon neutral oil like avocado oil or vegetable oil
1 cup low-sodium chicken stock, see our homemade chicken stock recipe
1 tablespoon apple cider vinegar
2 teaspoons honey or brown sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley, optional

Steps:

  • Take the pork chops out of the refrigerator and season on both sides with salt - we use just less than 1/4 teaspoon of fine salt per pork chop. Set the chops aside to rest for 30 minutes.
  • Meanwhile, make the spice rub. In a small bowl, mix the flour, chili powder, garlic powder, onion powder, smoked paprika, and 1/2 teaspoon of black pepper.
  • After 30 minutes, use a paper towel to pat the pork chops dry, then rub both sides of the chops with the spice rub.
  • Heat the oil in a skillet (with a lid) over medium-high heat. When the oil is hot and looks shimmery, add the pork. Cook until golden, 2 to 3 minutes.
  • Flip the pork so that the seared side is facing up. If there is a fattier side of the pork, use kitchen tongs to hold the chops, fat-side-down until it sizzles and browns slightly; about 30 seconds.
  • Reduce the heat to low, then cover the skillet with a lid. Cook 6 to 12 minutes or until an instant-read thermometer reads 145° F when inserted into the thickest part of the chop. Cook time depends on the thickness of the chops, so check for doneness at 5 minutes, then go from there, checking every 2 minutes after that. If you do not have a thermometer, you will know they are done, if, when cutting into the chops, the juices run clear.
  • Transfer pork chops to a plate, then cover loosely with aluminum foil. Let the pork rest for 5 minutes.
  • While the pork rests, make the pan sauce. Increase the heat to medium-high, then add the chicken stock, vinegar, and honey. Use a wooden spoon to scrape the bottom of the pan so that any stuck bits of pork come up.
  • Bring the sauce to a simmer and cook until reduced by half. Taste, then adjust the seasoning with additional salt, vinegar, or honey.
  • Slide the skillet off of the heat and when the sauce is no longer simmering, swirl in the butter.
  • Slide the pork chops back into the pan and spoon some of the sauce on top. Alternatively, slice the chops, then place them back into the pan. Scatter fresh parsley over the pork, and then serve.
