BEER-MARINATED GRILLED SKIRT STEAK

Steps:
- In a wide, shallow glass baking dish, scatter half of the orange slices, half of the onion slices and half of the garlic pieces on the bottom of the dish. Sprinkle the steak all over with salt and pepper and put in the dish on top of the orange and onion slices. Scatter the remaining orange, onion and garlic over the steak and pour in the beer and soy sauce. Cover with plastic wrap and marinate for 1 hour at room temperature or up to overnight in the refrigerator.
- Prepare a barbeque on medium-high heat or preheat a broiler. Remove the meat from the marinade and discard the marinade. Grill the steak to desired doneness, about 4 minutes per side for medium-rare. Serve as desired.
BEER MARINATED CHUCK STEAK FOR THE GRILL
The Women's Day Encyclopedia of Cookery was my main resource as a teen learning to cook. This marinade from that book was my Dad's favorite marinade for steak -- almost always bone-in chuck steak. Every time I use it I think of Dad and remember how he taught me to grill on the little hibatchi that perched on the side of the useless, brick fireplace some previous owner of the house had built. Steps:
- Slice onion paper-thin.
- Peel garlic clove and put it through the garlic press.
- Combine all marinade ingredients and stir well.
- Pour marinade over steaks. Marinade 4-6 hours, turning steaks periodically. Do NOT over-marinade because beer marinades make the steak bitter if soaked too long.
- Preheat your grill. You want a medium-high heat -- enough to get some good sizzle. There's no beating the flavor you get from a charcoal grill, but a gas grill will do the job. I do NOT recommend trying this on an electric, tabletop grill.
- Grill 7-10 minutes per side or until you reach the desired doneness.
- As you cook, drop a few bits of the onions from the marinade onto the coals or burner-covers to make an aromatic smoke which flavors the meat in a way really sets this recipe apart from other beer marinades.
- The marinade will have tenderized the steak significantly, but if you cook it well-done it will almost certainly be tough anyway so I recommend medium-rare to medium.
BEER MARINADE FOR STEAK
I found this on the internet and liked the look of this recipe but I made a few changes to suit my cooking style. It seems Boomette and I tried this around the same time. We at the Lorie-House had this on ribeyes and we agree with Boomette's family that the flavor is lightly sweet but does not make the beefy flavor too sweet. If you know ribeyes, they tend to have a looser texture than say, NY Strip. I did notice a little hint of beer in the looser parts of the steak more than the firmer parts. I think if you like teriyaki, you will enjoy this, and if you like beer, choose a ribeye and if you like beer less, keep with a firmer cut like strip steak. We enjoyed here at home, liked it a LOT but not sure if it qualifies as TDF. We would give this a 4 if we were reviewing this as someone else's recipe on Zaar (really 4.5 but I would round down). - Mix and pour over steaks in a ziplock bag, pressing bag as you seal it up to remove enough air so that meat stays coated on both sides.

- Stir the canola oil, root beer, Worcestershire sauce, teriyaki sauce, steak sauce, garlic salt, onion salt, black pepper, basil, thyme, and rosemary together in a bowl.
- Pierce the steaks in several places on both sides; arrange in a single layer in a shallow non-reactive dish. Pour the marinade over the steaks, flipping the meat to coat both sides. Allow to marinate in refrigerator 3 to 4 hours, flipping meat once halfway through.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Remove the steaks from the marinade and shake off excess moisture; discard the remaining marinade.
- Cook the steaks until they are beginning to firm, and are hot and slightly pink in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium.

- Using sharp knife, lightly score flank steaks about 1/8 inch deep on both sides in a crisscross pattern at 1/2-inch intervals. Place steaks in 13x9x2-inch glass baking dish. Sprinkle steaks on both sides with oregano and cumin and generous amount of coarse salt and freshly ground pepper. Drizzle olive oil over both sides of steaks, rubbing oil and spices into meat. Add green onions, beer, and Worcestershire sauce, turning steaks several times to coat both sides. Cover and chill at least 3 hours, turning occasionally. DO AHEAD: Can be made 1 day ahead. Keep chilled.
- Prepare barbecue (medium-high heat). Brush grill rack lightly with oil. Grill steaks to desired doneness, 3 to 4 minutes total per side for medium-rare, turning steaks 1/4 turn after 1 1/2 minutes to form crisscross grill marks, if desired. Transfer steaks to cutting board; let rest 5 minutes. Thinly slice steaks across grain. Transfer to platter and serve with Aji Sauce and Colombian Guacamole.
