BASH BURGERS
"Bacon strips can slide off a burger," says Josh Capon, chef-owner of Lure Fishbar in New York City, "but the jam gives you a bacon-packed bite every time."

- Make the bacon jam: Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Remove to paper towels; pour off all but 3 tablespoons drippings from the skillet. Add the canola oil to the skillet and heat over low heat. Add the onion; cover and cook 10 minutes. Uncover and cook, stirring occasionally, until very soft, 10 to 15 more minutes. Return the bacon to the skillet; add the white wine vinegar and thyme and season with salt and pepper. Set aside.
- Make the secret sauce: Pulse the mayonnaise, ketchup, sherry vinegar, Sriracha and garlic in a food processor until smooth; season with salt and pepper.
- Make the burgers: Preheat a grill to medium high and brush the grates with vegetable oil. Form the beef into six 1/2-inch-thick patties; season with salt and pepper. Grill 5 minutes; flip and brush with the mustard. Grill 5 more minutes for medium rare, topping with the cheese in the last minute. Spread the sauce on the bottom buns; top with the burgers, bacon jam, pickles and top buns.
JOSH'S HOMEMADE BURGER PATTIES

- Crack 2 eggs into a bowl and whisk together. Add the breadcrumbs and whisk again. Add mixed herbs, garlic, beef stock cube and BBQ sauce and combine.
- Add mince and mix it all together using your hands.
- Split the mixture into 4 (or 6 if you prefer smaller burgers) and shape into patties. Coat each pattie lightly in flour and place on a baking tray in the freezer for 30 minutes. This helps the patties to hold together better when cooking and makes them much juicier!
- Heat a tablespoon of olive oil in a frying pan over a medium-high heat and fry the patties until cooked through (about 7-8 minutes each side).
- Put the burger in a bun, add your salads and sauces and enjoy the best burger ever!

JOSH OZERSKY'S FAVORITE BURGER

- Arrange the individual cheese slices and open the buns on a platter or cutting board near your cooking surface. Once the burgers start to cook, you will need them quickly. Divide the meat into 10 even portions. Roll each one into a meatball about the size of a ping-pong ball.
- Dice the onion medium-fine and place in a small bowl. Add warm salted water just to cover and set beside the stove. Heat a skillet over high heat until very hot. If you have an infrared thermometer, the skillet should register at least 500°F (250°C). Or test by brushing on a bit of oil. When the skillet starts to smoke, it is ready.
- While the skillet is heating, working one at a time, flatten a meatball slightly and sprinkle it liberally on both sides with kosher salt. Salt drives much of this recipe. Brush oil onto the skillet and place the flattened ball on it. Just after it hits the pan, flip it over and using a solid, reinforced metal spatula, press hard to flatten it. You want it really thin. Do this just once, while the meat is still cold.
- After the burger has sizzled for about 30 to 40 seconds, top with about a tablespoon (15 g) of the watery onions. This will produce a good amount of onion fumes. That's okay. Spread the water and onions as evenly as you can and press them gently into the meat; don't squish down hard.
- Wait another 30 seconds and taking great care to lift the meat from the pan with its crust intact, flip it over. Immediately put a slice of cheese on the meat and a bottom bun on top of the cheese. Wait another 10 to 15 seconds and remove onto a top bun. Invert onto serving platter and repeat to make 10 sliders. Serve with condiments of your choice.
HAMBURGER PATTIES
Perfect burgers every time! There is quite a debate about the origin of the popular American hamburger. I will side with the Wisconsin theory, and attribute this recipe to the Midwest U.S. region.

- Sometimes I vary the seasonings- using a steak seasoning or Cajun seasoning instead of salt and pepper.
- Mix ingredients with your hands using a light touch.
- Don't be tempted to overmix.
- If you do, it becomes too dense.
- When charcoal grilling, add 1/2 cup water to the beef mixture to keep it from drying out.
- For pan frying, don't use a nonstick pan- it won't brown as well, and heat some oil in the pan before adding burgers to keep the burgers from sticking and to help sear and form a nice brown, crispy exterior.
- Either method will take about 10- 12 minutes of cooking time, depending on thickness of patty, temperature of heat source and your preference (we like ours medium cooked).
- Note: when pan-frying don't be tempted to press down and squeeze all the juice out, just turn them more often (turn only once on the grill).

- Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is smooth, but stop once the mixture looks even. (Overmixing can create a dense heavy texture.)
- Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 - 1/3 pound grill or skillet patties, or 12 thin griddle patties.
- Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don't puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.
- Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)
- For thick patties: Grill or fry the patties for 3-4 minutes per side.
- For thin patties: Cook on the griddle for 2 minutes per side.
- Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.

- Cut bacon into ¼ inch lardons, and render over low heat with a ¼ cup of water for 20-25 minutes, or until bacon is crispy. Remove the bacon and place on a paper towel lined plate to absorb any excess grease.
- Cut onions into ½ inch dice, and sweat over low heat in a medium saucepan with 2 tablespoons bacon fat and 1 tablespoon canola oil for 20-25 minutes, until onions are translucent and lightly caramelized.
- In a food processor, pulse bacon lardons until they reach a course consistency. Fold chopped bacon into caramelized onions, add white wine vinegar and steep 1 sprig of thyme in bacon jam.
