- Cut a pocket in each chop by slicing almost to the bone. Fill each chop with 1/2 cup stuffing; secure with toothpicks if necessary. Sprinkle with pepper., In a large ovenproof skillet, brown chops in oil. Bake, uncovered, at 350° for 25-30 minutes or until a thermometer reads 160°. Remove pork chops and set aside. Keep warm., In the same skillet, cook garlic and thyme in pan drippings over medium heat for 1 minute. Add wine, stirring to loosen browned bits from pan. In a small bowl, combine flour and broth until smooth. Gradually add to pan. Bring to a boil; cook and stir for 2 minutes or until thickened., Remove toothpicks from pork chops; serve chops with gravy.

JOE MAJOR'S STUFFED PORK CHOPS

- Insert a boning knife in the side of each chop, cutting a deep pocket to within 1/2 inch of the bone, being careful to keep the opening only large enough to insert the tip of a pastry bag. (Or ask your butcher to do this for you.)
- Put ground pork, garlic, green onion, egg white, 1/4 cup water, salt and the black and red peppers to taste in a bowl and mix well. Pack the mixture into a pastry bag and pipe 1/4 of it into each chop. Season chops with salt and black pepper and dredge in flour.
- Heat the oil in a heavy skillet over high heat and brown the chops, 2 minutes on each side. Remove them from the pan and add the onion, green pepper and celery. Sauté until onions are transparent, about 3 minutes, then add the stock, scraping up any brown bits. Return chops to the skillet, add thyme and bay leaf, cover and simmer 15 minutes. Turn chops and simmer 15 to 20 minutes more. Remove and let them stand 5 minutes before serving.

- Preheat oven to 375 degrees Fahrenheit.
- Prepare stuffing according to directions on box, increasing water by 1/4 cup.
- Cut slit into the side of each pork chop, cutting it almost in half. This is easiest on a mostly frozen chop.
- Stuff (and I mean stuff) each chop with as much stuffing as it can hold. You can also add a pat of butter, salt and pepper, or seasonings if desired.
- Bake for 35 minutes, or until juice runs clear.
- We enjoy having cauliflower with our meal.
- Also-- DO NOT brown chops before hand. This causes them to be too tough, and too rigid to stuff correctly.

STUFFED PORK CHOPS
This is an easy way to make pork chops special. Sometimes I substitute chopped pecans for the cheddar cheese in the stuffing mix. Although the recipe calls for orange juice to moisten the stuffing mix and baste the chops with, I find apple cider or dry white wine work equally well.

- sometimes I omit the cheese and add 1/3 to 1/2 cup chopped pecans.
- Cut a 2 to 3 inch pocket into each chop (to the bone), along the fat side.
- Salt and pepper the pocket of each chop.
- In a bowl, toss together bread cubes, apple, cheese (or pecans) and raisins.
- Combine melted butter, orange juice, salt and cinnamon, stir to mix well.
- Pour liquid mixture over bread mixture, tossing gently to moisten stuffing.
- Lightly stuff the pockets in the chops.
- If necessary secure stuffed pockets with a toothpick, to keep the pocket partially closed.
- Brush both sides of chops with liquid (orange juice, apple cider or white wine).
- Place chops in a shallow baking/roasting pan.
- Bake at 350°F for 1 1/4 hours, brush chops with liquid twice during baking.
- Cover pan lightly with foil, and bake for 15 minutes longer.

HARVEST STUFFED PORK CHOPS
The savoury sour cream sauce makes this dish ... yummy! Depending on the size of your chops, the servings may vary from 6-8. Can't fit all of the stuffing? The size of your chops may not accomodate all of the stuffing, but extra stuffing makes a great side for another meal --- see the note in the recipe for details.

- Slice each pork chop open so that it forms a pouch.
- Rub salt and pepper generously into the meat.
- Cut the rolls into small cubes and brown them in butter; put the browned cubes in a bowl.
- Add raisins, chopped apples, quartered prunes, finely chopped parsley, and the egg to the croutons and mix well.
- Add cardamom, 1/2 tsp salt and 1/2 tsp pepper and stir.
- Divide the stuffing among the pork chops, filling each pouch.
- Note: If you have too much stuffing for the chops, spoon it into a buttered baking dish reserve it as a side dish for another meal.
- To serve-- bake for 30 minutes in a 350 degree F oven; this is great served with chicken or pork as a side dish.
- Either lace the chops shut with kitchen twine and a kitchen needle, or use toothpicks to hold the stuffed chops together.
- Melt the butter in a large skillet and sear the stuffed chops over high heat until nicely browned on both sides.
- Add 1 1/2 cups of water to the pan, reduce the heat to low, cover and let simmer for 1 1/2 to 1 3/4 hours.
- Remove the chops to a heated platter.
- If pan juices have boiled down, add 1/2 cup of hot water to the pan and deglaze the bottom.
- If pan juices have not boiled down, turn heat to medium high and reduce until only about 1/2 cup of liquid remains.
- Stir in the sour cream and flour and thicken the sauce over medium heat for 5- 10 minutes.
- Taste the sauce and add salt and pepper if necessary.
- Spoon a generous amount of sauce onto each serving plate and top with a stuffed chop.
- Garnish with a sprig of fresh parsley, if desired.

- Preheat oven to 375 degrees F (190 degrees C).
- Mix feta cheese, basil pesto, and pine nuts in a bowl. Use the tip of a sharp boning or paring knife to cut a 3-inch slit in the side of each pork chop, 2 inches deep and 1/4-inch away from the bone, to make a pocket for stuffing. Stuff pork chops with pesto filling and secure with toothpicks.
- Mix black pepper, oregano, garlic, red pepper flakes, and thyme in a small bowl; rub both sides of each chop with the spice mix. Place chops into a shallow baking dish.
- Bake in the preheated oven until chops are browned and stuffing is hot, about 40 minutes. An instant-read meat thermometer inserted into the center of the stuffing should read 145 degrees F (63 degrees C). Brush chops with balsamic vinegar and bake until vinegar forms a glaze, another 5 minutes.

- In skillet, saute celery and onion in 1 Tablespoon butter.
- Put into a large bowl.
- Add croutons, milk, parsley, salt, paprika, and pepper.
- Mix well.
- Cut a pocket in each chop, fill with stuffing.
- Brown chops in remaining 2 Tablespoons butter.
- Put chops in a greased 9x9 inch baking pan.
- Pour broth over chops.
- Cover and bake at 350 degrees Fahrenheit for 45 minutes.
