1 ¾ cups frozen whipped topping, thawed

  • In a large bowl, mix cream cheese and sugar together. Stir in 1 can of pineapple and whipped topping to cream cheese mixture. Mix until smooth.
  • Pour mixture into crust and top with other can of pineapple. Cover and chill for 2 hours.

8 ounces cream cheese, softened
1/2 cup sugar
1/2 teaspoon pineapple extract
20 ounces crushed pineapple, drained and divided, reserve 5 oz for topping
8 ounces Cool Whip, thawed
4 drops yellow food coloring
1 drop red food coloring
9 ounces graham cracker pie crust, prepared

Steps:

  • Mix softened cream cheese, sugar and pineapple extract.
  • Add and mix 15 ounces of drained crushed pineapple.
  • Fold in cool whip. Add food coloring and fold to blend well.
  • Pour in the prepared graham cracker pie crust. Sprinkle reserved pineapple on top.
  • Cover and refrigerate for at least 3 hours. Serve cold.

1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) container frozen whipped topping, thawed
1 (6 ounce) package pineapple Jell-O®
1 (12 ounce) container whipped cream cheese

Steps:

  • Drain juice from pineapple. Set the fruit aside. Dissolve the gelatin in the pineapple juice, and microwave for 1 minute.
  • Mix whipped topping and cream cheese until smooth. Mix pineapple into creamed cheese mixture. Stir in gelatin, and mix thoroughly. Pour into pie shell, and refrigerate for 4 to 5 hours.

1 can(s) 20 oz crushed pineapple
1 pkg cream cheese
1 box pineapple jell-o
2 large tubs cool whip
1 large 9" graham cracker pie crust

Steps:

  • 1. 1. Drain juice from pineapple. set fruit aside. dissolve jell-o in juice and microwave for 2 minutes.
  • 2. 2. have cream cheese and cool whip at room temprature. mix fruit, cream cheese, 1 tub cool whip, and when cooled the jell-o mixture.
  • 3. 3. Mix all ingredients well. then pour in to pie crust. and place in the refrigerator for 5 hours. when ready to serve add a dollop of cool whip from the second tub on each piece.
  • 4. ***note*** this can also be used as a dessert with out the pie crust like a pudding.

1 1/4 cups gingersnap crumbs, ground in the food processor (about 25 cookies)
3 1/2 tablespoons butter, melted
1/4 cup brown sugar
3/4-1 cup sugar
1 1/2 cups cottage cheese (no-fat or low-fat)
1 1/2 teaspoons coconut extract
3/4 cup neufchatel cheese (1/3 less fat)
2 tablespoons white flour
1 1/4 teaspoons vanilla extract
4 large eggs (If you want a fluffier cheesecake separate 2 of the eggs, whipping egg whites till soft peaks form a)
1/8 teaspoon salt
2 tablespoons sugar
2 (15 ounce) cans crushed pineapple
6 tablespoons brown sugar
2 pinches ground ginger
1/2 cup shredded sweetened coconut, toasted to garnish (or more if desired)

Steps:

  • Preheat oven to 325*F.
  • CRUST: Spray a 9"springform pan with the cooking spray (or you may use 2 8" pie pans). Mix the gingersnap crumbs, butter, and brown sugar; toss with a fork until moist. Press the mix into the bottom and up against the sides of the pan. Bake 10 minutes. Let cool.
  • FILLING: Mix filling ingredients in a food processor. Process until smooth. Pour into the prepared crust. Place the cheese mixture into either the springform pan or into the pie pans.
  • Bake for 25-30 minutes or until the center barely moves when pan is touched. Cool to room temperature. Cover and chill at least 4 hours.

1/2 cup fat-free buttermilk
1 slice white bread
1/3 cup part-skim ricotta cheese
1 large egg
2 tablespoons natural vanilla
6 packets sugar substitute
1/4 cup water
12 ounces pineapple, canned,crushed,packed in natural juice,well drained

Steps:

  • To prepare crust: Preheat the oven to 350°F Lightly coat a 9" pie pan with cooking spray.
  • In a medium bowl, thoroughly mix the graham cracker crumbs and melted butter.
  • Press into prepared pan.
  • Bake for 15 minutes, until lightly browned.
  • (Since ovens vary in temperature, check after 12 minutes. Do not allow it to over-brown.) Cool before filling.
  • To prepare filling: In a food processor or blender, combine everything except the pineapple.
  • Process until smooth.

1 (6 ounce) box pineapple Jell-O

  • Dissolve jello in the pineapple juice, and microwave for 1 minute.
  • Mix whipped topping and cream cheese until smoothe.
