How to doctor canned refried beans with Mexican chorizo

1 20.5-ounce can of refried pinto beans (frijoles refritos pintos o bayos)
4 ounces Mexican chorizo

Steps:

  • In a frying pan, cook the chorizo over medium heat, breaking up the meat with a spatula or wooden spoon until it's crumbled and cooked through.
  • Transfer cooked chorizo to a dish and set aside.
  • Reduce the heat and use a paper towel to remove most of the grease left behind from the chorizo.
  • Open the can of refried beans and drain most of the liquid out, leaving just a little bit (a tablespoon or less). Turn the heat back to medium and spoon the beans from the can into the frying pan. Stir occasionally until the beans are heated through.
  • Add the cooked chorizo and stir to fully incorporate. Heat for another minute, then remove pan from heat and serve.

Easy Refried Beans image

These refried beans are delicious and so easy to make. This refried bean recipe is quick, too-use canned beans and they're ready in 25 minutes! Plus, these beans are healthy, vegan and gluten free. Recipe yields 2 1/2 cups refried beans (21 ounces), enough for 5 servings.

1 tablespoon extra-virgin olive oil
1/2 cup finely chopped yellow or white onion (about 1/2 small onion)
1/4 teaspoon fine sea salt
2 cloves garlic, pressed or minced
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
2 cans (15 ounces each) pinto beans, rinsed and drained, or 3 cups cooked pinto beans
1/2 cup water
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice (about 1/2 medium lime), to taste

Steps:

  • In a medium saucepan over medium heat, warm the olive oil until shimmering. Add the onions and salt. Cook, stirring occasionally, until the onions have softened and are turning translucent, about 5 to 8 minutes.
  • Add the garlic, chili powder and cumin. Cook, stirring constantly, until fragrant, about 30 seconds. Pour in the drained beans and water. Stir, cover and cook for 5 minutes.
  • Reduce the heat to low and remove the lid. Use a potato masher or the back of a fork to mash up about at least half of the beans, until you reach your desired consistency. Continue to cook the beans, uncovered, stirring often, for 3 more minutes.
  • Remove the saucepan from the heat and stir in the cilantro and lime juice. Taste, and add more salt and lime juice if necessary. If the beans seem dry, add a very small splash of water and stir to combine. Cover until you're ready to serve.

One 15 1/2-ounce can pinto beans, drained and rinsed
3 tablespoons extra-virgin olive oil
1/2 medium onion, chopped
4 cloves garlic, minced
1 teaspoon ground coriander
1/2 teaspoon ground cumin
2/3 to 1 cup chicken broth, homemade or low-sodium canned
Kosher salt and freshly ground black pepper

1 tablespoon chopped fresh coriander (cilantro) (optional)

Steps:

  • Reserve about a third of the beans. Mash the rest of the beans in a medium bowl with a large fork. Set aside.
  • Heat the oil in a medium skillet over medium-high heat. Add the onion, and cook until lightly browned, about 4 minutes. Add the garlic and continue to cook, stirring, until lightly browned. Add the spices and cook until fragrant about 1 minute.
  • Add the mashed beans and half the broth; cook, stirring frequently, until slightly thickened, about 5 minutes. Add the reserved beans and the enough of the remaining broth to loosen up the beans. Simmer until the beans are thick but not pasty, about 2 minutes more. Season with salt and pepper to taste. Stir in the fresh coriander, if desired, and serve.

1/2 medium onion, diced
2 -4 garlic cloves, minced
1 teaspoon dried ancho chile powder (or other chili powder)
1 (15 ounce) can pinto beans, drained and rinsed
2/3 cup low sodium chicken broth, plus more if needed
salt and pepper
2 tablespoons fresh cilantro leaves, chopped

Steps:

  • Heat the oil in a large skillet over medium heat.
  • Add the onion and cook until tender, about 3 minutes.
  • Stir in the garlic and chili powder and cook for 1 minute more.
  • Stir in the beans and chicken broth and cook until the beans are warmed through, about 5 minutes.
  • Mash the beans coarsely with the back of a wooden spoon, adding more chicken broth to moisten, if needed.
  • Season with salt and pepper, to taste.
  • Stir in the cilantro.

6 cups dried pinto beans
4 slices thick-cut bacon, cut into 1-inch slices (or you can use salt pork, ham hock or diced ham instead)
1 tablespoon chili powder
1 teaspoon salt, plus more if needed
2 teaspoons black pepper, plus more if needed
1/2 stick butter (bacon grease, lard or shortening will work)
1 onion, diced
2 cups grated sharp Cheddar
Sliced jarred jalapenos

Steps:

  • Rinse the beans thoroughly, then place them in a large pot with the bacon. Pour water over the top. Use enough water to cover the beans by 1 or 2 inches. Bring to a boil over medium-high heat, then reduce the heat to low and cover. Simmer for 2 to 3 hours. If the liquid seems to evaporate too quickly, add more water during the cooking process. The beans are done when they're fork tender, without much bite.
  • Add the chili powder, salt and pepper. Stir and taste, adjusting the seasoning as necessary. Add in other seasonings as desired.
  • Heat the fat in a large skillet and cook the onions until translucent. Add the beans to the skillet and mash them until they're the consistency you want. Stir and cook them until heated, then add the grated cheese. Top with the jalapenos.

It's nice to have some refried beans you can pull out of the freezer for a side with your Mexican meals without opening a can with all the extra fat. One side serving is 1/2 cup, which also makes about 4 tacos or burritos These are a great side dish, may also be used for burritos, and can be served as a main dish with plenty of shredded cheddar and salsa on top. Take the time and make these ahead. You won't be sorry!

1 lb dried beans, soaked overnight
4 cups water
1 cup brewed coffee
3 minced garlic cloves, don't substitute powdered (optional)
1 bunch fresh cilantro or 1 cup celery & leaves, chopped with stems
1 tablespoon ground cumin
2 teaspoons chili powder
1 1/2 teaspoons oregano
1 teaspoon salt, to taste

Steps:

  • Drain soaked beans and place in a crock pot along with remaining ingredients except salt. Make sure that the beans are covered with liquid by about 1".
  • Stir well, cover and cook on low all day, about 8-10 hours, until tender. Keep an eye on them and make sure they don't get dry.
  • Add salt.
  • Use a potato masher or heat safe (canning) jar bottom to mash well and stir with a wooden spoon.
  • Continue to mash and stir until desired consistency.
  • To freeze, put in a freezer Ziploc and flatten into a layer to freeze, or no more than 2" deep in freezer containers.

1/3 cup salsa
3 scallions (chopped)
1/2 cup cheddar cheese (divided) or 1/2 cup monterey jack cheese (divided)

Steps:

  • Mix refried beans, salsa and scallions in a microwave safe bowl.
  • Cover with plastic wrap and heat on high for 2 minutes. Stir and add half of cheese and microwave for another minute.
  • Depending on your microwave they should be very hot.
  • Add remaining cheese to top and heat for another 30 seconds.

400g can black, pinto or kidney beans
1 tbsp sunflower oil
1 onion, finely chopped
2 garlic cloves, finely chopped
1 green chilli, chopped (optional)
1 tsp cumin seeds
½ tsp dried oregano
½ tsp smoked paprika
chopped coriander, to serve (optional)

Steps:

  • Lightly drain the beans, reserving the juice from the tin, but do not rinse (you want the beans in about half the liquid from the can). Depending on the texture you prefer, either mash them roughly in a bowl or blitz them using a blender until smooth. Set aside.
  • Heat the oil in a large frying pan or casserole and cook the onions for 8-10 mins until soft and golden. Scatter in the garlic, chilli and cumin seeds, and sizzle everything for 2 mins more. Tip in the beans, oregano, paprika and a pinch of salt. Cook everything together for 5 mins until the beans have heated through adding more reserved bean juice if it's too thick. Serve straightaway with a sprinkling of coriander, if you like, or leave to cool and keep chilled. Will keep chilled for up to three days or frozen for a month. Reheat with a splash of water mixed in.

1 can refried beans - 10 oz. or so
2 tablespoons bacon fat or lard
2 tablespoons pickled jalapeno juice
1 tablespoon milk
1 clove garlic,minced or 1 teaspoon garlic powder
1/2 small onion, minced
1/2 cup chopped tomato
Crushed red peppers - 1/4 teaspoon or to taste
1/4 teaspoon black pepper
1/2 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon hot sauce, or to taste
1/2 teaspoon cumin
1/2 teaspoon taco seasoning
1 teaspoon sofrito
1/2 cup shredded Monterey Jack or cheddar cheese
2 tablespoons salsa
1/4 cup chicken broth or water - add enough to desired consistency

Steps:

  • Melt bacon fat in heavy pan. Add remaining ingredients, stirring constantly. Use the broth or water to achieve the desired consistence of the beans. You may need to add more liquid, one tablespoon at a time, to maintain the consistency. Simmer gently for 15 minutes, stirring often. Serve.
