- In a large bowl, combine the first six ingredients. In a small bowl, whisk dressing ingredients until blended. Pour over bean mixture; toss to coat. Refrigerate, covered, at least 1 hour. Stir before serving. If desired, sprinkle with cilantro.

JICAMA BLACK BEAN SALAD
Steps:
- Combine the jicama, black beans, bell pepper, cilantro, lime zest and juice, olive oil and salt and pepper in a large bowl. Cover and refrigerate until ready to serve.
- To serve, line a platter or individual salad plates with the baby kale and spoon the black bean salad on top.
BLACK BEAN, CORN AND TOMATO SALAD

- Salad: In a large skillet, heat the oil over medium-high heat. Add the onion, salt, smoked paprika, and cayenne pepper, if using. Cook for 6 to 8 minutes until soft. Add the corn kernels and bay leaf. Cook, stirring constantly, for 2 minutes. Add the broth and black beans. Bring the mixture to a boil, reduce the heat and simmer for 4 minutes. Add the tomatoes and jicama and stir until warmed through, about 1 minute. Remove the pan from the heat.
- Dressing: In a small bowl, combine the lemon juice, lime juice, agave nectar (or maple syrup, if using), lemon zest, and lime zest. Whisk in the olive oil until the mixture is smooth. Season with salt and pepper, to taste.
- Remove the bay leaf and put the salad in a serving bowl. Pour the dressing over the salad and mix well. Season with salt and pepper, to taste. Garnish with chopped cilantro and serve warm or at room temperature.

- If using canned beans; rinse under cold water well. If using fresh you will need to cook them until tender. I use the canned, it's much easier.
- Dice all veggies except your jalapeno and set aside (don't dice them too fine, you'll still want to have a nice bite to them - Think same consistency as Salsa) Slice your jalapeno into thin round slices (use your judgement on these, less is more but if you're a lover of spicey food go for it!).
- Place all your ingredients in a bowl, mix well, salt and pepper to taste and cover. Chill for 2 hours or overnight.
- Serve next to grilled or broiled meat.

- Prepare barbecue (medium-high heat). Brush corn with 1 tablespoon olive oil. Grill corn until tender and brown in spots, turning occasionally, about 10 minutes. Cool slightly. Cut off corn kernels; place in large bowl. Add black beans, jicama, carrots, green onions, cilantro, and basil.

This salad is excellent with any meal. It is crisp and refreshing. I like it because you can prepare it well in advance of the meal.

Steps:
- Pare the Jicama; cut lengthwise into 8 wedges; cut wedges crosswise into 1/8" slices.
- Cut cucumber lengthwise and scoop out the seeds.
- Cut halves crosswise into 1/8"slices.
- Combine Jicama, Cucumber And Onion in a large bowl.
- Toss lightly.
- Mix lime juice, lime rind,garlic, salt, and chili in a small bowl.
- Gradually add oil continuously whisking until thoroughly blended.
- Pour dressing over Jicama mixture, toss lightly to evenly coat the salad.
- Refrigerate 1-2 hours , covered, to blend the flavors.
- Just before serving line a shallow salad bowl with the lettuce leaves and spoon salad on top.

- Pour black beans into a colander placed in the sink, rinse well with cold water (until no more foam appears) and let beans drain well. (You can pat them dry with paper towels if you’re in a hurry.)
- In a small bowl, mix together lime juice, garlic puree, and ground cumin, and then whisk in olive oil.
- Put the drained beans into a plastic or glass bowl and stir in 2 T of the dressing. Let beans marinate in the dressing while you prep other ingredients.
- Peel jicama and dice into small cubes. (I used a vegetable peeler, but if your peeler isn’t very sharp it might be easier to cut the jicama into slices and cut off the peeling with a knife. Don’t get discouraged, because jicama is delicious in this salad.)
