3 cans (15 ounces each) black beans, rinsed and drained
1 cup frozen corn, thawed
1 cup chopped peeled jicama
1/2 cup chopped green pepper
1/2 cup chopped tomato
3 tablespoons minced fresh cilantro
DRESSING:
1/3 cup olive oil
1/4 cup lime juice
2 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes, optional
1/4 teaspoon pepper
Minced fresh cilantro, optional

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, whisk dressing ingredients until blended. Pour over bean mixture; toss to coat. Refrigerate, covered, at least 1 hour. Stir before serving. If desired, sprinkle with cilantro.

This light and crisp salad features, jicama, a crunchy, refreshing root vegetable sometimes referred to as a Mexican yam or Mexican turnip. Perfect for parties and light lunches, this salad will be a go-to side dish.

Number Of Ingredients 9

1 cup quinoa
2 tablespoons rice vinegar
Zest and juice of 2 limes
Zest and juice of 1 orange
1 medium jicama (about 1 pound), peeled and diced
1 red bell pepper, diced
1/4 cup finely chopped fresh cilantro, plus more for garnish
2 cups cooked black beans, or 1 (15-ounce) can no-salt-added black beans, rinsed and drained
2 tablespoons toasted sesame seeds

Steps:

  • Place quinoa in a small pot with 2 cups water.
  • Cover and simmer until quinoa is tender, 15 to 20 minutes.
  • Drain off any excess water, fluff and set aside until cool.
  • Whisk together rice vinegar, lime zest and juice, and orange zest and juice in a large bowl.
  • Add jicama, bell pepper, cilantro, black beans and cooled quinoa, and toss well to combine.
  • Let sit at least 10 minutes before serving.
  • Garnish with cilantro and sesame seeds before serving.
  • Enjoy chilled or at room temperature.

1 cup vegetable broth
1 cup water
1 cup quinoa, rinsed
1 medium sweet orange pepper, chopped
1 small red onion, chopped
1 garlic clove, minced
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn, thawed
2 cups cherry tomatoes, halved
1/4 cup olive oil
2 tablespoons lime juice
1 teaspoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon chili powder
1 medium ripe avocado, peeled and cubed
2 tablespoons minced fresh cilantro

Steps:

  • In a small saucepan, bring broth and water to a boil. Add quinoa. Reduce heat; cover and simmer for 12-16 minutes or until liquid is absorbed. Remove from the heat; fluff with a fork., In a large nonstick skillet coated with cooking spray, cook the orange pepper, onion and garlic for 2 minutes. Stir in beans and corn; cook 2-3 minutes longer or until onion is tender. Remove from the heat; cool for 5 minutes. Stir in the tomatoes. , In a small bowl, whisk the oil, lime juice, vinegar, salt, pepper and chili powder. Pour over tomato mixture; toss to coat., Spoon quinoa onto a serving platter. Top with tomato mixture, avocado and cilantro.,

1/4 cup diced red bell pepper
2 tablespoons chopped fresh cilantro

1 cup baby kale, for serving

3 teaspoons balsamic vinegar
6 teaspoons olive oil

2 garlic cloves, finely minced
2 teaspoons minced basil leaves
salt and pepper
4 cups cooked quinoa
8 cups mixed salad greens
20 grape tomatoes
2 cups black beans, divided
1 cup roasted corn, divided
1 cup jicama, julienned and divided
1/2 cup feta cheese, divided
2 cups cooked chicken breasts, sliced

Steps:

  • Place first 7 ingredients into a cruet or shaker.
  • Shake until well blended. Set aside.
  • Divide quinoa onto individual plates or bowls.
  • Divide salad greens and layer on top of quinoa.
  • Divide tomatoes, black beans, corn, jicama, and feta cheese on top of each salad.
  • Layer sliced chicken breast on top.
  • Drizzle with salad dressing.
