Fruity Non Alcoholic Sangria and Orange Salmon Bites Party image

6 sachets Emergen-C tangerine ((or any flavor) sachets, always use 1 sachet per serving ( i.e per person))
6 cups water ((regular or carbonated (1 cup / 8ounce per serving))
1 1/2 cup Pineapple juice ((can use orange, mango))
1/2 cup Pomegranate Juice
1 cup thinly sliced apples
1 cup blackberries
1 cup raspberries
1 cup thinly sliced kiwi
1 1/2 cup tangerine segments
1 cup pomegranate seeds
1 cup grapes
3-4 ounces per person of wild caught salmon (, cut up into an inch cubes-so about 1.5 pounds)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon oregano
juice of 1 clementine
1 teaspoon of garlic powder
1 tablespoon olive oil
2 cups broccoli florets ((cooked or raw))
2 tablespoons Sangria ((recipe above) without fruits)
1 teaspoon oregano
1/4 teaspoon salt
1/4 cup olive oil

Steps:

  • To make the sangria:
  • Empty the Emergen-C contents of 6 sachets in a large glass pitcher. Add the water to it and give it a mix.
  • Add the juices and mix the drink until blended.
  • Add in the fruits one at a time and then give the sangria a mix before serving.
  • Serve the sangria with a sprig of fresh rosemary.
  • To make the Salmon:
  • Preheat the broiler to high. Toss the salmon with all ingredients (except broccoli) and place on a foil lied baking sheet. Broil the salmon for 8 minutes until cooked through.
  • Let the salmon cool for a few minutes and then skewer a cube of salmon with a toothpick, and top it with a broccoli floret. Serve right away or with the sauce.
  • To make the sauce: whisk all ingredients in a bowl and drizzle it over the salmon.
  • Enjoy!! :)

1 apple, peeled and thinly sliced
1 lemon, juiced
1 orange, juiced
1 orange, sectioned
3/4 cup cranberry-grape juice frozen concentrate, thawed
Tiny pinch of ground cinnamon
3 cups seltzer water (or half seltzer and half white wine)

Steps:

  • In a medium pitcher, make the sangria mixer by adding the apple slices and lemon juice to the pitcher and stir. Add in the orange juice, orange sections, the cranberry-grape frozen concentrate and the cinnamon. Let the mixture sit for an hour (up to 12 hours) to allow flavors to meld. Just before serving, add the seltzer to the pitcher. Serve in glasses filled with ice.
  • Optional: replace half the seltzer water with a dry white wine.

Our tasters liked this just as well using one of the nonalcoholic red wines now available and orange juice in place of the triple sec. Another option--you can use diet lemon-lime soda as well.

1 can (11.3 ounces) peach nectar
1 cup orange juice
1/2 cup Triple Sec or additional orange juice
1/2 cup lemon juice
2 cups lemon-lime soda, chilled
1 medium peach or nectarine, sliced
1 cup sliced fresh strawberries
1 cup cubed seedless watermelon

Steps:

  • In a pitcher, combine the first five ingredients. Cover and refrigerate until chilled. Just before serving, stir in soda and fruit.

1 1/2 cups orange juice
1 (85 g) package strawberry gelatin
1 (85 g) package peach gelatin
1 (85 g) package lemon gelatin
2 1/4 cups cold water
1 1/2 cups cut up strawberries
1 1/2 cups cut up nectarines
1 1/2 cups cut up grapes or 1 1/2 cups cherries
1 cup thawed Cool Whip (optional)

Steps:

  • Bring orange juice to a boil. Add to jelly powders in a medium bowl; stir at least 2 minutes until jelly is completely dissolved. Add cold water.
  • Spoon fruit into 12 clear cups and pour jelly mixture over fruit.
  • Refrigerate at least 4 hours or until set. Top with whipped topping just before serving.
  • Store leftovers in refrigerator.
