1/4 cup chopped onion
1 teaspoon dried thyme, crumbled
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne
1/2 teaspoon ground allspice
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon cinnamon
two 1/2-inch-thick rib pork chops (each about 4 ounces)

Steps:

  • Prepare grill.
  • Mince and mash onion to a coarse paste with thyme, sugar, salt, and spices. Pat pork chops dry and rub all over with jerk paste. Grill pork on an oiled rack set 5 to 6 inches over glowing coals 4 minutes on each side, or until just cooked through. (Alternatively, pork may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)

⅓ cup lemon juice
⅓ cup chopped onion
1 tablespoon packed brown sugar
1 tablespoon chopped green onion
1 tablespoon canola oil
¾ teaspoon salt
¾ teaspoon ground allspice
¾ teaspoon ground cinnamon
¾ teaspoon ground black pepper
½ teaspoon dried thyme, crushed
¼ teaspoon cayenne pepper, or to taste
6 raw chop with refuse, 113 g; (blank) 4 ounces lean pork chops, 1/2 inch thick

Steps:

  • Combine water, lemon juice, onion, brown sugar, green onions, oil, salt, allspice, cinnamon, black pepper, thyme, and cayenne pepper in a blender or food processor. Blend until smooth. Reserve 1/2 cup for basting.
  • Place pork chops in shallow glass dish. Pour remaining marinade over the meat. Cover, and refrigerate at least 12 hours, but no longer than 24 hours.
  • Preheat grill for medium heat. Place grate 4 to 5 inches above heat source.
  • Oil the grill grate. Arrange chops on grate, and discard marinade. Cover grill, and cook chops for 10 minutes, turning once, or to desired doneness.

2 limes
2 tablespoons jerk seasoning
1 tablespoon extra-virgin olive oil
4 boneless pork loin chops (each 3/4 to 1 inch thick, about 1 pound)
8 fresh sprigs cilantro, for garnish

Steps:

  • Zest one of the limes and juice it.
  • Put 1 tablespoon lime zest and 1 tablespoon lime juice in a small bowl.
  • Add the jerk seasoning and the olive oil and stir until the mixture forms a thick paste.
  • Spread the lime-jerk paste on both sides of each pork chop and put the chops on a plate.
  • Let the chops marinate at room temperature for 30 minutes to 1 hour.
  • Preheat a gas grill to med-high; place the chops on the grill.
  • After 6 minutes, turn the chops and cook until they are brown outside and slightly pink inside, another 5-6 minutes.
  • Remove from the grill and let the chops rest for about 5 minutes.
  • While they are resting, cut the remaining lime into wedges.
  • To serve, place 1 pork chop on each plate and garnish with a lime wedge and 2 cilantro sprigs.

The amount of cayenne is totally up to you...if you have some hot peppers available,by all means add them into the marinade...traditionally Scotch Bonnet Peppers are used in Jerk Marinades. This recipe can easily be used for chicken as well....slash the chicken at even intervals and cover with marinade.

4 (3 1/2 ounce) boneless pork loin chops
1 tablespoon soy sauce
1 tablespoon orange juice
1 tablespoon olive oil
2 garlic cloves, minced
3 green onions, minced

1 tsp. dried thyme leaves
1 tsp. garlic powder
1 tsp. ground allspice
1 Tbsp. oil
1 onion, thinly sliced
1 green pepper, thinly sliced
6 boneless pork chops (1-1/2 lb.), 1/2 inch thick

Steps:

  • Mix first 5 ingredients until blended.
  • Heat oil in large skillet on medium heat. Add onions and green peppers; cook and stir 3 min. or until vegetables are crisp-tender. Remove from skillet; set aside. Add chops to skillet; cook 3 to 5 min. on each side or until chops are evenly browned on both sides.
  • Add barbecue sauce mixture and vegetables to skillet; cover. Simmer on medium-low heat 10 min. or until chops are done (145ºF). Remove from heat. Let stand 3 min. before serving.

3 tablespoons butter, divided
1/4 cup peach preserves
4 boneless thin-cut pork loin chops (2 to 3 ounces each)
3 teaspoons Caribbean jerk seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 medium sweet orange pepper
1/2 medium sweet yellow pepper
1/2 medium sweet red pepper
Hot cooked rice, optional

Steps:

  • Soften 1 tablespoon butter; mix with peach preserves., Sprinkle chops with seasonings. In a large skillet, heat 1 tablespoon butter over medium-high heat; brown chops 2-3 minutes per side. Remove from pan., Cut peppers into thin strips. In same pan, saute peppers in remaining butter over medium-high heat until crisp-tender and lightly browned, 5-6 minutes. Add chops; top with preserves mixture. Cook, uncovered, until heated through, 30-60 seconds. If desired, serve with rice.

1 1/2 teaspoons ground allspice
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3 green onions, chopped
3 cloves garlic, minced
2 scotch bonnet peppers (these are "killer" hot so you may want to use something like a jalapeno)
1 medium onion, chopped
1 lemon, juice of
3 teaspoons oil
2 teaspoons soy sauce
2 teaspoons malt vinegar
1 teaspoon minced gingerroot
3 -4 lbs cubed pork butt (2 inch chunks)

Steps:

  • In a large bowl combine the first 7 ingredients.
  • Mix thoroughly.
  • In a food processor combine green onions and garlic, peppers, onion, lemon juice, oil, soy sauce, malt vinegar and ginger.
  • Blend until very smooth.
  • Place pork in a glass bowl or large freezer bag, combine all ingredients and coat pork well.
  • Cover and stir or flip often.
  • Marinate for at least 8 hours.
  • Take out of the fridge 1 hour before grilling.
  • Preheat grill to medium high, skewer pork, 4 cubes to a skewer.
  • Cook for 6-8 minutes on one side, flip and 6-8 minutes on the other.

Steps:

  • Combine jerk seasoning, salt, and pepper in a small bowl.
  • Heat oil in a large skillet over medium heat. Shake about 1 tablespoon jerk rub into the skillet. Add onions; cook and stir until soft, about 3 minutes.
  • Meanwhile, sprinkle 1/2 of the remaining jerk rub onto one side of each pork chop. Use a knife to poke 4 or 5 holes in each chop and pour 1/2 of the lime juice over top. Place chops, seasoned-side down, into the hot skillet.
  • Cook until browned, 5 to 7 minutes. While cooking, sprinkle remaining jerk rub onto the top side of the chops. Poke holes as before, and pour remaining lime juice over top. Flip chops and cook until browned and no longer pink in the center, another 5 to 7 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

  • In a mini food processor, combine the habanero, onion, scallion, garlic, allspice, thyme, ginger, nutmeg and cinnamon. Add 1 1/2 teaspoons of salt and 1 teaspoon of pepper. Process until finely chopped. Add the 1 tablespoon of oil and process to a smooth paste.
  • In a small bowl, whisk 1 tablespoon of the paste with the barbecue sauce. Spread the remaining paste all over the chops and let stand at room temperature for 30 minutes.
  • Light a gas grill. Wrap the wood chips in heavy-duty foil, pierce the packet all over with a skewer and add to the grill. Cover and let the chips begin to smoke, about 5 minutes.
  • Lightly brush the chops with oil and season with salt. Grill the chops, covered, over moderately high heat, turning and shifting the chops occasionally, until they are lightly charred and a meat thermometer inserted nearest the bone registers 140°, 18 to 20 minutes. Transfer the chops to a platter and serve with the spiced barbecue sauce on the side.
