LONDON BROIL WITH HERB BUTTER

1 beef bouillon cube
3 tablespoons extra-virgin olive oil
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 top round London broil steak (about 2 pounds)
4 tablespoons unsalted butter, softened
1 1/2 tablespoons chopped fresh chives
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chervil or tarragon
Kosher salt and freshly ground pepper
1 tablespoon fresh lemon juice

Steps:

  • Prepare the steak: Dissolve the bouillon cube in 3/4 cup hot water in a bowl; set aside to cool. Whisk in 2 tablespoons olive oil, the soy sauce, Worcestershire sauce, lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper. Place the steak in a large resealable plastic bag, pour in the marinade and seal, squeezing out the air. Refrigerate for at least 4 hours or up to 1 day.
  • Prepare the herb butter: Mix the butter with the chives, parsley, chervil, a pinch of salt, 1/2 teaspoon pepper and the lemon juice in a bowl.
  • About 30 minutes before cooking, remove the meat from the bag (discard the marinade), dry it well and bring to room temperature. Heat a large heavy skillet over high heat, about 2 minutes. Rub the steak with the remaining 1 tablespoon olive oil. Sprinkle 1 tablespoon salt over the surface of the pan; add the meat and set a heavy skillet on top to weigh it down. Sear for about 7 minutes; turn the steak, replace the weight and cook until a thermometer inserted into the side reads 110 degrees for medium-rare, about 5 minutes.
  • Transfer the steak to a cutting board; brush with some of the herb butter, tent with foil and let rest for about 10 minutes. Thinly slice against the grain; top with more herb butter and drizzle with the pan juices.

4 green onions
1/4 cup lime juice
fresh ginger, sliced
1/2 of a scotch bonnet pepper, seeded and finely chopped (optional)
2 tablespoons extra virgin olive oil
3 garlic cloves
2 teaspoons jamaican jerk spice
1 1/4-1 1/2 lbs beef flank steak
to taste kosher salt (optional)
to taste fresh ground black pepper (optional)

Steps:

  • For marinade, in a blender combine green onions, lime juice, ginger, Scotch bonnet pepper (if desired), oil, garlic, and jerk seasoning; cover and blend until smooth. Score both sides of steak in a diamond pattern by making shallow cuts at 1-inch intervals. If desired, season steak with kosher salt and pepper. Place steak in a glass dish; spread marinade over the steak. Cover dish with plastic wrap and marinate in the refrigerator for 4 to 24 hours. Drain steak, discarding marinade.
  • For a charcoal grill, place steak on the rack of an uncovered grill directly over medium coals. Grill for 17 to 21 minutes or until medium doneness (160°F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place steak on grill rack over heat. Cover and grill as above.)
  • To serve, thinly slice meat diagonally across the grain.
  • *Note: Because hot chile peppers contain oils that can burn your skin and eyes, wear rubber or plastic gloves when working with them. If your bare hands do touch the chile peppers, wash your hands well with soap and water.

1/3 cup minced shallots
3 tablespoons soy sauce
1/2 cup olive oil
3 tablespoons fresh thyme
Big dash hot sauce
3 tablespoons freshly squeezed lemon juice
1 1/2 pounds flank steak
Cress, for garnish

Steps:

  • Mix shallots, soy sauce, olive oil, thyme, hot sauce and lemon juice together in a non-reactive broiling pan. Score the steak, place it in the pan and turn in the marinade. Marinate for at least 2 hours at room temperature or up to 24 hours refrigerated. If refrigerated, turn the steak in the marinade occasionally. Drain off marinade and put into a saucepan. Place steak under broiler at 1 inch from the heat for 3 to 4 minutes on each side for rare, for 4 to 5 minutes on each side for medium. Leave the broiler door slightly ajar, so the heat stays on and air circulates. Meanwhile bring marinade to the boil. Remove from heat. Carve the meat in thin diagonal slices across the grain. Arrange the slices on a warm platter. Pour the carving juices and the marinade over the meat. Decorate with cress.

1/2 cup olive oil
1/2 cup low sodium soy sauce
1/4 cup honey
3 tablespoons chopped fresh rosemary or 1 tablespoon dried rosemary
1 1/2 tablespoons fresh coarse ground black pepper
1 teaspoon salt
6 garlic cloves, minced

Steps:

  • Score the meat on both sides by making shallow, diagonal cuts 1/4-inch deep at 1-inch intervals, forming a diamond pattern.
  • Place meat in a shallow dish or zip-top bag.
  • Combine oil, soy sauce, honey, rosemary, pepper, salt and garlic.
  • Pour marinade over meat, tossing to coat.
  • Cover or seal; refrigerate several hours or overnight.
  • Remove meat from refrigerator and let come to room temperature for 30 minutes.
  • Preheat grill to medium-hot or oven to broil.
  • Remove meat from marinade.
  • Grill or broil, basting occasionally, for 10 minutes on each side for medium-rare.
  • Transfer steak to carving board; let stand 5 minutes.
  • Cut across grain.

This is excellent beef jerky and worth the wait! Less expensive than store bought and tastes better. Double the recipe next time and experiment with different spices you like!

4 lbs london broil beef or 4 lbs flank steaks
2 teaspoons black pepper
2 teaspoons chili powder
2 teaspoons garlic powder
2 teaspoons cayenne pepper, more if you like it hot
2 teaspoons onion powder
1 teaspoon liquid smoke
1/4 cup soy sauce or 1/4 cup low sodium soy sauce
1/2 cup Worcestershire sauce
1/2 cup Frank's red hot sauce

Steps:

  • Trim all fat off meat.
  • Cut steak in to 4 inch strips.
  • The steak should be about 1/2 inch thick.
  • It's easier to cut meat partially frozen.
  • Pound meat lightly, you don't want it too thin.
  • Add all ingredients in a large bowl.
  • Mix well.
  • Cover and refrigerate overnight (8 hrs).
  • Line cookie sheets with tin foil.
  • Place steak strips on sheets, don't overlap meat.
  • Set oven at lowest temperature. (150-175°F).
  • Bake six hours, turning after three hours.
  • Jerky is done when meat is dried out, depending on your oven.
  • Worth the wait!
