1 tablespoon olive oil
1/2 teaspoon minced garlic
1 cup bread, cut in 1/2-inch cubes
3 hearts romaine lettuce
1/2 cup Caesar Dressing, recipe follows
1/2 cup shaved Parmesan
3 anchovy fillets, finely chopped
1 tablespoon finely chopped capers
1 tablespoon Dijon mustard
1 egg yolk
1 teaspoon minced garlic
3/4 cup vegetable oil
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1/4 cup heavy cream
Kosher salt

Steps:

  • In a large skillet heat the olive oil over medium heat. Add the garlic and bread cubes, tossing well to coat with oil. Toast in the skillet for 7 minutes until golden.
  • Tear the romaine hearts into bite size pieces. Toss with the Caesar Dressing making sure to coat all the leaves generously. Garnish with shaved Parmesan and the garlic croutons.
  • In a medium bowl mix together the anchovy fillets, capers, mustard, egg yolk, and garlic. While whisking vigorously add the vegetable oil in a slow, steady stream. Whisk in the red wine vinegar and lemon juice. Stir in the heavy cream and season, to taste, with the salt.
  • Will keep for several days stored in the refrigerator in an airtight container.

The combination of cold crunchiness, mild bitterness and salty dressings is everlastingly refreshing and satisfying. This authentic version (get out those anchovies and eggs) from Mark Bittman does not disappoint.

About 1/2 cup extra virgin olive oil
1 cup rustic bread, cut into 1-inch cubes
Salt
freshly ground black pepper
1 clove garlic, halved
2 eggs
2 tablespoons freshly squeezed lemon juice
2 to 3 tablespoons minced anchovies, or to taste
Dash Worcestershire sauce
1 large head romaine lettuce, washed, dried and torn into pieces
1/2 cup freshly grated Parmesan

Steps:

  • Put 2 tablespoons of the oil in a skillet large enough to hold the bread in a single layer and turn heat to medium. When oil shimmers, add bread and sprinkle with salt and pepper; brown lightly on all sides, adding a little more oil if necessary. Remove and set aside.
  • Rub the inside of a salad bowl with the garlic clove; discard it. Bring a small pot of water to a boil. Pierce a tiny hole in the broad end of each egg with a pin or needle and boil them for 60 to 90 seconds; they will just begin to firm up. Crack them into the salad bowl, being sure to scoop out the white that clings to the shell.
  • Beat eggs with a fork. Gradually add lemon juice and 6 tablespoons oil, beating all the while. Stir in anchovies and Worcestershire. Taste and add salt if needed, and lots of pepper. Toss well with lettuce; top with Parmesan and croutons; toss again at table. Serve immediately.

2 egg yolks
3 tablespoons wine vinegar
1/3 cup olive oil
4 tablespoons parmesan cheese, grated
2 romaine lettuce, large heads, washed, dried, chopped
1 1/4 cups garlic-flavored croutons
6 slices bacon, well cooked and chopped
1 lemon, juice of
3 drops Worcestershire sauce
salt and pepper

Steps:

  • rub inside of large bowl with garlic clove.
  • place mustard, anchovies, garlic puree and lemon juice in a bowl, mix well to make a paste.
  • add Worcestershire sauce and egg yolks, mix well with whisk.
  • add vinegar and mix well.
  • incorporate olive oil in thin streams while whisking constantly. add half of Parmesan cheese and mix again.
  • add lettuce to salad bowl containing salad dressing, season with salt and pepper, toss to mix well.
  • sprinkle with more lemon juice if desired.
  • add croutons and bacon to salad and toss again.
  • sprinkle with remaining cheese and serve.

1 garlic clove
1 tablespoon Dijon mustard
4 anchovy fillets, pureed
3 blanched garlic cloves, pureed
2 tablespoons lemon juice
2 egg yolks
3 drops Worcestershire sauce
3 tablespoons wine vinegar
1/3 cup olive oil
4 tablespoons grated parmesan cheese
2 heads romaine lettuce
1 1/4 cups garlic-flavored croutons
5 slices well cooked bacon
salt and pepper

Steps:

  • Rub inside of bowl with bruised garlic clove - discard clove.
  • Mix mustard, anchovies, garlic puree and lemon juice in bowl to make a thick paste.
  • Using a whisk add egg yolks and Worcestershire sauce, mix well.
  • Add vinegar, then slowly add oil while whisking constantly.
  • Add half the Parmesan and whisk again.
  • Tear lettuc leaves into smaller pieces and add to salad bowl containing dressing.
  • Add salt and pepper as desired, tossing salad until evenly coated.
  • Add croutons and crumbled bacon.
  • Toss again then sprinkle remaining cheese and serve.
