PEACH RHUBARB JAM
This is a variation of the Blueberry Rhubarb Jam recipe. You can use splenda and sugar free jello and it will turn out great, it will just make a smaller batch. I only gave a cook time on this recipe, because the prep time will vary if you use fresh rhubarb or frozen already diced rhubarb.

Steps:
- Boil rhubarb and water until rhubarb is tender, about 10-15 minutes. Stir occasionally.
- While that is boiling, dump out the pie filling in a bowl, & dice the peaches.
- Add sugar and lemon juice, stir, and bring back to a boil.
- Add pie filling, stir, boil 10 minutes.
- Remove from heat, stir in jello.
- Put in hot jars & seal.

- 1. Cook sugar,water and fruit in a heavy saucepan for 15 minutes, until sugar dissolves. Remove from heat and add dry jello. Stir until dissolved. JELLO JELLY & KOOL-AID JELLY
Jelly couldn't be any easier than to make it with Jello or Kool-aid pkg's. You can get some really pretty colors of jelly. I got these recipes from the net along time ago and have no idea from where.

- 1. FOR THE JELLO JELLY : Put first 3 ingredients in saucepan and bring to a hard boil. Add sugar and Jello: mix well, and bring to hard boil again. Boil 15 to 20 minutes. Skim top and fill jars.
- 2. FOR THE kOOL-AID JELLY : 1. Mix water, Sure-Jell and Kool-Aid together. 2. Bring to a boil, stirring constantly. 3. Stir in sugar. 4. Stir and bring to a full rolling boil that cannot be stirred down. 5. Boil for 1 minute, stirring constantly. 6. Remove from heat. 7. Quickly skim off foam with a large metal spoon. 8. Pour into jelly glasses and seal. 9. If you want to try to make it sugar free I think it would work, just make sure to get the sugar free pectin (sure gel) otherwise it will not set.

- 1. You need to pit your peaches, you don't have to peel them unless you choose to. I cut them down a bit, into about 2 inch pieces. You could quarter them. Put the pieces in a stockpot or dutch oven. When done add about 1/2 cup water per pound of peaches. Bring to a boil over a high heat, while stirring and lightly mashing a bit. When at a boil, put a cover over it lightly and stir occasionally. Let the peaches cook about 20 minutes or until real soft. Need to hang these over a pot, in a jelly bag, cheese cloth or pillow case. This will be for about about 3 to 4 hours, so all the juice can work its way out.
- 2. Now when you have your juice, you can throw the peach pulp away. If you used a cloth you keep, now is the time to rinse it quick, after throwing away your pulp. Get your jars and lids prepared, so you can ladle your jelly right in.
- 3. Measure sugar into an easily pourable container and and set aside where you can grab it quick while cooking. Pour your peach juice and lemon juice into a dutch oven or stockpot. Add your powdered pectin in and whisk till all pectin has disappeared.
- 4. Add your margarine and bring to a boil. Stirring occasionally. When it comes to a full boil, quickly pour in your sugar and stir it in well.
- 5. Bring it to a full rolling boil, while stirring constantly. When at a full rolling boil, boil for 1 full minute while stirring. When your FULL minute is up, remove from heat and skim off the foam.
- 6. Quickly ladle into prepared jars leaving about a 1/2 inch head space. Put on your heated lids and rings. Process your jars in a boiling water bath for 10 minutes.
- 7. When you pull your jars out of the hot water bath, set them on a towel in a cool dry airless space, to let cool. When you hear the pings you know your lids have sealed. Remember to put your date on your label. Should keep for 1 year.
PEACH PINEAPPLE JAM
I just liked the combination and then added orange jello to the mix.This is a nice jam to prepare in half pint jars for gifts.This takes time to set up.

Steps:
- Wash jars, place in 9X13 metal pan upside down with two cups of water in pan.Heat oven to 225*. Put pan in oven. Place seals in a saucepan, heat on low, seals should be hot.
- In large stockpot, add 8 cups of chopped fresh peaches with any juice, or canned chopped peaches with juice.
- Measure crushed pineapple and juice.
- Add enough water to measure 3 1/2 cups.
- Add to stockpot.
- Add orange jello pkgs and sure-jell.
- Add margarine or butter.
- Stir with a wooden spoon to mix.
- Add 2 cups water.
- Heat to a boil.
- Add sugar all at once.
- Stir constantly so it does not scorch. Boil for one full minute, a rolling boil that you cannot stir down.
- Take off heat.
- Skim off foam.
- Add maraschino cherries if desired. Stir.
- Fill jars, 1/4 inch head room. Wipe the neck edge and top of each filled jar with damp clean cloth, seal and tighten with ring.
- Have a canner ready to place jars in hot water bath for 10 minutes. Take out with tongs and place on towel padded counter.
- You will hear a pop and the seal will be dented in when sealed.
- 12-15 1/2 pint jars with seals and rings.
- Remember thuis takes time to seal, it is hot when it comes out of the canner so let it cool. If not set up overnight, use the recipe Liquid Cement #151544. It is not mine but hats off to cook who make it, it works!

I got this recipe from my great-aunt and tried it the first time on some fresh summer peaches. It was super easy and super yummy. It also works with frozen fruit. Store in a cool, dark place.

- Heat five 12-ounce jars in simmering water until ready for use. Wash lids and rings in warm soapy water.
- Fill a large pot with water; bring to a boil. Add peaches; cook until skin loosens, about 20 seconds. Drain and cool until easily handled. Peel, pit, and cut the peaches into chunks.
- Measure out 5 cups of peach chunks into the pot. Mash with a potato masher. Add sugar, peach gelatin, lemon juice, and almond extract; mix well. Bring to a rolling boil and cook jam for 1 minute. Remove from heat.
- Pack jam into hot jars, filling to within 1/4 inch of the top. Wipe rims with a clean, damp cloth. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower in jars using a holder, placing them 2 inches apart. Pour in more boiling water to cover the jars by at least 1 inch. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, about 12 hours. Press the top of each lid with a finger, ensuring that lid does not move up or down and seal is tight.
