NO BAKE GRANOLA BARS

No Bake Granola Bars image

Great quick and easy granola bar recipe that kids can make. Perfect to throw in lunches or in your purse for travel. You can also add 1/4 cup wheat germ without changing the consistency. Change up the dried fruit, nuts, and chocolate for different flavors. I generally keep the bars in the refrigerator until I am ready to eat them, but these keep well to take to work or school.

CHEWY GRANOLA BARS

Chewy Granola Bars image

I like these granola bars because they are chewy...not cakelike, not crunchy....nice and chewy. I've tried others, but my kids always ask for these. The recipe is from TOH.

Provided by MsBindy

Categories     Bar Cookie

Time 30m

Yield 24 bars, 24 serving(s)

Number Of Ingredients 14

1 (10 1/2 ounce) package large marshmallows
2/3 cup crunchy peanut butter
1/2 cup butter, cubed
1/4 cup corn syrup
2 teaspoons vanilla extract
4 cups oats
1 cup crisp rice cereal (Rice Krispies)
1 cup semi-sweet chocolate chips
1/2 cup flaked coconut
1/2 cup sunflower seeds
1/2 cup peanuts, chopped
1/2 cup raisins
2 tablespoons wheat germ
2 tablespoons sesame seeds

Steps:

  • In a large bowl, mix together the oats, rice cereal, chocolate chips, coconut, sunflowers, peanuts, raisins, wheat germ, and sesame seeds.
  • In a large microwave-safe bowl, combine the marshmallows, peanut butter, butter, corn syrup and vanilla.
  • Microwave the marshmallow mixture at 70% power for 2-3 minutes, stirring often until well-blended.
  • Quicky stir the dry ingredients in to the marshmallow mixture. You'll have to work quickly as the mix will get gooey fast.
  • Spread into a greased 13-in. X 9-in. X 2-in. baking pan. To flatten the granola bars, I spray the BOTTOM of a second baking pan with cooking spray, nest this second pan on top of the pan with the mix and press down hard.
  • Bake at 350 degrees F. for 15-20 minutes.
  • Cool and cut into 24 bars.

EASY NO-BAKE GRANOLA BARS

Easy No-Bake Granola Bars image

This granola bar recipe is so easy and delicious! These wholesome granola bars are naturally sweetened, gluten free, and the perfect healthy snack. Recipe yields 16 bars.

Provided by Cookie and Kate

Categories     Snack

Time 20m

Number Of Ingredients 7

1 ¾ cups old-fashioned oats or quick-cooking oats
1 teaspoon ground cinnamon
½ teaspoon fine sea salt (if using regular table salt, scale back a bit)
2 cups mix-ins* (nuts, seeds, chocolate, shredded coconut or dried fruit)
1 cup creamy peanut butter or almond butter
½ cup honey or maple syrup
1 teaspoon vanilla extract

Steps:

  • Line a 9-inch square baker with two strips of criss-crossed parchment paper, cut to fit neatly against the base and up the sides. The parchment paper will make it easy for you to slice the bars later.
  • Place the oats in a large mixing bowl**. Add the cinnamon and salt, and stir to combine. Set aside.
  • Now we'll blitz the mix-ins briefly in the food processor or blender (or, you can chop them by hand). Add any large nuts (like almonds or pecans) first and blitz for a few seconds. Then add the rest and run the machine for a few more seconds, until the ingredients are all broken up into pieces smaller than your pinky nail. Pour the mix-ins into the bowl of oats.
  • In a 2-cup liquid measuring cup, measure out the nut butter. Top with ½ cup honey and the vanilla extract. Stir until well blended. If you must, you can gently warm the liquid mixture on the stovetop or in the microwave, but make sure it's close to room temperature before you pour it into the dry mixture (this is especially important if using chocolate, since it will melt).
  • Pour the liquid ingredients into the dry ingredients. Use a big spoon to mix them together until the two are evenly combined and no dry oats remain. This takes some arm muscles, but you can do it! If the mixture was easy to mix together, that's a sign that you need to add some more oats-sprinkle in more oats until you can't incorporate any more.
  • Transfer the mixture to the prepared square baker. Use your spoon to arrange the mixture fairly evenly in the baker, then use the bottom of a flat, round surface (like a short, sturdy drinking glass) to pack the mixture down as firmly and evenly as possible.
  • Cover the baker and refrigerate for at least one hour, or preferably overnight. (The oats need time to soak up some of the moisture so they aren't sticky.) When you're ready to slice, lift the bars out of the baker by grabbing both pieces of parchment paper on opposite corners. Use a sharp knife to slice the bars into 4 even columns and 4 even rows.
  • Wrap individual bars in plastic wrap or parchment paper (if you store them all together, they will stick to one another). Bars keep well for several days at room temperature, a couple of weeks in the fridge, or several months in a freezer-safe bag in the freezer for best flavor.

CHEWY NO-BAKE GRANOLA BARS

Chewy No-Bake Granola Bars image

These chewy granola bars were adapted from recipe #73754 from Kittencal. My changes were to add coconut, dates, and walnuts. I also used butterscotch chips in place of chocolate chips. You'll see that your own options are endless - just substitute the ingredients that your family prefers!

Provided by CookinDiva

Categories     Breakfast

Time 20m

Yield 18 bars

Number Of Ingredients 11

2 1/2 cups Rice Krispies
2 cups quick-cooking oats
1/2 cup dates, chopped or 1/2 cup any dried fruit
1/2 cup walnuts, chopped or 1/2 cup almonds
1/2 cup sweetened coconut
1/4 cup brown sugar, packed
1/2 cup corn syrup
1 tablespoon molasses (optional)
1/2 cup peanut butter
1 teaspoon vanilla
1/2 cup butterscotch chips or 1/2 cup chocolate chips

Steps:

  • Prepare a 9x13 pan with non-stick spray.
  • In a large bowl, mix all dry ingredients so they are ready for the hot sugar mixture.
  • In a sauce pan, make sugar mixture. Combine brown sugar, corn syrup and optional molasses; bring to a full boil and allow to boil 1 MINUTE. Turn down heat and add peanut butter and vanilla, stirring quickly until smooth.
  • Work quickly - pour the hot sugar mixture over dry ingredients and use two wooden spoons to thoroughly combine ingredients. Stir in chips LAST so they don't melt in the hot mixture.
  • Press mixture very firmly into prepared pan. Keep pressing down until your bars are dense in order to keep them from crumbling later when you cut them.
  • When cool, use a sharp knife to cut into 18 bars (1 cut lengthwise and then 9 cuts across).

NO BAKE GRANOLA BARS

No Bake Granola Bars image

The best healthy, chewy no bake granola bars! Made with peanut butter, oats and the mix-ins of your choice. Perfect for kids and adults.

Provided by Erin Clarke / Well Plated

Categories     Breakfast     Snack

Time 1h20m

Number Of Ingredients 9

3/4 cup creamy peanut butter (or almond butter)
1/2 cup honey (or pure maple syrup)
1 teaspoon vanilla extract
1 1/2 cups quick oats or rolled oats* ((do not use instant oatmeal))
1/4 cup ground flaxseed
1/4 cup wheat germ (or additional 2 tablespoons oats)
3/4 teaspoon ground cinnamon (or try 1 teaspoon pumpkin pie spice)
1/2 teaspoon kosher salt
1 1/4 cups mix-ins of choice** (dried cranberries or raisins, roughly chopped toasted nuts, chocolate chips, sunflower seeds, etc.)

Steps:

  • Line an 8x8 inch baking pan with parchment paper or wax paper so that two sides overhang like handles.
  • In a small saucepan, heat the peanut butter and honey, whisking until smooth. Remove from the heat. Stir in the vanilla. Let cool for several minutes (especially if you are using chocolate chips, which will melt if the mixture is too warm).
  • In a large mixing bowl, whisk the oats, flaxseed, wheat germ, cinnamon, and salt. Roughly chop any mix-ins that are larger than a chickpea (you can also roughly chop them in a food processor), then stir into the oat mixture.
  • Pour the peanut butter mixture over the dry ingredients. With a wooden spoon or very sturdy spatula, stir to combine. The mixture will be very thick and a little tough to stir, but keep working patiently and you will get there. Once combined, the mixture should feel somewhat sticky, but not liquidy and should easily hold together when pressed. If it seems too sticky (this can vary based on your nut butter), add more oats. If it's dry, drizzle in a bit more honey.
  • Press the mixture into the pan very firmly so that the bars stick together (to help, use the back of a large measuring cup or just got at it with your fingers). Refrigerate the no bake granola bars for 1 hour, to allow the bars to set.
  • Using the paper "handles," lift the bars out of the pan onto a cutting board (if they are sticking to the pan at the edges, use a knife to loosen). Slice into bars of desired size (I do 1 row of 4 and 1 row of 3 for 12 bars total).

  • In a large mixing bowl, mix together the oats, cereal and coconut. Set a small saucepan over medium high heat and melt the butter. Add the honey, brown sugar and salt. Stir together then leave it alone as it comes to a boil. Once the boil has reached all the way around the edges of the pan, begin timing. Allow this mixture to boil for 2 minutes and 15 seconds. During this time, you may need to turn the heat down a bit so it doesn’t overflow, but be sure it keeps boiling. If you have a candy thermometer, you want to bring the mixture to 235 degrees. 2. Add

Add in your desired mix-in then press very firmly into a lightly greased 9×13″ pan. If you like your bars thicker, you can use a smaller pan or double the recipe and use the same 9×13 pan. If you do not press firmly enough, the bars will fall apart when you eat them. Place them in the fridge for 20 minutes then cut to size.
