2 cups frozen corn kernels, thawed
3/4 cup half-and-half
1/3 cup chopped scallions, plus more for garnish
2 teaspoons minced garlic
1 jalapeño chile, seeded and minced
8 thick-cut bacon slices, cooked until crisp and crumbled
Corn chips

Steps:

  • Stir together cream cheese, Cheddar cheese, corn, half-and-half, scallions, garlic, and jalapeño in a 3-quart slow cooker.
  • Cover and cook on LOW 3 ½ to 4 hours or on HIGH 1 ½ to 2 hours until creamy and bubbling, stirring halfway through. Stir in bacon.
  • Garnish with scallions, if desired. Serve with corn chips.

1 teaspoon pepper

1 (16 ounce) package shredded sharp cheddar cheese

Steps:

2 cans (10.5 ounces each) sweet corn
1/2 cup finely chopped jalapeño peppers (3-4 jalapeños, plus a few slices to garnish)
1/2 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground black pepper
Frito Scoops for serving

Steps:

  • Begin by preheating your oven to 375 degrees.
  • Spray a 1.5-quart baking dish with cooking spray, set aside.
  • To a large bowl, add the cream cheese, pepper jack cheese, corn, chopped jalapeño peppers, salt, garlic powder, and onion powder. Mix with a wooden spoon to combine.
  • Spread this mixture into your prepared baking dish and sprinkle the top with some additional pepper jack cheese (about 1/4 cup).

1 large jalapeno pepper, minced
2 tablespoons diced onion
1 ½ cups frozen corn, thawed
salt and ground black pepper to taste
1 tablespoon chopped fresh cilantro

Steps:

  • Heat olive oil over medium low heat. Cook and stir jalapeno pepper in hot oil until softened, about 5 minutes. Add onion; cook and stir until the onion is soft, about 2 minutes more. Add corn. Season mixture with salt and black pepper. Continue cooking and stirring until the corn is hot, about 5 minutes. Sprinkle cilantro over the mixture, stir, and simmer another 30 to 60 seconds.

1 tablespoon lime juice
1 (10 ounce) bottle of your favorite salsa

1 teaspoon salt

Steps:

  • Beat the softened cream cheese until its smooth.
  • Add the apple jelly and lime juice and stir together until well blended.
  • Gradually add the salsa, then stir in salt and minced jalapenos.
  • Cover and chill for at least an hour before serving.
  • Get out the corn chips and veggie dippers and dig in!

2 (8 ounce) packages cream cheese
1/3 cup sour cream
2 -3 tablespoons taco seasoning, from prepared taco season packet (more to increase spiciness)
2 -3 tablespoons canned jalapeno slices, finely chopped (can vary according to taste or spiciness)
1 (15 ounce) can white shoepeg corn, well-drained
1 1/2 cups shredded Mexican blend cheese, divided into 3/4 cups

Steps:

  • In large bowl combine cream cheese and sour cream and beat until smooth.
  • Beat in taco seasonings and jalapenos. Beat into this mixture one of the 3/4 C of the shredded cheese.
  • Fold in the corn and mix well.
  • Place mixture into a 9-inch square or comparable sized prepared baking dish(sprayed with non-stick).
  • Cover the top with the remaining 3/4 C of the shredded cheese.
  • Garnish top with a few sprinkles of taco seasoning.
  • Bake at 300 degrees F until cheese is melted and bubbly. (DO NOT OVERBAKE--IT WON'T BE CREAMY).
  • Serve hot with tortilla chips.
