JELL-O PUDDING STRIPE-IT-RICH POKE CAKE
Steps:
- Prepare cake mix as directed on package, baking in a 9 x 13 pan. Remove from oven.
- Poke holes quickly down through cake with round handle of a wooden spoon at 1-inch intervals.
- Only after poking holes, combine pudding mix with powdered sugar in large bowl.
- Gradually stir in milk. Then beat at low speed of electric mixer for not more than 1 minute (do not over beat).
- Quickly, before pudding thickens, pour about 1/2 of the thin pudding evenly over warm cake and into the holes to make the stripes.
- Allow remaining pudding to thicken slightly; then spoon over the top, swirling it to "frost" the cake.
- Chill at least 1 hour.
- Store in refrigerator. Cover with plastic wrap if desired.

An old Southern recipe passed down through my grandmother. You can vary the flavor of gelatin used in order to get a specific color for any holiday, e.g. lime for St. Patrick's day. You can top this cake with berries, sprinkles, or any topping of your choice.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Combine cake mix, water, eggs, and oil in a large bowl; beat with an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes. Pour batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 24 to 29 minutes. Let cool completely, at least 30 minutes.
- Pour cold water into a bowl. Sprinkle gelatin mix on top. Let stand until softened, about 1 minute. Add boiling water and stir constantly until granules are completely dissolved.
- Poke holes all over the cake using a fork. Pour gelatin mix into the holes. Refrigerate cake until gelatin is set, up to 6 hours.
- Spread whipped topping over cake.

- 1. Bake cake according to package directions. Allow to cool.
- 2. Using a toothpick, poke holes over the entire cake, all the way to the bottom. (Some people use the handle of a wooden spoon, some people use a fork. I like the smaller holes of a toothpick, and with a fork, you usually can't get all the way to the bottom, but it's your preference)
- 3. Prepare jello according to package directions, dissolving it in hot water, then adding the cold. Pour slowly over the cooled cake, making sure to cover the entire cake. It will absorb as you're pouring.
- 4. Put cake in the fridge to allow Jello to firm up, about 4 hours.
- 5. Frost with Cool Whip. You can top the cake with fresh fruit, if desired.

- Make cake as directed using 9x13-inch pan.
- When you remove from oven, immediately poke holes in cake about 1 inch apart with handle of wooden spoon; set cake aside.
- In medium saucepan combine sugar & pudding mix; gently whisk in milk, add butter.
- Cook stirring constantly over medium heat till mixture comes to a full boil.
- Pour evenly and slowly over entire cake-allowing it to run into holes and it will level off "frosting" the cake also.
- Chill at least 2 hours; serve topped with whipped cream or Cool Whip.
- Store cake in fridge.
