CRUSTLESS SPINACH QUICHE



Crustless Spinach Quiche image

For easy entertaining, serve this flavorful egg dish at your next brunch or lunch gathering.

2 cups shredded mozzarella cheese (8 ounces)
1/2 cup whipping (heavy) cream
1/3 cup basil pesto
1 package (10 ounces) frozen chopped spinach, thawed and squeezed to drain
5 eggs
1 cup chunky-style spaghetti sauce

Steps:

  • Heat oven to 375°F. Spray quiche dish, 9x1 1/2 inches, with cooking spray.
  • Mix 1 1/2 cups of the cheese, the whipping cream, pesto, spinach and eggs until well blended; pour into quiche dish.
  • Bake 25 to 30 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 2 to 3 minutes longer or until cheese is melted.
  • While quiche is baking, heat spaghetti sauce in small saucepan until hot; keep warm. To serve, cut quiche into wedges. Serve with spaghetti sauce.

Steps:

  • Spray pam, Put first 4 ingredients in bottom of pie plate. Mix rest with mixer to pour over other ingredients. Bake 400℉ (200℃). for 35 minutes.

1 pound frozen spinach
4 eggs
1 cup Bisquick Heart Healthy
2 cups skim milk
1/2 med. onion diced
3 oz 2% shredded cheddar cheese
1 tsp sea salt
1/2 tsp each onion and garlic powder
2 tbsp olive oil

Steps:

  • Saute the chopped onion with the sea salt in the olive oil until tender. Thaw and drain the frozen spinach-squeeze out all excess liquid. Add spinach to onion and add garlic and onion powders saute for a minute or two to incorporate the flavors then remove from the heat. In a blender, mix all remaining ingredients and blend until mixed well. Spray your dish ( I use a 9 inch pie plate) with cooking spray or butter it but add the extra calories. Spread the spinach mixture in the bottom of your baking dish then pour liquid mixture on top and stir slightly to mix all in. Bake at 325 F for 50-60 minutes, until a knife comes out clean. Be careful not to overcook. Serve room temperature. Great any time of the day especially for brunches. Makes a great quick dinner too if you have leftover quiche.

Very very good! This was my first attempt at making quiche and I am so proud! Try using Canadian bacon and Swiss cheese instead of sausage and Italian cheese. Cook time includes standing time.

1 1/4 cups Bisquick baking mix
1/4 cup butter, softened
2 tablespoons boiling water
1 cup shredded Italian cheese
1 cup cooked sausage
2 tablespoons parsley
7/8 cup milk
1 1/2 tablespoons butter
3 eggs
1/4 teaspoon onion powder
1 tablespoon chopped fresh basil

Steps:

  • Heat oven to 400 degrees. Spray 9 inch pie plate with nonstick cooking spray.
  • To make the crust, stir Bisquick and butter until blended. Add boiling water and stir quickly until soft dough forms. Press the dough into the pie plate bottom and up the sides.
  • Sprinkle the cheese, sausage and parsley over the crust.
  • Mix together the milk, butter, eggs and onion powder. Add the basil. Pour into the crust.
  • Bake 30-35 minutes until a knife comes out clean. Let stand 5 minutes before cutting.
