3/4 pound boneless skinless chicken breast, cubed
1/4 cup reduced-sodium teriyaki sauce
2 teaspoons canola oil
8 cups torn mixed salad greens
1 can (11 ounces) mandarin oranges, drained
1 medium carrot, shredded
1/4 cup slivered almonds, toasted
3 tablespoons thinly sliced green onions
DRESSING:
2 tablespoons white vinegar
2 tablespoons olive oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a shallow dish, combine chicken and teriyaki sauce. Cover and refrigerate 1-2 hours. , Drain and discard marinade. In a large nonstick skillet, heat oil over medium-high heat. Add chicken; cook and stir until no longer pink, 5-7 minutes. Refrigerate until chilled., In a large bowl, combine salad greens, chicken, oranges, carrot, almonds and onions. In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Drizzle over salad; toss to coat.

3 carrots, cut into matchsticks
½ teaspoon minced fresh ginger root
1 clove garlic, minced
2 tablespoons olive oil
2 skinless, boneless chicken breast halves, cut into small pieces

½ cup peanuts
⅓ cup orange juice
⅓ cup soy sauce
⅓ cup brown sugar
2 tablespoons ketchup
1 teaspoon crushed red pepper flakes
2 tablespoons cornstarch

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat; cook and stir carrots, ginger, and garlic until carrots are slightly softened, about 5 minutes. Transfer carrot mixture to a bowl. Add remaining 2 tablespoons olive oil to the same skillet.
  • Cook and stir chicken in the hot olive oil until no longer pink in the center, about 10 minutes. Add carrot mixture, water, peanuts, orange juice, soy sauce, brown sugar, ketchup, and red pepper flakes to chicken; stir to combine. Cover and simmer until sugar has dissolved, about 5 minutes.
  • Remove about 1/4 cup sauce from the skillet; whisk in cornstarch until dissolved and sauce is smooth. Pour cornstarch mixture back into chicken and sauce; cook until sauce is slightly thickened, about 5 more minutes.

I love Chinese food. The smell of sesame oil always makes me crave Lo Mein! I just kind of "threw" these ingredients together after viewing other similar recipes here on JAP. My take on Lo Mein. Hope you'll like my version of this Asian dish.

3 - 3-ounce packages chicken flavor ramen noodles with flavor packets (use as many as the packets to suit your taste)
1 cup(s) chicken broth
1 - 16-ounce bag cole slaw mix (or asian slaw if available)
1 pound(s) grilled chicken breasts, cut into short strips
1 small zucchini, finely diced
1 can(s) bean sprouts, drained (14.5 ounces)
1 can(s) diced water chestnuts, drained (8 ounces)
12 ounce(s) asian sesame salad dressing
2 tablespoon(s) soy sauce
2 tablespoon(s) sesame oil
1/4 teaspoon(s) sriracha hot sauce
4 - green onions, cut on the bias

Steps:

  • Dissolve all three flavor packets in chicken broth. Set aside.
  • In a LARGE microwave safe bowl, combine the cole slaw mix, chicken, zucchini, bean sprouts, water chestnuts, Asian Sesame salad dressing, soy sauce, sesame oil and sriracha. Break Ramen noodles into smaller pieces while still in the packaging. Add to the bowl (DO NOT COOK NOODLES BEFORE THIS STEP). Add the chicken broth and toss gently to combine all ingredients.
  • Cover and cook in microwave on medium high for 10 minutes. (5 minute intervals, stirring between each).
  • Before serving, sprinkle with sliced green onions. Serve extra dressing on the side.

1/4 cup olive oil
1/4 cup canola oil
1 tsp lemon zest
3 1/2 Tbsp fresh lemon juice
2 Tbsp honey
2 Tbsp peeled and grated ginger
1 clove garlic
1 tsp dijon mustard ((Emeril's is the only way to go))
1/4 - 1/2 tsp salt (, to taste)
12 wonton wrappers (, sliced into 1/2-inch thick strips)
Vegetable oil (, for frying)
Cinnamon
1 lb boneless skinless chicken breast (, grilled and sliced)
1 cup sliced almonds (, toasted)
10 oz baby spinach
2 cups snow peas (, sliced into halves)
1 1/2 cups matchstick carrots
1 red bell pepper (, seeded and diced)
1 1/2 (15 oz) cans mandarin oranges (no sugar added), drained well*
1/2 cup cilantro (, stems removed)
Black and white sesame seeds (, for garnish (optional))

Steps:

  • Add all ingredients to a blender and pulse until well emulsified and ginger and garlic are finely minced. Pour into an airtight container and all to rest in refrigerator while preparing salad (shake or stir before adding to salad).
  • Heat about 3/4 to 1-inch of oil in a skillet to 360 degrees (maintain this temperature, reduce heat as needed). Add just enough wonton strips without overcrowding. Fry just until halfway cooked, then using metal tongs (grabbing as many as you can at once) rotate to opposite side and cook until just lightly golden. Remove and drain on a plate lined with paper towels. Immediately sprinkle lightly with cinnamon and salt before they dry.
  • Add all salad ingredients to a large salad bowl and toss. Drizzle with dressing and gently toss. Top each serving with desired amount of wonton strips and optional sesame seeds. Serve immediately.

1/4 cup lite soy sauce
1/4 cup rice wine vinegar
3 cloves garlic
1 Tbsp. sesame oil
1 Tbsp. GREY POUPON Dijon Mustard
2 tsp. hot pepper sauce
4 small boneless skinless chicken breasts (1 lb.)
2 cups tightly packed torn mixed salad greens
2 navel orange, sectioned
1/4 cup dry roasted unsalted peanuts
2 radishes, sliced
2 green onions, quartered

Steps:

  • Process first 7 ingredients in blender until smooth. Reserve 1/2 cup juice mixture; refrigerate for later use. Pour remaining juice mixture over chicken in shallow dish. Refrigerate 4 hours to marinate.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade. Grill chicken 6 to 8 min. on each side or until done (165ºF). Cut into thin strips. Meanwhile, bring reserved juice mixture to boil; simmer on low heat 5 min.
  • Cover platter with salad greens; top with chicken, oranges, nuts, radishes and onions. Drizzle with juice mixture.

175g dried medium egg noodles
2 good handfuls of greens, such as Chinese leaf , finely shredded
2 carrots , cut into thin strips
8 spring onions , finely sliced
1 red pepper , seeded and finely sliced
a handful of fresh coriander leaves
1 red chilli , seeded and finely chopped
2 garlic cloves , finely chopped
1 tbsp root ginger , finely chopped
2 tbsp soy sauce
juice of 1 lime
2 tbsp olive oil

Steps:

  • Preheat the grill to high. Put the chicken on a baking tray and grill for 10-12 minutes without turning, until cooked through.
  • Meanwhile, cook the noodles according to instructions. Drain and run cold water through to stop them sticking together.
  • Mix the vegetables in a bowl. Thinly slice the chicken and add to the bowl, along with the noodles and coriander leaves.
  • Mix the dressing ingredients together with 2 tablespoons water, pour over the salad and toss well. Serve straight away.

2 chicken breast halves, with skin and bone (about 1 lb total)
3 slices fresh ginger (1/4-inch slices)
1 scallion, white and green parts, coarsely chopped
1 teaspoon salt
2 seedless oranges
2 tablespoons soy sauce
1 1/2 tablespoons unseasoned rice vinegar
2 teaspoons hoisin sauce
1 teaspoon Asian chili sauce, such as sriracha
1/2 cup vegetable oil
1 tablespoon Asian dark sesame oil
1/2 lb dried chinese noodles or 1/2 lb linguine
1 cucumber, peeled, halved lengthwise, seeded, and cut into 1/4-inch thick half-moons
2 scallions, white and green parts, thinly sliced
1/2 red bell pepper, cored, seeded, and cut into thin strips
3 tablespoons chopped fresh cilantro or 3 tablespoons mint

Steps:

  • Place the chicken, ginger, scallion, and salt in a saucepan and add enough cold water to cover the chicken.
  • Bring to a boil over high heat.
  • Decrease the heat to low and cover.
  • Simmer until the chicken loses its raw look, about 15 minutes.
  • Remove from the heat and let stand, covered, for 20 minutes.
  • Drain the chicken; let the chicken cool until easy to handle.
  • Remove and discard the skin and bone; pull the chicken meat into shreds.
  • Vinaigrette--grate the zest from 1 orange into a small bowl and reserve.
  • Cut off the peel from the oranges.
  • Working over another bowl to collect the juices, cut between the membranes to release the orange segments.
  • Squeeze the juice from the membranes, if necessary, to measure 2 tablespoons.
  • Whisk together the orange juice and zest, soy sauce, vinegar, hoisin sauce, and hot sauce until combined.
  • Gradually whisk in the vegetable oil, then the sesame oil.
  • Bring a large pot of salted water to a boil over high heat.
  • Add the noodles and cook according to the package directions until tender.
  • Drain and rinse under cold running water; drain well.
  • Transfer the noodles to a bowl.
  • Add the chicken, orange segments, cucumber, scallions, and bell pepper.
  • Add the vinaigrette and toss well.
  • Sprinkle with the cilantro.
  • Taste and season with soy sauce and hot sauce, as desired.
  • Serve at room temperature.

6 cups romaine lettuce, cleaned and cut into pieces

1 pkg romaine lettuce salad mix
1 pkg 6-8 ounces tyson oven roasted diced chicken breast
1 11 oz. can dole mandarin oranges, drained well
1/2 - 1 3 oz. can la choy rice noodles (use the whole can if you like a really crunchy salad)
3 - 4 Tbsp kraft light, asian toasted sesame salad dressing. you can use more dressing if you like.

Steps:

  • 1. In a large bowl, layer the lettuce, chicken, orange peices, some of the rice noodles and some of the salad dressing. Repeat this two more times. Serve.
