Caramelized Onion and Garlic Dip image

Provided by Aaron McCargo Jr.

Time 30m

Yield 2 cups

Number Of Ingredients 13

1/4 cup olive oil
1 teaspoon fresh thyme leaves
1 shallot, peeled and chopped
2 cloves garlic, chopped
1 large Spanish onion
1 Vidalia onion, finely chopped

  • Pre-heat oven to 425°F. Cut off the top of the garlic bulb to expose the cloves. Set in the middle of a large square of foil and drizzle with olive oil. Pull up the foil to wrap around the bulb. Roast in the oven for 30-40 minutes until cloves are tender.
  • Meanwhile, heat olive oil over medium-low heat in a large skillet. Add onions and shallots. Stir in balsamic and salt until coated. Cook for 35 minutes stirring occasionally. Deglaze the pan with wine, stock, or water. Scrape the bottom of the pan as you add the liquid. Continue to cook for 20 minutes until onions are a deep golden brown and caramelized. • Make the Caramelized Onions: Heat the olive oil in a large sauté pan over medium-high heat until shimmering. Add the sliced onions and, using a metal spatula, stir to coat all of the onions with the olive oil. Reduce the temperature to medium and cook the onions, stirring and turning occasionally, not allowing them to burn, for 10 minutes. Sprinkle the onions with the kosher salt and sugar, and stir to evenly distribute. Reduce the temperature to medium-low and continue to cook, turning and stirring, scraping up any browning on the bottom of the pan, until the onions are a deep golden brown, 20 to 30 more minutes. Pour the beer into the pan and scrape up any browned bits that have collected on the bottom. Let the mixture simmer, stirring occasionally, until all of the beer has evaporated, 5 to 10 minutes. Remove from the heat.
  • Assemble the Dip: Preheat the oven to 375 degrees F. Using a fork, mash the roasted garlic into the cream cheese and sour cream until a smooth, homogenous mixture forms. Stir in the cheddar cheese, white and light green parts of the green onion, and the caramelized onions (reserving a bit for garnish, if desired).
  • Transfer the mixture to a small baking dish (I used a Le Creuset dish that's just over 1-quart in size) and bake until golden brown and bubbling, 20 to 25 minutes. Remove from the oven, garnish with the reserved caramelized onions and green onions. Serve with tortilla chips, bread or crackers. Leftovers can be stored in the refrigerator, covered with plastic wrap, for up to 3 days.

  • Heat the dutch oven over medium heat and add the olive oil. Add the onions and cook gently, stirring for about 5 minutes to separate the rings of the onion and get them coated in the oil.
  • Sprinkle on the salt and stir to combine. The salt will draw out the moisture in the onions. Cover with lid and reduce heat to medium low to continue cooking.
  • Stir the pot every 15-20 minutes to assure that nothing is sticking to the bottom. If you see the onions browning -- the pan is too hot and you should reduce the heat. You want the onions to slump over the course of cooking. When they've given up all of their liquid, only then do they start to caramelize. Don't confuse "brown" with "caramel".

  • On a cutting board, trim the root end, and tip of the onion off. Half each onion and remove the thick, papery outer skin layer. Thinly slice each half from top to bottom. My onions were about 1/4" thick- you can go thinner. I love onions so mine were on the thicker side.
  • Over low heat, cook the onions with a cover, stirring every 5 minutes. They will start to break down and get soft, translucent, and take on a nice deep coloring as they cook. Once they have cooked for 15 minutes, add the salt, sugar, and vinegar to the pan. Cook onions for an additional 15 minutes. Note: These are lightly caramelized, if you want a deeper amber colored onion, caramelize for the full 45 minutes over low heat. For this recipe, they will be golden colored, and soft in texture at the 30-minute mark.

  • Preheat oven to 400 degrees. Place thinly sliced onions (I use a mandolin) into a Dutch oven. Add oil and balsamic and stir to coat. Place the lid on the Dutch oven and place in the center rack of the oven. Cook for 15 minutes and then stir.
  • While the onions are cooking, slice 1/4 inch off the top of the head of garlic, so the cloves are exposed but stay intact. Drizzle a teaspoon of oil on top, and wrap in foil. After the onions have cooked for 15 minutes, place the wrapped garlic on the oven rack next to the Dutch oven to roast. It should take about 30-40 minutes to soften completely.
  • Continue to cook the onions in the oven stirring every 15-20 minutes, until they have reduced to about 1 1/2 cups and are a deep golden brown color. This should take about 50-60 minutes.
  • When the garlic is roasted and the onions are caramelized, allow them to cool at room temperature while you prepare the rest of the dip.
