HOW TO MAKE BEEF SATAY
With grilling season still in full swing, you can never have enough new and exciting ways to enjoy beef. This is the main course-size version of a fabulous Thai appetizer, strips of beef marinated in Asian spices, skewered, and grilled for a truly amazing combination of flavors. I think you should try this very soon.

Steps:
- Place ginger, garlic, onion, brown sugar, fish sauce, vegetable oil, soy sauce, coriander, cumin, turmeric, and cayenne pepper into a mixing bowl; whisk into a smooth marinade.
- Bruise lemon grass by hitting it lightly several times with the back of a large chef's knife; mince the lemon grass and add to the marinade.
- Cut beef sirloin into strips about 2 1/2 inches long and 1/8 inch thick. Thoroughly mix the beef into marinade until all beef strips are completely coated, about 1 minute. Cover bowl with plastic wrap and marinate in refrigerator for 2 to 4 hours.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Remove beef from marinade and shake off excess marinade. Thread 1/4 the meat onto each metal skewer.
- Arrange skewers on the preheated grill and cook until the meat stops sticking to the grill, about 1 to 2 minutes. Flip skewers over onto other side and cook until meat is well browned and shows grill marks, 2 to 2 1/2 minutes. Turn onto first side again and cook until meat is still slightly pink, 2 more minutes. Transfer to a platter and let skewers rest about 2 more minutes before serving.

SATE BEEF
Recipe from an old Australian Women's Weekly cookbook. The sate sauce should be a thick paste type that you will probably find in the Asian food aisle of the supermarket near the green and red curry pastes. We used Yeo's Satay Sauce. We changed the beef to round steak, the original recipe called for fillet. You can use whichever cut you prefer.

Steps:
- Trim all fat and sinew from the meat. Cut into 5mm slices. Gently pound each slice to flatten slightly.
- Put meat in a bowl with soy sauce, pepper, sesame oil, cornflour and water. Mix well and let stand for 20mins.
- Heat oil in a wok or pan, separate meat and sauté until browned on both sides. Remove from pan.
- Add diced onion and garlic to the pan, sauté gently until onion is transparent.
- Combine sate sauce, sherry, sugar, curry powder, salt, water and soy sauce. Add to onion and garlic in pan. Stir until boiling.
- Return beef to pan and heat through. It should only take about a minute.

JAVA STYLE BEEF SATE
I've had a couple cooking lessons in Bali, my part time home. This is something I learned to make - it is so good - make it a party and try something different!

- In a mortar with a pestle, mash together the garlic, shallots, galangal, chile peppers, and macadamia nuts into a fine paste. Add the shrimp paste and oil, continue mashing until incorporated. Place the paste into a large skillet over medium-high heat, cook and stir until fragrant, about 3 minutes.
- Stir the beef into the sauce and cook for 5 minutes, stirring constantly. Pour in the water, palm sugar, bouillon cube, and salt. Simmer until the water has evaporated, about 10 minutes, stirring frequently. Stir in the kecap manis and lime leaves, then spread the beef out on a baking sheet or large dish, and allow to cool until cool enough to handle.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the beef cubes from the tray, and thread onto skewers, reserve any leftover sauce for basting.
- Cook on preheated grill for a few minutes until slightly browned; baste occasionally with the leftover sauce.

- Make the blend. Dump everything into a bowl and mix them together. Store in a tightly sealed jar in a dark place.
- Use the blend. Pound the boneless meat into strips about 1/2 inch thick and 4 inches long. This is thicker than most other recipes, but insures tender and juicy meat. Try to pound them flat so they cook evenly. Then sprinkle them with the Satay Spice Rub.

- In a bowl, combine the ground beef, coconut, soy sauce, molasses, ginger, lime juice, salt, turmeric, pepper and the 2 tablespoons of vegetable oil. Mix with your hands to combine the ingredients.

- First, soak wooden skewers in water to prevent them from burning. Then, cut the steak against the grain into 1-inch strips. Cut the strips again into about 1-inch cubes.
- In a medium bowl, combine ginger, garlic, soy sauce, lime, Indonesian Satay spice and fish sauce. Add beef cubes and toss to coat in sauce. Marinate at room temperature for minimum 20 mins.
- Line a baking sheet with foil. Adjust top oven rack 6 inches from top and turn on oven broiler to High. Skewer the beef cubes and place on baking sheet. Broil on High for 3 mins, flip and broil for another 2 mins (for medium rare). Let skewers rest for 10 mins before serving with peanut dipping sauce.
- Finally, make the peanut sauce: Place peanut butter in mixing bowl and slowly add 6 Tbsp of warm water (2 tbsp at a time) and stir. Peanut butter texture will thin. Then, add hoisin sauce, soy sauce, lemon and juice, and ginger and stir to mix.

- Making Peanut Sauce. Fry shallots, garlic, candlenut, curly red chili, and red cayenne pepper until half cooked. Blend the par-fried ingredients together with peanuts and 300 ml of water until smooth. Pour the blended peanut sauce into a pan and add the lime leaves. Slather 100g of peanut sauce on each skewered beef tendon. Grill the beef tendon satay while basting it with peanut sauce evenly until browned, then set aside.
