Provided by Geoffrey Zakarian

Categories     main-dish

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 14

2 tablespoons unsalted butter
6 strips bacon, chopped
1 medium yellow onion, chopped
Kosher salt and freshly ground black pepper
6 fresh sage leaves, minced
3/4 cup pumpkin puree
8 large eggs
1/2 cup heavy cream
One 9-inch pie crust, store-bought and baked and cooled according to package instructions, or 1 homemade pie crust, blind-baked and cooled
1/2 cup grated Parmesan
2 tablespoons olive oil
1 tablespoon Chardonnay or white wine vinegar
Juice of 1 lemon
4 cups arugula

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the butter in a medium saute pan over medium heat. Add the bacon and cook until fully rendered and caramelized, 10 to 12 minutes. Remove the bacon from the pan and add the onions; sprinkle with salt and pepper. Cook, stirring occasionally, until the onions are browned and tender, around 15 minutes. Return the bacon to the pan along with the sage. Cook for 1 more minute.
  • Whisk together the pumpkin puree, eggs and cream in a large bowl. Whisk in the onion mixture. Pour into the prepared crust and bake until set, 30 to 40 minutes. Allow to cool for 10 minutes.
  • Whisk together the cheese, olive oil, vinegar and lemon juice in a bowl. Season with salt and pepper and toss in the arugula.
  • Cut the quiche into 8 equal portions. Top the quiche with the salad and serve.

Savory 3-Cheese Quiche image

Provided by Food Network

Categories     side-dish

Time 1h36m

Yield 6 to 8 servings

Number Of Ingredients 20

1 (9-inch) prepared pie shell (unbaked), recipe follows
1 cup grated Swiss
1/2 cup grated marbled jack
3 tablespoon grated Romano, plus 1 tablespoon
1/2 cup chopped medium onion
1 cup fresh broccoli florets
1 1/2 cup sliced fresh mushrooms
1/4 teaspoons dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon salt
1/2 teaspoon garlic powder
3 eggs
1 cup milk
1/2 cup half-and-half
7 or 8 cherry tomatoes
1 cup flour
6 tablespoons butter flavored shortening
1/2 teaspoon salt
1/4 teaspoon sugar
3 tablespoons cold water

Steps:

  • Preheat oven to 425 degree F.
  • Sprinkle the cheese over the bottom of the pie shell, then evenly distribute the onion, broccoli, and mushroom over the cheese layer. Mix the eggs and the spices together in a bowl. Add the milk and half-and-half and mix well. Pour over contents in the pie shell.
  • Cut the cherry tomatoes in halves and place, cut side up, in a ring on top of the mixture. Sprinkle the 1 tablespoon of Romano over top. Bake for 15 minutes. Turn oven down to 300 degrees F and bake an additional 45 to 55 minutes or until cake tester inserted in middle comes out clean.
  • Blend together with pastry blender until crumbly (like coarse cornmeal). Add cold water, 1 tablespoon at a time, mixing with a fork until mixture will hold together. Handle as little possible. Wrap in plastic wrap in a "patty" and chill for at least an hour. Roll out between Saran Wrap with very little flour. Place carefully in a pie plate, being careful not to stretch dough. Trim the edges.

Sausage and Savory Herb Quiche image

Provided by Damaris Phillips

Categories     main-dish

Time 3h5m

Yield 6 to 8 servings

Number Of Ingredients 11

1 unbaked 9-inch pie crust
3/4 cup baby spinach
1/2 cup fresh parsley leaves, chopped (about 1/2 bunch)
2 fresh sage leaves
1 sprig fresh mint, leaves only
1 sprig fresh marjoram, leaves only
Kosher salt
6 large eggs
3 tablespoons unsalted butter, melted
1 1/2 cups grated Monterey Jack cheese
1/2 cup crumbled cooked Italian sausage

Steps:

  • Preheat the oven to 400 degrees F.
  • Line the pie crust with parchment paper, fill with baking beans or pie weights and bake for 15 minutes. Carefully remove the baking beans and parchment and continue to bake until golden brown, 10 to 13 minutes more. Allow to cool to room temperature before filling.
  • Lower the oven temperature to 350 degrees F.
  • Meanwhile, in a mortar and pestle or food processor, grind the spinach, parsley, sage, mint and marjoram with 1 teaspoon salt until a very coarse paste forms. If it doesn't form into a paste, add 1 tablespoon water.
  • In a large bowl, whisk together the eggs, melted butter and herb paste until combined. Stir in 1 cup of the cheese.
  • Line the pie crust with the sausage, pour in the egg mixture and top with the remaining 1/2 cup cheese. Bake until the center is set and the top is dark golden, 45 to 55 minutes. Cool at room temperature for 1 hour before serving.
