JAPANESE-STYLE SESAME GREEN BEANS

Japanese-Style Sesame Green Beans image

I discovered this dish at my mother-in-law's house during a family holiday buffet. Her being Japanese, she had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

1 tablespoon canola oil
1 ½ teaspoons sesame oil
1 pound fresh green beans, washed

Steps:

  • Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. BEEF WITH GREEN BEANS

Beef With Green Beans image

We really enjoyed this super easy dinner which was printed in the newspaper (originally from Easy Chinese Stir-fries). Although I think you can cut the oil in half this isn't bad calorie wise using the amount listed. Also this seems like a lot of pepper but this really isn't a spicy dish -- I think the pepper tenderizes the meat some how.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

1 lb green beans, trimmed and cut into 2 inch pieces
3/4 lb flank steak, trimmed
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon chinese rice wine (I used Mirin)
1 teaspoon sugar
2 teaspoons black pepper
3 tablespoons peanut oil (see my note in description)
1/4 cup water
2 slices ginger, unpeeled
1 onion, slilced

Steps:

  • In a bowl whisk together marinade ingredients (soy sauce - pepper).
  • Slice steak with the grain into 2-inch strips and then across the grain into 1/2 inch pieces (the directions say 1/8 inch pieces but mine were closer to 1/2 inch to 1 inch) and then add them to marinade, toss, and set aside.
  • Heat one tablespoon oil in wok over medium high heat until hot. Add beans and stir for 1 minute. Add water and reduce heat to medium. Cover and cook for 5-10 minutes. Transfer beans to bowl.
  • Add remaining oil (see note in description) to wok and increase heat to high. Add ginger and stir until oil is hot and ginger sizzles (1 minute).
  • Add onion and stir for one minute.
  • Add beef mixture to wok and stir until beef is done (2-5 minutes).
  • Return beans and liquid to wok and stir until mixed and heated through. Discard ginger.

GOMA-AE GREEN BEANS - JAPANESE GREEN BEANS WITH SESAME DRESSING

Goma-Ae Green Beans - Japanese Green Beans With Sesame Dressing image

Easy and very tasty Japanese vegetable dish. Serve as a side dish or if you are like me, eat a bowl of it with freshly cooked short grain rice! This dressing can be used for other veggies, such as broccolies and asparagus.

Provided by Ume Murasaki

Categories     Vegetable

Time 15m

Yield 4 serving(s)

Number Of Ingredients 5

500 g fresh green beans
3 tablespoons sesame seeds
3 tablespoons soy sauce
2 tablespoons yellow sugar
1 pinch salt

Steps:

  • For the dressing, dry roast sesame seeds in a frying pan for about a couple of minutes, gently jiggling the pan. Careful not to burn them.
  • With a pestle and a mortar, partially grind the sesame seeds.
  • In a large bowl, mix together ground sesame seeds, soy sauce, sugar, and a pinch of salt.
  • Cut the green beans if they are too long. Cook the green beans by boiling until desired tenderness is reached. Drain and briefly run them under running water so that the beans stay green.
  • While the green beans still warm, toss them in the sesame dressing.
  • The dressing looks more like a paste than dressing but that's exactly how you want it to be, otherwise when mixed with the green beans, the dressing gets too runny and the green beans won't taste as nice.

  • Bring a pot of water to a boil. Even if your sesame seeds are toasted/roasted, it’s good to toast them again in a non-greased frying pan for a couple of minutes, gently jiggling the pan. Be careful not to burn them.
  • With a pestle and a mortar (or spice grinder), grind the sesame seeds, leaving some seeds uncrushed to add texture to the sauce.
  • Add soy sauce and sugar and mix it all together. The dressing looks more like a paste than dressing. Set aside.
