Steps:
- 1. Toast oats in a shallow pan or electric fry pan at 350^ for 10 minutes. Combine with remaining ingredients; toss until evenly coated.
- 2. Press into sides and bottom of buttered 9-inch pie plate.Chill until firm. Great for cream pies or my Strawberry cream cheese pie.
JAN'S PEANUT BUTTER PIE WITH OATMEAL CRUST
Steps:
- For crust:
- Mix all ingredients, (except chocolate chips) press into a 9" pie pan sprayed with Pam. Sprinkle with the chocolate chips.
- Bake at 350 degrees for 15 minutes. Cool completely. Then add filling.
- For filling:
- Beat till creamy with electric mixer: cream cheese, peanut butter, powdered sugar, and milk. Then fold in Cool Whip. Refrigerate for at least 4 hours or longer. When serving drizzle with chocolate sundae syrup.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9-inch pie dish with cooking spray.
- Combine oats, confectioners' sugar, butter, cinnamon, nutmeg, and salt together in a bowl; press into the prepared pie dish.
- Bake in the preheated oven until lightly browned, 15 to 20 minutes. Cool completely.

OATMEAL NUT PIE CRUST
I just found this recipe in an old band bosters cookbook and placing it here for sharing and later use. The recipe mentions that it is a good substitute for graham cracker crust. It sounds good to me and might be a good alternative for cream pies or maybe even dutch apple or cherry.

Steps:
- Preheat oven to 350F.
- Toast oatmeal in a shallow pan for 10 minutes to brown, watch carefully.
- Remove from oven and in small mixing bowl combine oatmeal with remaining ingredients.
- Press into 9-inch pie plate.
- Fill with desired filling and bake or bake crust empty for later use.

- Press into 9x9" buttered pan.
- Bake at 350F for 15 minutes.
- Filling: Mix filling ingredients.
- Pour over partially baked crust and return to oven for 20 minutes.
- Cool before cutting.

- Preheat oven to 275°. Place crackers in a deep pie dish (a shallower one will work but you may have some filling left over) and gently crush with your hands until you have a mix of dime-size pieces, small crumbs, and everything in between. Add peanuts, brown sugar, and salt and toss to combine. Drizzle in butter and toss to evenly coat. Using your hands and the bottom of a measuring cup, press firmly and evenly into bottom and up sides of dish. (Mixture will look and feel crumbly, but it will hold together when baked.) Bake crust until a shade darker, 20–25 minutes. Let cool.
- Do ahead: Crust can be baked 3 days ahead. Store tightly wrapped at room temperature, or freeze up to 1 month.
- Pour water into a medium saucepan to come 1½" up the sides and bring to a bare simmer over medium-low heat. Whisk eggs, brown sugar, and salt in a large heatproof bowl just to combine (or use the bowl of a stand mixer if you’ve got one). Set over saucepan (bowl should not touch water) and heat egg mixture, stirring constantly with a heatproof rubber spatula, until sugar dissolves, about 4 minutes (mixture will no longer feel gritty when rubbed between your fingers). If you are concerned about undercooked eggs, heat mixture longer, still stirring constantly, until an instant-read thermometer registers 165°, about 3 minutes more. Remove bowl from heat and add vanilla to egg mixture. Using an electric mixer, beat on high speed until thick and pale and doubled in volume, about 10 minutes. (Or, if using a stand mixer, beat with the whisk attachment, 6–8 minutes.)
- Using spatula, mix peanut butter in another large bowl to loosen up and smooth out. Stir one third of egg mixture into peanut butter to lighten, then gently fold in half of remaining egg mixture, running spatula down sides and along bottom of bowl, then lifting up through center and over top while rotating bowl, until just combined. Repeat with remaining egg mixture (it will lose a lot of volume, and that’s okay).

- In the bowl of an electric mixer, add in softened butter, peanut butter and brown sugar; mix on medium low until well combined. Switch mixer to low speed; add in egg, vanilla extract, honey and sour cream and beat for 1 minute or until well combined, smooth and creamy. Slowly add in dry ingredients, increasing speed to medium low; mix until just combined. If you want to add in chocolate chips, now is the time to do so. I suggest mini chocolate chips!
- Use a small cookie scoop to grab a tablespoonful of dough and roll into a ball with your hands. It’s important that the dough is smaller as the cookies will expand and since we’re making sandwiches, you don’t want them too big.
