Time 55m

Yield 6 servings

Number Of Ingredients 8

2/3 cup rolled oats
1/3 cup all-purpose flour
1/3 cup dark brown sugar
1/3 cup pecans, toasted, chopped
Pinch fine salt
6 tablespoons cold unsalted butter, cut into bits
4 medium baking apples, such as Braeburn, Rome, or Golden Delicious,
Unsweetened whipped cream, optional

Steps:

  • Preheat the oven to 375 degrees F. Lightly butter 6 (6-ounce) ramekins.
  • Whisk the oats, flour, brown sugar, pecans, and salt in a medium bowl. Rub in the butter with your fingertips until it is in even, pea-size pieces. Peel, core, and coarsely chop the apples and divide evenly among the ramekins. Scatter the crisp topping evenly over the fruit in each ramekin.
  • Transfer the ramekins to a baking sheet and cook until the fruit bubbles around the sides and the top is golden, about 30 minutes.
  • Preheat a broiler. Place the crisps about 4 inches from the broiler and cook until golden brown, about 30 seconds. Let cool about 15 minutes before serving. Serve warm with whipped cream, if using.

Time 2h25m

Yield 8 servings

Number Of Ingredients 16

Unsalted butter, for greasing the pan
3/4 cup firmly packed light brown sugar
1/4 cup all-purpose flour
1/4 cup apple cider
1 1/2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
2 pounds Granny Smith apples
2 pounds Honeycrisp apples
1 1/2 cups all-purpose flour (see Cook's Note)
1 cup old-fashioned rolled oats
2/3 cup firmly packed light brown sugar
1/2 cup pecans, coarsely chopped
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cubed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.

Time 2h20m

Yield 8 servings

Number Of Ingredients 16

4 pounds firm mixed apples, such as Granny Smith or Golden Delicious
3/4 cup granulated sugar
3 tablespoons fresh lemon juice
4 tablespoons unsalted butter
1/4 cup heavy cream
3 tablespoons all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon fine salt
3/4 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/2 cup walnuts, coarsely chopped
1/3 cup granulated sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
Pinch fine salt
Confectioners' sugar, for dusting
Vanilla ice cream, for serving, optional

Steps:

  • For the filling: Peel and core the apples, and cut them into 1/2-inch-thick slices. Toss them with the granulated sugar and lemon juice. Melt the butter in a large skillet over medium-high heat. Add the apples, and cook, stirring occasionally, until the firmer apples soften but still hold their shape, 15 to 18 minutes. Add the cream, flour, cinnamon and salt, and stir until the juices thicken, about 2 minutes. Remove the skillet from the heat, and let the filling cool completely. Transfer it to a 9-by-13-inch baking dish.
  • For the topping: Mix the flour, oats, walnuts, granulated sugar, butter and salt together in a medium bowl, using your fingers to work the butter into the flour, until the mixture comes together and holds its shape when squeezed.
  • Drop small clumps of the topping over the filling, and wrap the baking dish well with plastic wrap. Label and date, and freeze for up to 2 weeks.
  • To serve: Position an oven rack in the top third of the oven, and preheat to 350 degrees F. Unwrap the crisp, and bake, frozen and uncovered, until the filling is hot and bubbly and the top is golden brown, 50 minutes to 1 hour. Dust the crisp with confectioners' sugar, and serve warm with scoops of vanilla ice cream if you like.
