2 green onions, sliced
1 clove garlic, minced
1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
1 can (15.5 oz.) kidney beans, undrained
1 can (8 oz.) tomato sauce
1 can (4.5 oz.) chopped green chiles, undrained
1 pkg. (30 oz.) ORE-IDA Shredded Hash Brown Potatoes
1 cup KRAFT Shredded Cheddar Cheese

Steps:

  • Heat oven to 350°F.
  • Cook meat, onions, garlic and taco seasoning mix in large skillet sprayed with cooking spray on medium heat 10 min. or until meat is done, stirring frequently. Remove from heat.
  • Drain beans, reserving 1/4 cup of the liquid; set beans aside. Add reserved bean liquid to meat mixture along with the tomato sauce and chiles; mix well.
  • Spread half the meat mixture onto bottom of 13x9-inch baking dish sprayed with cooking spray; cover with layers of half each of the beans and potatoes. Repeat layers.
  • Bake 30 min. or until hot and bubbly. Sprinkle with cheese; bake 5 min. or until melted.

Nonstick cooking spray, for greasing the baking dish
6 large russet potatoes
Pinch salt
8 ounces sliced bacon
1 cup milk
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup (1/2 stick) unsalted butter
Pinch garlic salt
Pinch freshly ground black pepper
2 cups grated Cheddar

Steps:

  • Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
  • Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes. (If you do not have a pressure cooker, boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.)
  • While the potatoes boil, cook the bacon in a medium skillet over medium heat until browned and cooked through, 8 to 10 minutes. Drain the bacon on paper towels and, when cool enough to handle, crumble it into small pieces. Set aside.
  • Add the milk, mayonnaise, sour cream, butter, garlic salt, pepper and 1 cup of the cheese to a stand mixer with a paddle attachment. Whip the mixture until thoroughly combined. Drain the potatoes and add to the mixer. Mix again to combine and the potatoes are whipped smooth.
  • Spoon the mixture into the prepared baking dish. Sprinkle the crumbled bacon and remaining 1 cup cheese over the top and bake until the cheese is melted and the casserole is heated through, about 20 minutes.

2 cups coarsely broken tortilla chips
3/4 cup sour cream
4 medium green onions, sliced (1/4 cup)
1 medium tomato, chopped (3/4 cup)
1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
Whole tortilla chips, shredded lettuce and additional salsa, if desired

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in beans and 1 cup salsa. Heat to boiling, stirring occasionally.
  • In ungreased 2-quart casserole, place broken tortilla chips. Top with beef mixture. Spread with sour cream. Sprinkle with onions, tomato and cheese.

500 grams lean beef mince
1 medium onion, diced finely
4 large potatoes, thinly sliced
1 cup corn kernels
1 packet of taco seasoning
2 cups of grated mozzarella cheese
300g jar of salsa
Salt and pepper
Jalepenos
Guacamole
Sour cream
Shallots

Steps:

  • Preheat oven to 200 degrees celsius.
  • Thinly slice your potatoes and add to a large pot of salted boiling water for around 10 minutes to soften.
  • Add a tablespoon of oil to a large heated frying pan. Fry onion until soft, before adding the mince.
  • Once the mince is browned, stir in corn, then add taco seasoning and allow to simmer for 10 to 15 minutes (follow instructions on the taco seasoning jar).
  • Stir through salsa until well combined.
  • Layer softened potato slices along the bottom of a large casserole or baking dish and season with salt and pepper.
  • Add a layer of mozzarella cheese over the potatoes. Add the taco and salsa mince mixture on top.
  • Add a layer of mozzarella cheese on top.
  • Cover baking dish with aluminium foil and bake in the oven for around 35 minutes. Then remove foil, sprinkle with chopped shallots and bake for a further 15-20 minutes, or until cheese is browned.
  • Serve with guacamole and sour cream, or with a side salad. Enjoy!

3/4 lb bulk Italian sausage (or remove casings from links)
1 large onion, peeled and coarsely chopped
1/2 tsp minced garlic
2 tsp minced cilantro, or to taste
2 tsp minced parsley
1/2 tsp red pepper flakes, optional
2 packets taco seasoning, (McCormick has a gluten-free version)
1-1/2 cups water
Kosher salt and freshly ground black pepper, to taste
8 oz shredded cheese, such as a blend of Cheddar and Monterey Jack or Pepper Jack
28 oz bag frozen Potatoes O'Brien cubed potatoes (Ore-Ida brand is gluten-free)
Sliced green onions, for garnish

Steps:

  • Preheat oven to 400°F.
  • In a large skillet over medium-high heat, cook beef and sausage, breaking up large chunks with a wooden spatula, until browned, about 4 minutes. Strain the accumulated grease and discard. Add the onions, garlic, cilantro, oregano, and chili to the meat and cook until onions are softened, about 2 to 3 minutes. Sprinkle the taco seasoning over the top and stir to evenly distribute. Stir in the water and reduce the heat to low. Simmer, stirring occasionally, for about 5 minutes.
  • Pour meat mixture into a 9x13-inch baking pan. Sprinkle half of the cheese over the meat mixture. Top with potatoes, spreading into an even layer, and sprinkle lightly with salt and pepper.
  • Bake, uncovered, in the hot oven for 30 to 45 minutes or until the potatoes are heated through and lightly browned. The casserole should be bubbling in the center. Carefully remove from the oven, sprinkle remaining cheese over the top and pop back in the oven for about 5 minutes or until cheese is melted on top.
