This creamy crab chowder made with sauteed onions, celery, garlic, and parsley is one of my family's favorites.

2 tablespoons bacon grease
2 tablespoons butter
1 onion, finely chopped
1 stalk celery, finely chopped
1 tablespoon chopped fresh parsley
1 ½ cups chicken stock
1 quart heavy cream
½ teaspoon salt
½ teaspoon seasoned salt
⅛ teaspoon ground black pepper
⅛ teaspoon chili powder
⅛ teaspoon dried dill weed
1 pinch white sugar
1 pinch cayenne pepper
1 pound fresh crabmeat
2 tablespoons all-purpose flour
1 tablespoon water, or as needed
¼ cup dry sherry

Steps:

  • Heat bacon grease and butter in a large pot over medium-high heat. Saute onion, celery, and parsley until onion is browned, about 5 minutes. Reduce heat to medium and pour in stock. Slowly stir in cream, salt, seasoned salt, pepper, chili powder, dill, sugar, and cayenne pepper. Add crab and simmer until flavors combine, about 15 minutes.
  • Mix flour with water in a small bowl and pour into the soup. Stir to thicken slightly. Add sherry just before serving.

1/2 cup all-purpose flour
1 to 2 tablespoons seafood seasoning
1 teaspoon salt
1/2 teaspoon curry powder
4 cups milk
1 pound fresh crabmeat or 3 cans (6 ounces) crabmeat, drained, flaked and cartilage removed
2 tablespoons minced fresh parsley
Additional milk and parsley, optional

Steps:

  • Melt butter in a 3-qt. saucepan; stir in flour, seafood seasoning, salt and curry powder. Cook until thickened and bubbly. Gradually add milk; cook and stir until mixture is hot (do not boil). , Remove cartilage from crab if necessary. Add crab and parsley to soup; cook and stir just until crab is heated. If desired, thin soup with additional milk; garnish with parsley.

2 garlic cloves, minced

2 cups frozen shredded hash brown potatoes, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of asparagus soup, undiluted
2 cans (6 ounces each) lump crabmeat, drained
1 package (8 ounces) imitation crabmeat, chopped
1-1/2 cups frozen corn, thawed
1 tablespoon dried parsley flakes
1-1/2 teaspoons dill weed

  • In a large saucepan, saute onion in butter until tender. Add the broth, corn and potatoes; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Remove from the heat; cool slightly. , In a blender, puree half of the corn mixture. Return to pan. Stir in the crab, milk and pepper; cook over low heat until heated through (do not boil). 1 (1.25 ounce) envelope hollandaise sauce mix
4 cups half-and-half, divided
¼ cup butter
3 tablespoons Old Bay Seasoning TM
½ teaspoon dry mustard

1 cup whipping cream
1 tablespoon cooking sherry
1 pound fresh crabmeat

Steps:

  • In a medium bowl, blend flour and hollandaise sauce mix with 2 cups half-and-half.
  • Melt butter in a medium, heavy saucepan over medium heat. Slowly add hollandaise mixture, stirring constantly until thickened. Add remaining half-and-half, Old Bay, dry mustard, celery seed, and whipping cream. Bring to a simmer and reduce heat to low. Add crabmeat and sherry, stirring gently until warmed through. 1 pound Maryland jumbo lump crab meat, divided
1 pint milk
1 quart half and half
2 pints heavy whipping cream
1 tablespoon fresh parsley, chopped
3 teaspoons Old Bay Seasoning, divided
1/4 cup butter
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon cornstarch, plus more if needed to make a paste
cold water or cornstarch to make a cornstarch paste

Steps:

  • Prepare the lump crab meat by gently picking pick through to remove as much cartilage as you can find. Try to preserve as much of the lumpy texture as you can. A small side bowl of room temperature water will help to get the cartilage off your fingers as you work. Discard cartilage. Set crab meat aside. Bring milk, half and half, and heavy whipping cream to a boil. Add 1/3 crab meat, fresh parsley, 1 teaspoon Old Bay Seasoning, butter, salt, and pepper. When it starts to boil, make a paste of cornstarch, and cold water, tap or otherwise, or cold chicken stock. Start by added the cornstarch to a small bowl and slowly whisking in the liquid until a paste forms. Whisk the paste into the soup to prevent lumps and whisk until the soup has thickened. If lumps do form continue whisking until they have been whisked out. Add another 1/3 of the crab meat, stirring gently to preserve the lumps of the lump crab meat, just until crab is heated through. Soup should be fairly thick. Garnish with remaining crab and a dash of remaining Old Bay.

1 small onion, finely diced
1 tablespoon dry mustard

1 lb crabmeat (picked over for shells)

  • Decrease heat to low, cook, stirring often until potatoes are barely tender (30 minutes). Remove from heat.
  • Whisk in flour, salt and pepper. Return to medium heat and stir constantly about 2 minutes.
  • Slowly pour in half and half and milk, stirring constantly.
  • Cook over med-low heat, stirring often until thickened.
  • Add the crabmeat, simmer about 15-20 minutes.
  • When ready to serve, stir in sherry and parsley.

chopped parsley

  • Dissolve bouillon cube in water.

I make this with one cup grated onion sauteed in the butter until very soft to start, before adding the milk and cream, but I didn't want to add that below as this is the original recipe.

Steps:

  • Bring milk, half and half, and heavy whipping cream to a boil. Add crab meat, fresh parsley, Old Bay Seasoning, butter, salt and pepper. When it starts to boil, make a paste of cornstarch and water and add to thicken soup.

1 1/4 pints fish stock (or chicken)
2 eggs, hard boiled
5/8 pint single cream
5/8 pint milk

3 tablespoons pale dry sherry
3 tablespoons lime juice
1 dash Angostura bitters

Steps:

  • Melt butter over moderate heat in large saucepan.
  • When butter bubbles,add flour & mix thoroughly.
  • Pour in a6 Tblsp of stock.
  • cook over high heat, stirring constantly, until sauce thickens & comes to the boil.
  • Reduce heat to low & simmer for 3 mins to cook flour.
  • Stir in finely mashed eggs, rest of stock,cream, milk,salt & pepper.
  • Bring to booil over high heat, still stirring.
  • Reduce heat to moderate and add sherry, crabmeat, lime juice & bitters.
  • cook for 2 - 3 mins more to heat crabmeat through.
  • Taste for seasoning.

1 onion, chopped
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 can (14.5 oz.) fat-free reduced-sodium chicken broth
1 can (13.5 oz.) lite coconut milk
1 jalapeño pepper
1 can (6 oz.) crabmeat, drained, flaked
2 Tbsp. chopped fresh parsley
1 can (11 oz.) corn with red and green bell peppers, drained
2 Tbsp. chopped fresh cilantro
1 lime, cut into wedges

Steps:

  • Heat dressing in medium saucepan on medium-high heat. Add onions; cook 5 min. or until crisp-tender, stirring frequently. Add cream cheese; cook until completely melted, stirring constantly. Stir in broth and coconut milk.

Like the sound of this variation of classic crab soup (something we love here) - the milk rather than cream will lighten it up a bit & the curry provides a nice complement to the crab. Of course we'll be using our "home grown" blue crab (- the best in the world IMAO LOL!) so I will be stashing this recipe to try later in the year when our own crabs are plentiful & heavy (so the picking won't be so arduous). 4 tablespoons dry sherry

Steps:

  • 5 Tbs. butter.
  • 4 Tbs flour.
  • 1 medium onion peeled and chopped.
  • 3 stalks of celery chopped.
  • 1 1/2 Tbs mild yellow curry powder.
  • 1 Tbs dried minced shallots or 2 Tbs fresh shallots peeled and minced.
  • 1 cup heavy cream.
  • 2 cups milk.
  • 2 cups chicken or vegetable stock.
  • juice of half a lemon.
  • 1 lb fresh crab meat (preferably half shreds and half lump or claw meat).
  • salt and pepper to taste.
  • 4 Tbs dry sherry.
  • Make a roux by melting 3 Tbs butter in a large sauce pan. Add the flour and cook over medium heat stirring constantly until it just begins to brown a little. Do not let it burn.
  • Add the other 2 Tbs of butter and the chopped celery and onions and fresh shallots (if using them) and continue to stir and cook until the vegetables are wilted (about 5 minutes). Add the curry powder, stir and cook for a minute more. Lower the heat.
  • Meanwhile heat the cream, milk and stock in another pan. If using dried shallots add them to to the liquid and bring to a low simmer. Do not let it come to a full boil or it may curdle.
  • Pour the hot liquid into the roux slowly stirring constantly as you pour. Raise the heat to medium and continue to stir while it thickens and comes to a simmer. Again do not boil. Simmer 10 minutes.
  • Add the lemon juice and crab meat meat and continue to heat and stir until it again is simmering. Taste and add salt and pepper if you think it needs it.
  • Pour into bowls and top each bowl with a spoonful of sherry. Serve hot.

3 tablespoons minced garlic
2 heads bok choy, chopped
1 (15 ounce) can corn, undrained
2 (10 ounce) cans baby clams, undrained
1 (8 ounce) bottle clam juice
1 (14.5 ounce) can diced tomatoes
2 cups water
1 cube vegetable bouillon
1 ½ cups couscous
1 (4.25 ounce) can crabmeat
1 cup heavy cream
¼ cup lime juice
1 cup red wine
2 teaspoons garlic salt
1 teaspoon ground black pepper

Steps:

  • Melt the butter in a large pot over high heat. Cook the garlic and bok choy in the butter until soft, about 5 minutes. Add the corn, clams, clam juice, diced tomatoes, water, vegetable bouillon, and couscous. Bring to a boil, lower heat to medium-low, and add the crabmeat, cream, lime juice, red wine, garlic salt, and black pepper. Allow the mixture to simmer together until heated through, about 30 minutes.
