ROASTED COD WITH PANCETTA & PEA MASH

This quick cod recipe looks a bit posh for dinner parties, but is really quick and simple

4 thick pieces of cod fillet, about 120g each, from sustainable sources
8 thin slices of higher-welfare pancetta
2 lemons
500 g potatoes
300 g frozen garden peas
½ a fresh red chilli, (optional)
1 small knob of butter
1 splash of milk
½ a bunch of fresh mint, (15g)
60 g rocket
extra virgin olive oil

Steps:

  • Preheat your oven to 200°C/400°F/gas 6.
  • Season the cod with sea salt and black pepper, place on an oiled baking tray and lay two slices of pancetta over the top of each fillet.
  • Halve the lemons and place the four lemon halves, cut side down, on the tray next to the fish. Roast in the preheated oven for 10 to 15 minutes, or until the fish flakes easily.
  • Peel and quarter the potatoes and cook until soft in boiling salted water. Meanwhile, cook the peas to packet instructions, then drain and blitz the peas in a food processor (or mash up with a fork if you don't have one).
  • Deseed and finely dice the red chilli, if using.
  • Drain the potatoes and mash with butter, hot milk, salt and pepper, whizzed-up peas and the red chilli if using.
  • Put the rocket in a mixing bowl, pick in the mint leaves and toss together and dress with extra virgin olive oil.
  • Serve each piece of cod on a dollop of pea and potato mash, with a little salad on the side.

Number Of Ingredients 9

2 lemons
12 tablespoons unsalted butter
1 slice brioche bread, crusts removed and diced into 1/4-inch pieces (about 1/2 cup)
2 cod fillets, about 1/2-inch thick
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
2 tablespoons capers
2 tablespoons white wine
1/4 cup fresh parsley, finely chopped

Steps:

  • Cut the peels from the lemons, revealing the flesh. Cut the segments free from the membranes, then dice and place in a bowl. Squeeze any remaining juice from the membranes into the bowl. Set aside.
  • Heat a large nonstick pan over medium-high heat. Add 4 tablespoons butter and begin to cook, stirring, until the butter begins to brown. Add the brioche, then reduce the heat to medium-low and cook, continually tossing and swirling the brioche until evenly toasted, about 4 minutes. Remove the croutons to a plate and let cool. Wipe out the pan.
  • Sprinkle the fish with salt and pepper. Heat the same pan over medium-high heat. Add 4 tablespoons butter and the oil and begin to cook over the heat, stirring. Add the fish and cook, 2 to 3 minutes. Flip the fish and continue to cook, basting occasionally with the butter from the pan, another 2 to 3 minutes. Remove the fish to a plate. Wipe out the pan.
  • Turn the pan to medium heat and add the remaining 4 tablespoons butter. Let melt, then add the capers and cook for 1 to 2 minutes. Continue to cook until the butter browns, then add the wine, lemon juice and segments and parsley. Swirl together. Spoon the sauce over the fish and garnish with the croutons.

This wonderfully hearty seafood supper is packed with wintry flavours, perfect with mild, meaty cod. If you can't get dried borlotti beans, just use the equivalent amount of tinned, drained beans.

400 g dried borlotti beans, or 1 x 400g tin of borlotti beans
2 red peppers
3 cloves of garlic
250 g kale
½ a bunch of fresh flat-leaf parsley
200 g coarse breadcrumbs
1 tablespoon smoked paprika
olive oil
15 thin slices jamón ibérico or prosciutto
900 g rectangular-shaped fillet of cod, skin off and pin-boned boned, from sustainable sources
4 fresh bay leaves

Steps:

  • If using dried, soaked borlotti beans, drain them in a colander and place in a large saucepan. Cover with cold water and bring to the boil over a medium heat. Lower the heat, cover and simmer for 40 minutes, until tender (skip this step if using tinned beans, as they're already cooked.)
  • Preheat the oven to 220ºC/gas 7.
  • Drain the beans in a colander, tip into a bowl and cover. Place the red peppers on a baking tray and roast for 30 minutes, or until tender and the skins have blackened.
  • Remove from the oven and place in a sealable bag. Shake for a bit, then leave for 5 minutes or until the bag is filled with steam. Tip the peppers onto a wooden board and remove the skins and seeds with your fingers or a knife. Roughly chop the peppers and place in a bowl; set aside. Lower the oven to 200ºC/gas 6.
  • Peel and finely chop the garlic cloves, pick and finely chop the parsley and roughly chop the kale.
  • Using a pestle and mortar, pound the breadcrumbs, garlic, parsley and half of the paprika for a few minutes. Transfer to a bowl, add 2 tablespoons of oil and season generously.
  • Arrange the jamón slices on a large wooden board so that they overlap, then place your cod in the middle.
  • Spoon the breadcrumb mixture along the length of the cod on each side, then fold the meat slices over the top, creating a log-shaped parcel. Tie up tightly with string, tucking a bay leaf under each knot.
  • Transfer to a lightly oiled baking tin and drizzle with a little olive oil. Roast for 30 minutes, or until the cod is cooked and the jamón is crisping up.
  • Meanwhile, heat 2 tablespoons of oil in a saucepan over a medium heat. Add the borlotti beans, peppers and kale. Season and add the rest of the paprika. Lower the heat and simmer, stirring occasionally, for 12 to 15 minutes, then transfer to a platter.
  • Place the cod parcel on top and serve immediately, cutting the cod into thick slices with a sharp knife.
