JAMIE'S MEAT LOAF

I wanted something different tonight so I made this recipe up for our Meat loaf. I am sure no one has it cause I did not see it in a book or on the internet just thought of the things I like that are good and put it together. Hope you agree it is moist, juicy and good tasting.

Number Of Ingredients 12

1 lb ground beef
1/2 lb i used jimmy deans sausage
1/2 c diced bell pepper
1/2 c diced sweet onion
2 egg
3 clove fresh pressed garlic
1 Tbsp salt
2 tsp ground black pepper
1 can(s) 10oz. ro tel diced tomatoes and green chili
1 can(s) 8oz. tomatoe sauce
1/2 c enchilada sauce
1 c panko bread crumbs

Steps:

  • 1. In large mixing bowl mix together the ground beef and the sausage well.
  • 2. Make a well in the center. Beat the two egg and pour in the well.
  • 3. mix the ro tel, tomatoe sauce and enchilada sauce together and pour in.
  • 4. Add all the remaining ingredients and mix well. Bake in a deep baking dish or loaf pan. 1hr and 10 min or until done on 350 degrees in oven. At the end spoon some enchilada sauce on top and heat about 5 minutes longer.

  • Preheat oven to 325 degrees and prep a 9-by-13 Pyrex dish with non-stick spray. In a large sauté pan, cook the onions and peppers with salt, pepper and thyme until onions are translucent (about 5 minutes). Next, add garlic, soy sauce, chicken broth and tomato paste, mixing until heated through. Set aside to cool.
  • In a large bowl, combine ground turkey, egg whites, oats and sautéed mixture (cooled). Mix by hand until all incorporated and press flat into the 9-by-13 prepared Pyrex dish.
  • Spread ketchup in an even layer on top of the prepared turkey and place in the oven to bake for 1 hour and 20 minutes.
