EASY CARBONARA



Easy carbonara image

This easy pasta sauce will cook in about the same time it takes to cook some dried pasta in boiling salted water - we're talking about quick and easy options here. These amounts serve 2 but are easy to scale up or down. Remember you want about 75g of dried pasta per person - use whatever shape you've got. Or, check out my super-simple method for fresh pasta, using just flour and water.

150 g dried spaghetti
2 rashers of higher-welfare smoked streaky bacon
olive oil
2 free-range eggs
30 g Parmesan cheese, plus extra for grating

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions.
  • Slice the bacon and place in a non-stick frying pan on a medium heat with half a tablespoon of olive oil and a really good pinch of black pepper. Leave it to get super-golden and crispy, tossing occasionally, then turn off the heat.
  • Meanwhile, beat the eggs in a bowl, then finely grate in the Parmesan and mix well.
  • Use tongs to transfer your pasta straight into the pan and toss with the bacon.
  • Pour the Parmesan eggs into the pan, and keep everything moving, loosening with splashes of the pasta cooking water until you have a silky sauce. Make sure the pan isn't too hot otherwise the eggs will scramble.
  • Plate up the pasta, and finish with an extra grating of Parmesan.

Just a handful of ingredients makes a fantastic carbonara and, done properly, it's a thing of beauty.

3 large free-range egg yolks
40 g Parmesan cheese, plus extra to serve
1 x 150 g piece of higher-welfare pancetta
200 g dried spaghetti
1 clove of garlic
extra virgin olive oil

Steps:

  • Put the egg yolks into a bowl, finely grate in the Parmesan, season with pepper, then mix well with a fork and put to one side.
  • Cut any hard skin off the pancetta and set aside, then chop the meat.
  • Cook the spaghetti in a large pan of boiling salted water until al dente.
  • Meanwhile, rub the pancetta skin, if you have any, all over the base of a medium frying pan (this will add fantastic flavour, or use 1 tablespoon of oil instead), then place over a medium-high heat.
  • Peel the garlic, then crush with the palm of your hand, add it to the pan and leave it to flavour the fat for 1 minute. Stir in the pancetta, then cook for 4 minutes, or until it starts to crisp up.
  • Pick out and discard the garlic from the pan, then, reserving some of the cooking water, drain and add the spaghetti. Toss well over the heat so it really soaks up all that lovely flavour, then remove the pan from the heat.
  • Add a splash of the cooking water and toss well, season with pepper, then pour in the egg mixture - the pan will help to cook the egg gently, rather than scrambling it. Toss well, adding more cooking water until it's lovely and glossy.
  • Serve with a grating of Parmesan and an extra twist of pepper.

150 g dried tagliatelle
3 sausages
½ a bunch of fresh flat-leaf parsley (15g)
1 large egg
30 g Parmesan cheese

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions, then drain, reserving a mugful of cooking water.
  • Meanwhile, squeeze the sausagemeat out of the skins, then, with wet hands, quickly shape into 18 even-sized balls.
  • Roll and coat them in black pepper, then cook in a non- stick frying pan on a medium heat with ½ a tablespoon of olive oil until golden and cooked through, tossing regularly, then turn the heat off.
  • Finely chop the parsley, stalks and all, beat it with the egg and a splash of pasta cooking water, then finely grate and mix in most of the Parmesan.
  • Toss the drained pasta into the sausage pan, pour in the egg mixture, and toss for 1 minute off the heat (the egg will gently cook in the residual heat).
  • Loosen with a good splash of reserved cooking water, season to perfection with sea salt and pepper, and finely grate over the remaining Parmesan.

Posted in response to a query about the best way to prepare carbonara. I use Jamie Olivers recipe for Penne Carbonara, which is in "Happy Days With The Naked Chef". This is another of his recipes, using the same technique with slightly different ingredients. I have always found Jamies recipes to be simple and easy to prepare, I enjoy his cheerful approach to cooking! Hope that you enjoy it!

455 g farfalle pasta (bowtie pasta)
1 egg
100 ml double cream
sea salt
fresh ground black pepper
12 slices pancetta or 12 slices smoked streaky bacon, roughly sliced
1 cup fresh peas or 1 cup frozen peas
2 sprigs of fresh mint, leaves picked
freshly grated parmesan cheese

Steps:

  • Bring a large pan of salted water to the boil, add the farfalle, and cook according to the packet instructions.
  • Whisk the egg in a bowl with the cream, salt and pepper.
  • Put the pancetta or bacon into a second pan and cook until crispy and golden.
  • When the farfalle is nearly cooked, add the peas for the last minute and a half. This way they will burst in your mouth and be lovely and sweet.
  • When cooked, drain in a colander, saving a little of the cooking water.
  • Add the pasta to the pancetta and stir in most of the mint, finely sliced - if the pan isn't big enough, mix it all together in a large warmed bowl.
  • Now add the egg and cream mix to the pasta. What's important here is that you add it while the pasta is still hot. This way, the residual heat of the pasta will cook the eggs, but not so that they resemble scrambled eggs.
  • The pasta will actually cook the egg enough to give you a silky smooth sauce.
  • Toss together and loosen with a little of the reserved cooking water if necessary.
  • Season with salt and pepper, sprinkle with the Parmesan and the rest of the mint leaves, and serve as soon as possible.

FRESH TAGLIATELLE WITH SPROUTING BROCCOLI AND OOZY CHEESE SAUCE



Fresh Tagliatelle with Sprouting Broccoli and Oozy Cheese Sauce image

The hero of this dish (apart from the eggs, of course!) is fontina, a delicious Italian mountain cheese used for melting, available in good cheese shops and delis. But any combination of Parmesan, pecorino, taleggio or Gruyere cheeses will also work well.

4 large free-range or organic eggs
2 cups pasta flour, plus extra for dusting
Sea salt
1 cup creme fraiche
5 ounces sliced fontina or other nice melting cheese
5 ounces freshly grated Parmesan
Sea salt and freshly ground black pepper
1 pound purple sprouting broccoli
2 large free-range or organic egg yolks
1 small bunch fresh marjoram, oregano or thyme tips, leaves picked
Freshly grated Parmesan, for serving
Extra-virgin olive oil

Steps:

  • You can buy ready-made dried or fresh tagliatelle, but this is a really quick way to make your own.
  • Crack the eggs into a food processor and add the flour. Whiz it up and listen for the sound changing to a rumble - this means the dough is coming together nicely. Turn the power off and test the consistency by pinching the dough. If it's a bit sticky add a little more flour and pulse again.
  • Tip the dough mixture onto a floured surface and shape it into a ball using your hands. Give it a little knead until smooth, then divide your dough into 4 equal parts. Start on the thickest setting of your pasta machine and run the first bit of dough through 4 or 5 times, moving the rollers closer together each time until the pasta is silky, smooth and about as thick as a CD. Flour your finished sheet generously, then fold it up and cut across into 1/2-inch strips. Gather all the slices together and toss them through your fingers, with a little flour, to open them up and make your pile of tagliatelle. Place to 1 side and repeat with the rest of the dough.
  • Bring a large pan of salted water to the boil. In a bowl large enough to rest on top of the pan, put your creme fraiche, fontina or other melting cheese and your Parmesan with a pinch of salt and pepper. Place the bowl over the pan for the cheeses to slowly melt. It won't take long. Meanwhile, trim any dry ends off the broccoli, then finely slice the stalks diagonally and leave the florets whole (cutting any larger ones in half).
  • At this point the cheese sauce should be lovely and oozy, so remove the bowl from above the pan and drop the pasta and broccoli into the boiling water. Boil hard for 2 to 3 minutes, until the pasta is just cooked through. Whip up the 2 egg yolks and the marjoram, or other chosen herb leaves, into the sauce. Drain the pasta and broccoli, reserving a little of the cooking water, and quickly toss them with the sauce - the heat from the pasta will be enough to cook the eggs through. If the sauce is a little thick, add a few splashes of cooking water to make it silky and loose. Taste and season, if necessary. Serve as quickly as you can, with some extra Parmesan sprinkled over the top and a drizzle of extra-virgin olive oil. Grand!

A good pinch saffron
1 glass white wine
Olive oil
1 large garlic clove, finely chopped
1 pound dried tagliatelle
1 1/2 pounds (680 grams) mixed seafood (red mullet, scallops, clams, debearded mussels, squid)
1/2 pint double cream (heavy cream)
Salt and freshly ground black pepper
A bunch flat parsley, chopped

Steps:

  • Soak the saffron in the white wine. Add a little oil and the garlic to a frying pan, and cook until softened. Add the clams and mussels, shake the pan around, and add the white wine and saffron mixture. Bring to a boil and cook until the shellfish opens, discard any shellfish that remain closed.
  • Then, lay the rest of the seafood, parsley, and the cream on top. Simmer for 3 to 4 minutes and season to taste. Cook the tagliatelle in salted, boiling water until al dente. Drain and add to the fish, serve scattered with some of the leftover parsley and an extra drizzle of olive oil.

A lovely pasta dish from Jamie Oliver. The cognac gives the sauce a nice touch. You may flame the sauce if you wish, but it is also nice without the flaming. There are three variants at the end of the directions.

8 plum tomatoes
sea salt
fresh ground black pepper
4 tablespoons butter
4 tablespoons extra virgin olive oil
300 g prawns (small ones, peeled) or 300 g shrimp (10 1/2oz)
1 garlic clove, peeled and finely chopped
1 lemon (zest and juice)
cognac (or Vecchia Romana, 2 shot glasses)
150 ml double cream (5 1/2floz)
400 g tagliatelle pasta noodles (dried or fresh, 14oz)
1/3 cup parsley, roughly chopped

Steps:

  • Blanch and skin the tomatoes (score tomatoes with one or more criss cross, plunge into boiling water for ca 30s until skin begins to peel away, cool in cold water, remove skin).
  • Half tomatoes and chop into small pieces.
  • Put a pan of salted water on to heat for the pasta.
  • Put the butter and olive oil in a second pan, and fry the prawns, garlic, lemon zest and tomatoes for a couple of minutes.
  • Add the booze and allow to flame if you like. If you want to flame it, it helps when the booze is warm. The flame should go out after about 30seconds, so don't worry.
  • Add the cream, allow to simmer gently for a couple more minutes and then remove the pan from the heat.
  • Season the sauce carefully.
  • Put the pasta into the boiling water - fresh will need only 3 minutes and dried will need to be cooked according to the packet instructions.
  • If your sauce has cooled down then reheat it now.
  • When the pasta is cooked, drain it in a colander and then toss with the parsley in the pan in which it was cooked.
  • Check the seasoning, then divide on to your serving plates with the sauce on top.
  • Serve straight away, telling your guests to stir the pasta up in their bowl every so often to keep the pasta moist.

  • Crumble over a little ricotta or feta cheese - just a little bit - both of these cheeses have a nice texture, go really well with prawns and make it look great.

  • A handful of spinach added at the end gives a nice vibe - the heat will wilt it into the sauce.

  • You can use tinned tomatoes for this dish but you won't get the freshness or lightness you get from fresh tomatoes.
