POTATO WEDGES
These chunky, peppery golden potato wedges are always a winner at parties and barbecues

Steps:
- To prepare and cook your potato wedges: Preheat your oven to 200˚C/400˚F/gas 6. Put a large pan of salted water on to boil.
- Scrub the potatoes clean and get rid of any gnarly bits. Cut the potatoes into chunky wedges. Add to the pan of boiling water and parboil for 8 minutes. Drain in a colander and leave to steam dry for a couple of minutes.
- Transfer to a roasting tray and add a good lug of olive oil and a pinch of salt and pepper. Toss together so all the wedges are coated in the oil then spread out in one layer. Cook in the hot oven for 30 minutes until golden, crisp and cooked through. Delicious served with steak or chicken.

JAMIE'S 30 MINUTE BEEF HASH & JACKET POTATOES

Steps:
- Put the grill on high and stick a baking tray under it to heat up. Wash the potatoes and stab a few times, put in a bowl and cover with cling film. Microwave for 14-16 minutes.
- Put the mince in a hot frying pan along with a dash of olive oil, thyme leaves and seasoning. Fry and stir, browning all over. Meanwhile slice up the bacon and fry gently in another pan.
- When the mince has browned, coat with the Worcestershire sauce and add the garlic and half the rosemary leaves. Put the onion, celery and carrot into a food processor and get them sliced up, then add to the mince. Stir frequently.
- When the bacon is golden, add the beans (with their juice) and tomatoes to the pan and simmer away.
- The potatoes will be done but make sure by sticking a knife into one to make sure it is soft. If they are, drizzle with olive oil, the rest of the rosemary and some salt and pepper. Toss to coat then pop under the grill to crisp up.
- Place the salad leaves in a bowl.
MINI JACKET POTATOES

- Heat oven to 190C/170C fan/gas 5. Prick the potatoes with a fork, rub with the oil, then toss with sea salt. Arrange on a baking sheet and bake for 1 hr. Let the potatoes cool for 10-15 mins, then cut a small cross in the top of each and pinch the bases to open a little. Add a teaspoon of soured cream to each, a little freshly ground black pepper, and a sprinkling of chives. Serve straightway.

STUFFED JACKET POTATOES

Steps:
- Equipment you will need: medium mixing bowl, small mixing bowl, dessertspoon, fork, baking tray, grater, oven gloves.
- Get an adult to heat the oven to 200C/180C fan/gas 6 and bake the potatoes for about 1 hr until cooked and the skins are crispy. Leave to cool completely. This can be done up to 2 days ahead.
- To stuff the jacket potatoes, heat the oven to 200C/180C fan/gas 6. Ask an adult to cut the potatoes in half. Using a spoon, carefully scoop out the middle of the potato, leaving the skin unbroken (like a boat). Place the scooped potato into a mixing bowl.
- Using the fork, mash the potato until there are no lumps. Add the cheese, sweetcorn and peppers and mix well. Gently pick the leaves from the herbs. You can rip the larger leaves into smaller pieces. Stir the herbs into the cheesy potato mixture.
- Using the spoon, carefully scoop the mixture back into the potato boats. Make sure that you use all the mixture up. Sprinkle with a little extra grated cheese and place on a baking tray. Using oven gloves, place the tray in the oven and bake for 10-15 mins until golden.
