JAMES BEARD'S ROASTED SPARERIBS
These ribs have the rich flavor of pork, which you can really taste, and they are also very tender and moist. Who needs all that BBQ sauce? If you can, get baby back ribs - they're best - but any pork spareribs will do.

Steps:
- Preheat oven to 350°F.
- Preparing and Roasting the Ribs
- Rub the ribs with salt and pepper on both sides.
- Set a roasting or broiler rack in a roasting pan. Arrange the ribs on the rack, meaty side facing up.
- Put the pan on the center rack of the oven and bake for 30 minutes. Using a pair of tongs, turn the ribs over, and cook for another 30 minutes.
- When the second 30 minutes are up, the ribs should be nicely browned and fairly crisp on the outside. If not, roast for another 10 minutes and check again.
- Cutting and Serving the Ribs
- When you are serving the ribs, cut the rack into separate racks of 3 or 4 ribs per person and place on a platter or plates. Serve hot.
STICKY GLAZED RIBS

Steps:
- Heat oven to 160C/140C fan/ gas 3. Place the ribs in a large bowl, then toss with the spice mix so they're covered all over. Place a wire rack in a roasting pan and arrange the ribs in a layer, then cook for 1 hour, until browned and tender.
- Meanwhile, to make the glaze, place the ketchups, soy sauce, honey, teriyaki and whiskey, if using, into a pan, stir well and bring the mixture to a simmer. Simmer for 5 mins until thickened and sticky, then remove from the heat.
- When the ribs are done, remove from the oven and increase the heat to 200C/180C fan/ gas 6. Using a pair of tongs, dip each rib in the glaze, then return to the rack. Place back in the oven and cook for 10 mins. Remove from oven, dip into the glaze again, then return to the oven for another 10-12 mins until sticky. Serve hot with the autumn slaw (see below), chips if you want, and a big pile of napkins.

BARBECUE BABY BACK RIBS WITH CELERIAC SLAW - COOKED

- Place the ribs into a large, wide saucepan, add the celery, onion, chillies, garlic and apple juice, then pour in enough water just to cover. Bring to the boil, then reduce the heat and simmer very gently for 1–1½ hours until tender, skimming off any scum from time to time.
- Meanwhile, make the sauce. Heat a frying pan until hot, add the ketchup and muscovado sugar and cook for two or three minutes until it liquefies. Add the Worcestershire sauce, smoked paprikas and vinegar.
- To make the slaw, whisk together the egg yolks, mustard and vinegar in a bowl or small processor. Still whisking, start adding the oil in a very thin trickle to make a mayonnaise; the mixture should be thick and light once the oils are incorporated.
- Pour into a bowl, then stir in the celeriac and parsley and mix well. Season with salt and pepper.
- Lift the ribs out of the poaching liquor and place on a tray, then brush with the sauce on all sides. Roast the oven for 10–15 minutes, until charred around the edges and sticky, turning occasionally.
