30-minute keto jambalaya with cauliflower rice is a healthy version of the classic, with just as much flavor. This low carb jambalaya recipe makes an easy one-pot keto meal.

2 tbsp Olive oil
1 lb Andouille sausage ((sliced thinly))
2 large Bell peppers ((diced; I used red and green))
1/2 large Onion ((diced))
1/2 cup Celery ((diced))
4 cloves Garlic ((minced))
1 lb Large shrimp ((peeled and deveined, thawed if frozen))
2 lb Cauliflower rice ((fresh or frozen))
1 14.5-oz can Diced tomatoes ((drained))
1/4 cup Chicken bone broth
2 tbsp Cajun seasoning ((start with 1 tbsp if you don't want spicy))
1 tsp Sea salt ((to taste))
Green onions ((sliced; optional, for garnish))
Fresh parsley ((chopped; optional, for garnish))

Steps:

  • Heat the oil in a large dutch oven over medium heat. Add the bell peppers, onions, and celery. Saute for 5-8 minutes, until the vegetables are soft.
  • Add the sliced sausage. Saute for about 5 minutes, until browned.
  • Make a well in the center and add the minced garlic. Let it sizzle for about 30 seconds, until fragrant, then stir in with everything else.
  • Add the cauliflower rice, diced tomatoes, bone broth, and Cajun seasoning. Stir together, then add the shrimp. Increase heat to high to bring to a simmer, then continue to simmer uncovered, stirring occasionally, until the cauliflower is tender, shrimp is cooked through, and liquid is reduced, about 5-7 minutes. It will release more liquid at first and then reduce in volume again as it simmers more.
  • Season with salt to taste, and/or more Cajun seasoning if you like. If desired, garnish with green onions and parsley.

2 tbsp olive oil
6 skinless boneless chicken thighs fillets, chopped
200g cooking chorizo , sliced
2 onions , finely sliced
4 garlic cloves , crushed
2 red peppers , sliced
2 celery sticks , chopped
1 tsp fresh thyme leaves
1 tsp dried oregano
½ tsp garlic salt
1 tsp smoked paprika
1 tsp cayenne pepper
½ tsp mustard powder
pinch of white pepper
300g long-grain rice
400g can cherry tomatoes
300ml chicken stock
12 large raw tiger prawns (whole in their shells)
12 mussels , cleaned and de-bearded
24 clams
½ small pack parsley , chopped
4 spring onions , sliced on a diagonal

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Heat the oil in a heavy-based flameproof casserole dish on a medium-high heat. Season the chicken thighs, add to the dish and cook for 4 mins until they start to brown, stirring occasionally so they don't stick. Add the chorizo and cook for a further 4 mins until it releases its oils and has started to crisp. Remove the meat with a slotted spoon and set aside on a plate.
  • Add the onions to the chorizo oils, lower the heat and soften for 8 mins. Stir through the garlic, peppers, celery, thyme and oregano, and cook for 2 mins more.
  • Return the meat to the dish, add the garlic salt, paprika, cayenne, mustard powder and white pepper, and cook for 2 mins until fragrant. Stir in the rice, then the tomatoes. Add the stock and give it all a really good stir. Bring to the boil, then cover with a well-fitting lid and put in the oven for 20 mins.
  • Take from the oven and fluff up the rice with a big fork. Fold through the prawns, then put the mussels and clams on top. Put the lid on, return to the oven for 10 mins, then take the dish out and give everything a good stir. Sprinkle with the parsley and spring onions to serve.

1/4 teaspoon dried thyme
1/8 teaspoon each cayenne pepper, chili powder and pepper
1 bay leaf

Steps:

  • In a large skillet, cook the ham, onion and garlic in oil until onion is tender. Stir in the broth, tomatoes, parsley and seasonings. Bring to a boil. Stir in rice. Reduce heat; cover and simmer for 15 minutes. Add shrimp; cook 5 minutes longer or until the shrimp turn pink and rice is tender. Discard bay leaf.

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. In 3-quart saucepan, cook bacon over medium-high heat 5 minutes, stirring frequently, until crisp. Remove bacon from saucepan; drain on paper towel.
  • To drippings in saucepan, add celery, bell pepper and onions; cook over medium heat 5 minutes, stirring occasionally, until vegetables are tender. ½ cup butter
1 large onion, diced
1 large green bell pepper, chopped
4 stalks celery, chopped

4 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in large stock pot. Saute onion, green pepper, celery and garlic until tender, being careful not to burn the garlic. Add tomato paste and cook to brown slightly, stirring constantly. Stir in bay leaves, Creole seasoning blend and Worcestershire sauce. Pour into a large roasting pan. Squeeze tomatoes to break up into pieces, and add to mixture in pan. Stir in juice from tomatoes, chicken stock, ham, sausage, chicken, shrimp and rice. Mix well. Cover tightly with aluminum foil.
  • Bake in preheated oven for 1 1/2 hours, stirring once halfway through baking time. Remove bay leaves before serving.

1 lb diced smoke sausage
1/2 lb peeled cooked shrimp
6 c milk
2 c quick cooking grits
1 c cheddar cheese, shredded
1/4 c sliced green onions (for garnish)

Steps:

  • 1. Saute onions, bell pepper, celery, Rotel and minced garlic until soft.
  • 2. Add sausage and shrimp. Saute until most of the natural juices are gone.
  • 3. Add milk.
  • 4. Add salt, pepper, and red pepper.
  • 5. Add grits.
  • 6. Cook on medium heat and stir until thick and creamy.
  • 7. Pour into buttered 9x13 casserole dish.
  • 8. Bake at 350 degrees for 20 minutes.
  • 9. Remove from oven. Top with grated cheese. Set back in oven until cheese melts (about 5 minutes).
  • 10. Then remove from oven and sprinkle with green onions.

3 tablespoons olive oil
1 pound large raw shrimp, peeled and deveined
6 teaspoons Cajun seasoning
12 ounces boneless, skinless chicken breasts, cut into 1-inch pieces
1 pound andouille sausage, cut into 1/2-inch slices
1/2 cup chopped yellow onion (from 1 small onion)
1/2 cup chopped green bell pepper (from 1 bell pepper)
1 tablespoon minced fresh garlic (about 3 garlic cloves)
1/2 cup chicken stock
1 (14.5-ounce) can diced tomatoes, undrained
1 tablespoon fresh thyme leaves
1/2 cup heavy cream
1 ounce fresh Parmesan cheese, grated with a rasp grater (about 2/3 cup)
2 tablespoons chopped fresh basil

  • Cook the pasta in salted water according to the package directions until al dente. Drain the pasta, reserving 1 cup cooking water; keep warm.

1 tablespoon kosher salt
1 tablespoon sweet paprika
1 tablespoon garlic powder
1 tablespoon ground black pepper
1-1/2 teaspoons ground thyme
1 teaspoon onion powder
3/4 teaspoon ground oregano
3 boneless, skinless chicken breasts
12 ounces bacon
1 medium yellow onion
1 green bell pepper
1 celery stalk
1 pound Andouille sausage
1 tablespoon tomato paste
1 (14-1/2 ounce) can petite cut diced tomatoes
2 bay leaves
1-1/2 cups white wine
3 cups chicken broth
1 cup long grain white rice
2 (15-ounce) cans red beans, rinsed and drained
1/2 cup dry breadcrumbs

Steps:

  • For the Creole Seasoning: Place all the ingredients in a small jar and shake well to combine.
  • For the Casserole: Cut the chicken breasts into small bite-sized pieces (I like to use scissors), place them on a plate and sprinkle with 1 tablespoon of the creole seasoning. Leave chicken to sit while you get on with things.
  • Cut the bacon into small pieces (again, scissors are handy) and place in a Dutch oven over medium-high heat. Cook until the bacon is crispy, then remove it to a plate or bowl lined with paper towels to drain. While the bacon is cooking, finely dice the onion, bell pepper, and celery. Cut the sausage in half lengthwise, then into pieces about as thick as a nickel.
  • When you remove the bacon from the pot, drop in the chicken pieces and cook for a few minutes until just sealed and lightly browned. Remove the chicken back to the plate with a slotted spoon. Drop the sausage into the pan and cook until it is browning, getting crispy, and beginning to curl up. Remove with a slotted spoon to paper towels. Drain away all but ¼ cup of the fat. Add the diced onion, pepper, and celery to the remaining fat, sprinkle over another tablespoon of creole seasoning, then sauté over medium heat until the onion is soft and translucent, about 10 minutes. Add the tomato paste, tomatoes, and bay leaves and continue cooking for another 2 minutes. Pour in the wine and broth and stir, scraping any browned bits from the bottom of the pan. Bring the sauce to simmer, then return the chicken to the pot. Stir in the sausage and rice to combine well and bring back to a low bubble. Cover the pot and cook for 15 minutes, stirring, until the rice is tender and some of the liquid has been absorbed. Bring back to a simmer and drop in the beans and the cooked bacon and stir. Remove the bay leaves and simmer for 10 minutes. Leave to cool. At this point, the mixture will be a little soupy, but the liquid will be absorbed as it rests. Spoon the casserole into a 9-by-13-inch pan. Sprinkle the breadcrumbs evenly over the casserole.
  • The casserole will keep wrapped tightly up to 2 days in the fridge.
  • When ready to cook, preheat the oven to 350ºF. Place the dish on a baking sheet and cook for 15 minutes until heated through.

4 chicken thighs and 4 chicken drumsticks
1 large onion, peeled and sliced
1 carrot, peeled and chopped
1 tsp paprika (smoked paprika, if possible)
1 red pepper, deseeded and sliced
1 clove garlic, peeled and crushed
175g (6oz) easy-cook, long-grain rice
400g can chopped tomatoes
Few sprigs fresh thyme or 1 tsp dried thyme
Salt and ground black pepper
450ml (15fl oz) hot chicken stock
125g (4oz) bacon bits
2 spring onions, trimmed and chopped

Steps:

  • Set the oven to 190°C/375°F/Gas 5. Heat the oil in a flameproof casserole, or paella pan, and fry the chicken pieces until brown all over. Take out of the pan. Add the onion and carrot and fry for 5 mins.
  • Stir in the paprika, red pepper, garlic and rice and cook for 2 mins, then add the rest of the ingredients. Nestle the chicken pieces on top, bring to the boil and cover with a lid or foil.
  • Cook in the oven for 45 mins until the chicken is tender and the rice fluffy.
