JAMAICAN JERK FLANK STEAK

Steps:
- Preheat grill, grill pan or broiler. Coat a grill, large baking sheet or shallow roasting pan with cooking spray.
- In a shallow dish, whisk together vinegar, sugar, allspice, cloves, basil, thyme, hot sauce, salt, and pepper. Add flank steak and turn to coat (you may marinate up to 24 hours at this point).
- Transfer flank steak to prepared pan and pour over any remaining marinade. Grill or broil 5 minutes per side, until medium-rare. Let stand 10 minutes before slicing crosswise into thin slices. Serve 12 ounces for tonight's dinner (about 1/3 of the total). Refrigerate leftovers until ready to use.

- In a shallow dish, whisk together vinegar, Splenda, allspice, cloves, basil, thyme, hot sauce, salt, and pepper. Add flank steak or London Broil and turn to coat (you may marinate up to 24 hours at this point).
- Bring the steak to room temperature about 20 minutes before cooking.
- Preheat the oven for broiling and coat grilling pan with cooking spray.
- Transfer steak to prepared pan. Grill or broil about 6 inches from the heat for 15 minutes; turn over and broil for another 15 to 20 minutes, until medium-rare. Let stand 10 minutes before slicing crosswise into thin slices.
- Serve one-third of the steak for tonight's dinner (about 10 ounces as the steak will reduce size during broiling).
- Refrigerate leftovers until ready to use.
- Cook's Note: When using the broiler, crack the oven door open so the meat does not burn.

JAMAICAN JERK CHICKEN

- Smash the allspice as fine as possible using a mortar and pestle. Put in a food processor and add the seasoning salt, peppers, green onions, thyme and 1/2 cup water. Blend to the consistency of lumpy oatmeal and pour into a bowl.
- Rub the chicken with the jerk seasoning and stuff the jerk seasoning between the skin and the meat. Place the chicken pieces into a storage pan and let marinade overnight (at least 12 hours).
- Remove the excess seasoning from the chicken. Heat the grill to high heat (about 350 degrees F) and then place the chicken meat-side down first as to not let the chicken burn too quickly. Flip the chicken every 5 to 7 minutes until the skin has a nice brown color with grill marks, and then every 7 to 10 minutes on lower heat until cooked, around 40 minutes total or until the internal temperature of the chicken reaches 165 degrees F.
- Chop each quarter into 4 to 5 pieces to get the real Jamaican jerk experience.

Steps:
- Score both sides of beef by cutting 1/4 inch deep diagonal lines about 1 inch apart in surface of steak to form diamond shaped design -- do not cut all the way through the meat.
- Combine sugar, juices, garlic, ginger, grated peels, slat , pepper, cinnamon and cloves in 2-quart glass dish.
- Add beef; turn to coat.
- Cover and refrigerate steak at least 2 hours.
- Remove beef from marinade; discard marinade.
- Grill beef over medium hot coals abut 6 minutes per side until medium-rare or to desired doneness.
