JALAPEñO POPPER PRETZEL RING RECIPE BY TASTY
Try saying "popper pretzel" five times fast! Yeah, we know it's a mouthful, just like this zesty ring. Use store-bought pizza dough to make pretzel bites stuffed with cheesy jalapeños, then serve with a creamy cilantro lime dip to tame the spice. This appetizer is a championship ring you're guaranteed to win on your next game day.

- Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper and another with foil, then grease with nonstick spray.
- Trim the tops and bottom tips from the jalapeños. Cut the jalapeños in half crosswise and remove the seeds and ribs, taking care not to break the jalapeños.
- In a medium bowl, beat the cream cheese, sour cream, and cheddar cheese with an electric hand mixer on medium speed until well combined. Transfer the cheese mixture to a piping bag or zip-top bag with a corner snipped off.
- Pipe the cheese mixture into each jalapeño half to fill completely.
- Divide the pizza dough into 32 1-ounce portions and roll into balls. Gently press each piece of dough into a small, flat circle. Place a stuffed jalapeño half in the center, then gather the dough around the jalapeño and roll into a ball, sealing completely. Place on the parchment-lined baking sheet.
- Bring a large pot of water to a boil. Add the baking soda to the boiling water.
- Working in batches, boil the dough balls, until the dough begins to swell, about 20-30 seconds. Remove from the water and place on the foil-lined baking sheet, arranging in 2 concentric circles with a space in the middle.
- Brush the dough balls with the beaten egg yolk and sprinkle with coarse salt.
- Bake the poppers for about 25 minutes, until the dough is cooked through and tops are deep golden brown. Remove from the oven and let cool slightly.
- Meanwhile, make the creamy cilantro lime dip: Add the crema, avocado, cilantro, mint, lime zest and juice, and salt to a blender and blend until completely smooth. Transfer to a serving bowl that will fit into the center of the popper ring.
- Place the dip in the center of the ring, then serve.

JALAPENO BITES
Steps:
- Preheat the oven to 350 degrees F.
- Mix the cream cheese, Parmesan, jalapenos and egg to form a paste. Shape into balls using about 1/2 tablespoon of paste for each. Roll the balls in the breadcrumbs. Place on an un-greased baking sheet and bake for 10 to 15 minutes, until golden brown. Serve warm.

- Take one whole chilli and using a small sharp knife make an incision along the length without cutting all the way through. Open up the cavity and using the end of a teaspoon scrape out and discard the seeds and the membrane. It's very good idea to wear gloves when you're preparing chillies in this way, and make sure you wash your hands thoroughly afterwards. Repeat with all the other chillies.
- Mix the cream cheese with the mozzarella, season with salt and pepper then use it to fill the chillies. Push them gently to close them up and wipe off any excess.
- Put the flour, egg and breadcrumbs in separate shallow bowls or dishes and roll the stuffed chillies first in the flour then egg then breadcrumbs then repeat so they get a good double coating.
- Heat the oil in a large saucepan until it reaches 160C. Carefully lower the chillies into the oil using a slotted spoon and deep fry in batches for around 2-3 mins or until deep golden brown. Transfer to a plate lined with kitchen paper to soak up the excess oil.
- Once the chillies are fried season them with pepper and salt and spread out on a plate or board so everyone can help themselves. Great with beer and a movie.

JALAPENO POPPER BITES (DELICIOUS!)
These taste JUST like jalapeño poppers but are cut smaller and can pop easily in your mouth. They are also faster to cook and about the same to prepare. If you like jalapeño poppers you have to try these!!!

Steps:
- In a bowl, combine Cream Cheese, Cheddar and Mayo. Mix well and Set Aside.
- In a second bowl, combine bread crumbs and all seasonings (ingredients 3-8) Set Aside.
- In a third bowl, beat eggs. Set Aside.
- Cut end off each Jalapeño and slice into 1/4 inch thick round slices. (I keep the tips, not the ends, and make tiny versions of the bites but u can toss em also if u like.).
- Top each Jalapeño slice with a lump of cream cheese mixture, form the mixture and the slice into the shape of a gum drop or a short cylinder with the jalapeño being the bottom of it. The smoother the shape the prettier they turn out.
- *You can use as much of the filling as you like,.
- I usually do about 1/4 - 1/2 inch thick depending on the width of the jalapeño slice.
- Dip each popper in eggs, then in breadcrumbs, make sure to cover very well in breadcrumbs and if you need to, double dip. ( if u get a lot of egg on it the first time u should not need to double dip.).
- Dry for 10 Mins before frying.
- Heat the oil in a frying pan to med/low, I do 4 on my stove and it's perfect, make sure there is enough to reach the top of your popper bites, you can not flip they or the filling comes out the top.
- Once the oil is up to heat, place prepared poppers in oil, jalapeño side down!
- Fry for 3-5 mins or until golden brown. If cream cheese comes out the top make sure to watch and remove that one ASAP so u don't lose filling.
- Place on paper towel to cool. Serve:.

- In a large bowl, combine the bread crumbs, cheddar cheese, eggs, ½ teaspoon of salt, and ½ teaspoon of pepper, and mix well.
- Grease a 24-cup mini muffin tin with nonstick spray and fill each cup with a heaping tablespoon of the bread crumb mixture. Press into the pan firmly to form wells. Set aside.
- In another large bowl, combine the cream cheese, bacon, diced jalapeños, the remaining ½ teaspoon of salt, and remaining ½ teaspoon of pepper.
- Preheat oven to 375°F (190°C).
- Fill the bread crumb wells with a 2 tablespoons of the cream cheese mixture. Top each cup with a bit of shredded cheddar and a jalapeño slice.
- Bake for 10 minutes, or until the cups are golden brown.

Steps:
- Preheat oven to 350°F.
- Combine the cream cheese, Parmesan, jalapeño peppers and egg yolks in a bowl and mix to form a paste.
- Shape a 1/2 tablespoonful at a time into 1/4-inch rounds and roll in the bread crumbs.
- Place on an ungreased baking sheet and bake for 10-15 minutes or until golden brown.
- Serve warm.

- Line two baking sheet parchment paper and set aside. In a dough mixing bowl, add 1/2 cup lukewarm water and sugar and mix well. Sprinkle yeast on top and let it bloom. (8-10 minutes)
- Once yeast bloom, add in 2 cup flour, salt, melted and cooled butter, 1/2 cup milk and combine with spatula until dough comes together. Transfer to a kneading surface, add remaining flour 1-2 tbsp at a time while kneading the dough. Knead for 5 minutes to build gluten. Transfer to a buttered clean bowl, cover and set aside to rise until doubles in size. 2 hours.
- Punch down the risen dough, remove on a flour dusted board and dive into 24 equal portions. Also set oven to preheat at 450 degrees. And bring a pot of water to rolling boil for pretzel bath.
- Press each portion of dough to make small flat surface, fill with slice of jalapeno and a heaping teaspoon cheese. Close all sides and roll to a small tennis size ball. Set aside. Repeat with all 24 portions.
