JALAPENO POPPER DIP
This has all the flavor of jalapeno poppers in an easy to make dip! I have mixed the Parmesan cheese in with the dip and omitted the cracker and butter topping, but baked as usual, too.

Steps:
- Preheat the oven to 375 degrees. Heat a 10" cast-iron skillet over medium heat. Add the bacon and cook for 8-10 minutes until crispy. Remove from the heat and transfer the bacon to a paper-towel lined plate to drain. Remove all but a thin layer of bacon grease from the skillet (about 2 tablespoons remaining).
- Return the skillet to medium heat. Add the garlic and jalapeno. Cook 2 minutes until slightly softened. Remove from the heat. Add the cream cheese, mayonnaise, sour cream, Worcestershire sauce, and black pepper. Stir or whisk until smooth. Stir in about two-thirds of the bacon.
- Sprinkle the cheddar cheese all over the top of the dip, followed by the crushed chips. Bake for 12-14 minutes, until the edges are bubbly and the cheese is melted all over. Top with the remaining cooked bacon and extra slices of jalapeno. Serve with more tortilla chips and toasted baguette.
JALAPENO POPPER DIP WITH PANKO
I found this recipe online, added bacon to it, and thought my family would like it. I sure got that right! This dip is delicious, perfect for football parties, or any get-together. You can adjust the heat by using all canned jalapenos, or all green chilies. I use all jalapenos and it's spicy, but not overly so. I serve it with crackers, but a lot of people enjoy it with chips also. For convenience I use real bacon bits.

JALAPENO POPPER DIP
Made this for Super Bowl 2011. Wanted the taste of poppers, but not the hassle of wrapping bacon around the stuffed jalapeno peppers. Turned out great. Lots of rave reviews. I would like it hotter and am planning to try it the next time without roasting the jalapenos. I am up for suggestions to make this much hotter!

Steps:
- Pre heat oven to 400 degrees.
- Cut jalapenos in half lengthwise and remove seeds and veins (I left some seeds and veins for more heat). You need to wear rubber gloves for this step or you will suffer.
- Toss peppers with oil and place in pan to roast. Sometimes I roast the onions also for a milder flavor.
- Roast for 20-30 minutes, stirring half way through.
- Let peppers cool.
- Cook bacon (unless using real bacon bits).
- Either hand cut peppers, onion and bacon or process in a food processer.
- Mix softened cream cheese, spices, mayo, sour cream, popper/bacon/onion mix and cheese.
- Put in a greased 9x9" pan.
- Top with Parmesan cheese.
- Bake for 30 minutes at 325 degrees.
- Serve with tortilla chips, crackers, party bread, etc.

JALAPENO POPPER DIP
A quick dip to satisfy your craving for poppers if you don't have time for the real thing. I used home grown pickled jalapenos and use much more than this calls for, but we like things hot! Experiment with adding bacon if you like. Serve with any kind of chip or cracker you prefer!
