Hope you'll enjoy this jalapeno popper-inspired pork tenderloin! As written, it's not very spicy but could be kicked up a notch by leaving in a few jalapeno seeds or adding more chile powder. Recipe can be easily doubled.

½ tablespoon chile powder
½ tablespoon garlic powder
¼ tablespoon white sugar
½ teaspoon salt
¼ teaspoon ground black pepper
1 pound pork tenderloin
1 tablespoon olive oil
3 each fresh jalapeno peppers, halved lengthwise and seeded
1 dash ground cumin
½ (8 ounce) package cream cheese, softened
4 slices bacon
kitchen twine

Steps:

  • Mix chile powder, garlic powder, sugar, salt, and pepper together in a bowl. Cut a pocket lengthwise down the middle of the pork tenderloin. Apply the spice mixture all over the tenderloin.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a roasting pan.
  • Heat olive oil in a skillet over medium heat. Cook jalapenos, flipping occasionally, until tender, 7 to 10 minutes. Sprinkle with cumin. Let cool until easily handled; chop.
  • Spread cream cheese inside the pork tenderloin. Add chopped jalapenos. Wrap bacon slices around the tenderloin in a spiral. Secure with kitchen twine. Make sure to tie up tightly to close the pocket.
  • Transfer the tenderloin to the skillet. Cook over medium heat, rotating continuously, until golden, about 30 seconds on each side. Place the tenderloin in the prepared roasting pan.
  • Roast in the preheated oven until an instant-read thermometer inserted into the center reads at least 150 degrees F (65 degrees C), 30 to 35 minutes. Remove from the oven, cover with foil, and let rest for 10 minutes. Remove kitchen twine and slice, topping with any of the stuffing that may have overflowed in the pan.

Canola oil, for frying
8 jalapenos
8 ounces cream cheese
6 ounces shredded Cheddar Jack cheese
4 ounces Fox Bros. Chopped Smoked Pork, recipe follows, tossed in barbecue sauce
2 eggs
1/2 cup all-purpose flour
1 cup panko breadcrumbs
Ranch dressing or your favorite dipping sauce, for serving
1 1/2 cups paprika
1 1/4 cups kosher salt
3/4 cup chili powder
1/2 cup granulated garlic powder
1/2 cup granulated onion powder
1/2 cup ground black pepper
One 8- to 10-pound pork butt

Steps:

  • Bring a few inches of canola oil to 350 degrees F in a deep pot.
  • Trim the tops from the jalapenos, then fry until blistered and soft, 5 to 8 minutes. Cut in half and remove seeds and membranes. (Keep oil warm.)
  • Mix the cream cheese and Cheddar Jack together in a bowl.
  • Open a jalapeno half and spread some Chopped Pork along the bottom of the jalapeno, making a 1/4- to 1/2-inch layer. Spread the cheese mixture along the top of the pork mixture. Repeat until all jalapeno poppers are prepped.
  • Beat the eggs in a bowl. Add the flour to a second bowl. Add the breadcrumbs to a third.
  • Roll the stuffed jalapeno in the flour first, then submerge it in the egg, then move to coat in the breadcrumbs. Set on a rack. Repeat until all jalapenos are breaded, then repeat the breading process one more time on all jalapenos.
  • Bring frying oil back to 350 degrees F.
  • Fry poppers until golden brown. Remove to a rack to dry. Serve with ranch dressing or your favorite dipping sauce.
  • Preheat a smoker to 225 degrees F.
  • Stir together the paprika, salt, chili powder, garlic powder, onion powder and pepper in a bowl. (See Cook's Note.)
  • Season the pork butt liberally with the dry rub (save the remainder for another use). Place on smoker and let smoke, adding wood chips as necessary to provide smoke, until the internal temperature registers 200 degrees F, 10 to 12 hours. Let rest for 2 hours, then chop.

Steps:

  • Cut jalapenos in half and remove seeds and veins.
  • (Use gloves to work with peppers).
  • Fill jalpenos with cream cheese and wrap a slice of bacon around each one.
  • Secure with a toothpick.
  • Bake at 425 degrees until bacon appears to be done, about 15-20 minutes.

  • Note: I like to cut and seed the peppers and soak them in cold water in the refrigerator overnight to take out some of the hot.

10 jalapeno peppers, cut in half, stem intact, membrane and seeds removed
1/2 cup cheddar cheese, aged, grated
1/4 cup light cream cheese
1/4 cup salsa
3/4 cup breadcrumbs (reserve 3 tbsp crumb)
2 tablespoons parsley, chopped
2 tablespoons butter, melted

Steps:

  • Combine cheddar,cream cheese& salsa.
  • Blend in 1/4 cup bread crumbs (less 3 tbsp crumbs).
  • Spoon evenly into the pepper halves.
  • Toss together the remaining bread crumbs, parsley& butter.
  • Spoon over the peppers.
  • Bake on cookie sheet in 375f oven for 20 minutes or until the top is golden and crisp.

Roast jalapeno peppers stuffed with cream cheese and wrapped in bacon. These are a little time consuming, but the results are delicious. Prep time includes time to grill the peppers. You can let your imagination go wild and adjust the recipe by adding anything you think sounds good. Cream cheese measurement is an estimate because of the difference in pepper sizes. Thanks to Chuck who makes these and takes them to all the neighborhood cookouts and potlucks. He often goes home with requests for more.

Steps:

  • Halve and seed the jalapenos.
