2 tablespoons Dijon mustard
2 tablespoons orange marmalade
1 jalapeno pepper, seeded
2 teaspoons fresh lime juice
1 teaspoon sliced black olives
4 skinless chicken breast halves, bone in

Steps:

  • Seed the jalapeño, being careful to keep away from eyes. Combine the mustard, marmalade, jalapeño, lime juice and oil. Add a pinch of cayenne pepper if you want it hotter.
  • Cut a pocket in the side of each chicken breast and spoon a little of the mustard sauce into the opening. Baste the tops of the chicken with the mustard.
  • Place chicken on a rack in a roasting pan. Bake in a pre-heated 350-degree oven for 35-40 minutes or until chicken tests done. Baste once during cooking with the mustard mixture.

3 turkey thighs
3/4 cup honey mustard
1/2 cup orange juice
1 tablespoon cider vinegar
1 teaspoon Worcestershire sauce
2 jalapenos, seeded and minced
1 clove garlic, crushed
1/2 teaspoon orange rind

Steps:

  • Place the turkey thighs in a crockpot or other non-TM slow cooker.
  • Combine all other ingredients and add to cooker.
  • Cook on low 5-6 hours or until thighs are tender and fully cooked.
  • Seems like there should be more to this, doesn't it.

1/4 cup carbonated lemon-lime beverage
1/4 cup orange juice
1/4 cup Dijon mustard
1/4 cup reduced sodium soy sauce
3 tablespoons honey
2 tablespoons gingerroot, minced
6 boneless skinless chicken breasts (4 oz each)

Steps:

  • In a small bowl, combine the first six ingredients; mix well. Pour 3/4 C of the mixture into a large resealable bag; add the chicken. Seal bag and turn to coat. Refrigerate for 45 minutes. Also refrigerate remaining marinade for basting.
  • Coat grill rack with non-stick spray then start the grill. Drain and discard marinade from chicken. Grill chicken over medium heat 5-6 minutes per side or until juices run clear, basting with remaining marinade.
