3 pounds beef bones, or more to taste
3 carrots, chopped
2 stalks celery, chopped
1 onion, chopped
5 cloves garlic, smashed
1 teaspoon whole black peppercorns
2 bay leaves
cold water to cover
2 tablespoons apple cider vinegar
kosher salt to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil; spread beef bones out on prepared baking sheet.
  • Roast bones in the preheated oven until browned, 25 to 30 minutes.
  • Place carrots, celery, onion, garlic, peppercorns, and bay leaves in a slow cooker. Place roasted bones over vegetables; pour in enough cold water to cover bones. Add apple cider vinegar and kosher salt.
  • Cook on Low for 8 hours. Pour broth through a fine-mesh strainer into a bowl and discard any strained solids.

½ teaspoon salt

1 clove garlic, minced
1 bay leaf

1 onion, chopped
1 ½ cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped

Steps:

  • Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
  • Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

Brushing the bones with tomato paste then browning in the oven firstly then combined with the slow cooking crockpot method will produce the most flavorful richest beef broth --- I usually prepare the ingredients early in the morning, by late evening you will have a wonderful rich beef broth, or you may cook overnight --- the stock may be frozen after cooling, if you don't have a crock pot you may certainly simmer this over very low heat on top of the stove, it will still be delicious! The more bones you use the richer your stock will be, so use lots!

Number Of Ingredients 8

7 -10 beef bones with marrow (or use any beef bones with a little meat left on them)
6 ounces tomato paste
2 onions, chopped (leave the skin on onions)
2 carrots, peeled and chopped
2 tablespoons dried parsley flakes (optional)
8 -10 black peppercorns
2 teaspoons salt (or to taste)
cold water (enough to cover the bones)

Steps:

  • Place the bones on a greased baking sheet and brush liberally with tomato paste (use only tomato paste not tomato sauce).
  • Bake at 350 degrees F turning once during baking.
  • Bake for about 25 minutes on each side or until browned.
  • Place in the crock pot or large stock pot along with remaining ingredients, then add in enough water to cover.
  • Cover and cook on low for 12-24 hours OR on HIGH for 6 hours (if cooked on high setting the stock will be lighter in color and less concentrated) or if cooking on the stove top simmer on lowest heat for about 4-6 hours.
  • Remove from crock pot or stock pot; strain and refrigerate.
  • The stock will keep well for 4-5 days or may be frozen.
  • Note: veal bones may be replaced for beef bones.
  • **Note** you may certainly use more than the amount stated for beef bones, the more used then the richer the stock.

Number Of Ingredients 7

4 pounds veal or beef bones, cracked by butcher or (for an all purpose "brown stock" 2 pounds veal bones and 3 pounds beef bones, cracked by butcher)
2 onions, quartered
2 stalks of celery, cut into 2 inch chunks
2 carrots, scrubbed clean and cut into 2inch lengths
1 gallon water
Bouquet Garni including parsley, 1 teaspoon thyme, 2 cloves garlic, 12 peppercorns and a bay leaf
1 medium tomato, cored and chopped

Steps:

  • Preheat the oven to 475 degrees. Roast the bones for 30 minutes or until well browned, add the onions, celery and carrots and roast for 30 minutes longer. Transfer bones and vegetables to a 1012 quart tall stockpot. Discard fat from roasting pan and deglaze with 2 cups of the water. Add this to the stock pot with remaining water, bouquet garni and tomato. Bring the liquid slowly to a boil, skimming often. Simmer for 4 5 hours, skimming occasionally and replenishing the water to keep the level of water somewhat constant.
  • Strain and discard solids; let stock come to room temperature and chill. When chilled, discard surface fat. Bring back to a simmer and adjust for seasoning. If too weak for your taste, reduce, the season with salt.
  • If you want to concentrate it, keep on reducing and transferring to a smaller pot until you have the consistency you want.

3 veal shanks
8 small shallots, cut in half
2 cloves garlic, minced
4oz (250gr) mushrooms, chopped
1 rib celery, chopped
1 tsp paprika
1 tsp instant coffee
1 tsp oregano
1 tsp parsley
2 tbs tapioca
1/2 cup (4oz, 120ml) beef stock
1/2 cup (4oz, 120ml) dry sherry
1 tbs olive oil
optional - if needed: 2 tsp instant tapioca or 1 tbs cornstarch

Steps:

  • Heat 1 tbs oil in a large skillet. Add veal and brown on all sides. Remove to slow cooker.
  • Sprinkle veal with tapioca.
  • Add shallots, mushrooms, celery, garlic, paprika to skillet and sauté briefly.
  • Add stock, sherry, herbs, coffee, and simmer briefly, stirring well.
  • Pour over veal.
  • Cover and cook, low heat, 6 - 7 hours.
  • Check 30 minutes before serving and if sauce needs to be thickened add 2 tsp instant tapioca or 1 tbs cornstarch dissolved in 2 tbs water.
  • When ready, remove to a platter and serve.

This slow cooker veal shanks, or osso buco, cooked in a tomato gravy until fork-tender. The recipe is as simple as adding everything to your slow cooker with no sauteing or searing required.

4 lbs Veal shanks ((1 lb each) )
3 sprigs Thyme
3 springs Rosemary
1 tsp Garlic powder
2 tbsp Onion powder
2 tbsp Balsamic vinegar
2 tbsp Tomato paste
1 tbsp Mustard paste
2 tbsp Honey
2 tbsp Cooking oil
1 tsp Cumin powder
1 tbsp Smoked paprika ((I used hot but sweet works too) )
14 oz Crushed tomatoes (canned)
1 cup Chicken broth
1 tsp Salt
1 tsp Pepper
1 tsp Cornstarch
¼ cup Water

Steps:

  • Thaw the shanks for at least an hour before you plan to cook. Place them on clean paper hand towels and pat them dry. Pro tip - The shanks must be dry. Otherwise, there will be excess gravy. I like to leave to thaw them uncovered in the fridge overnight so that excess moisture can dry out.
  • Liquid ingredients - In a measuring cup combine all the liquid ingredients - garlic and onion powder, balsamic vinegar, tomato paste, mustard paste, crushed tomatoes, honey, broth, oil, salt, and pepper. Pro tip - You can also add all these ingredients directly into the slow cooker. For the purpose of the video, I did it in a measuring cup.
  • Place the veal shanks, thyme, and rosemary in the slow cooker or crockpot. Then, pour the liquid ingredients over the veal shanks. Lightly stir to ensure the liquid goes under the shanks.
  • Cover and cook. You can slow cook on low for 8 hours or slow cook on high for 4 to 5 hours.
  • Make a slurry with cornstarch and water. Then, add it to the slow cooker. Cook another 30 to 60 minutes. Pro tip - In the video, I removed the meat out before adding the slurry. This is a great way to prevent overcooking the meat as well as reducing excess liquid. But, you can also add the slurry directly with the meat in the pot.
  • Garnish with chopped parsley over steamed rice or mashed potatoes.
