BACON JALAPENO PEPPER CHICKEN BITES

Bacon Jalapeno Pepper Chicken Bites image

I never really cared for the cream cheese versions of stuffed jalapeno peppers, so I came up with my own. It takes a little prep work, but they are so worth it! Serve with ranch dressing for dipping.

Provided by Alisa

Categories     Appetizers and Snacks     Vegetable     Jalapeno Popper Recipes

Time 55m

Yield 24

Number Of Ingredients 6

1 pound jalapeno peppers
1 pound chicken tenderloins, halved
1 tablespoon seasoned salt, or to taste
1 teaspoon garlic powder, or to taste
1 onion, cut into thin wedges
1 pound bacon, cut in half crosswise

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Slice stems from jalapeno peppers, cut a long slit into the sides, and remove seeds from peppers.
  • Sprinkle chicken tenderloin pieces with seasoned salt and garlic powder. Place a piece of chicken into the hollow of each pepper; top with an onion wedge. Wrap pepper completely in bacon and secure with toothpicks. Repeat with remaining peppers, chicken, onion, and bacon.
  • Grill bacon-wrapped peppers on the preheated grill until chicken tenderloin is no longer pink, the juices run clear, the pepper is tender, and the bacon is crisp, about 15 minutes. Flip peppers occasionally during cooking. An instant-read meat thermometer inserted into the chicken in a pepper should read at least 160 degrees F (70 degrees C).

STUFFED JALAPENO PITA BITES

Stuffed Jalapeno Pita Bites image

These delicious appetizers were a hit at our Easter Sunday potluck Brunch. I was pleased to find the recipe was in one of our local cook books 'A Taste Of Heaven' and surprisingly a recipe I had been thinking of trying. Delicious, easy and a crowd pleaser! I find putting them on a cookie sheet and heating through in a 350 oven make for a marvelous hot appetizer. Also excellent at room temperature.

Provided by Gerry

Categories     < 15 Mins

Time 15m

Yield 36 serving(s)

Number Of Ingredients 7

1 (18 count) package mini pita pockets (Cut in half)
1/4 cup margarine
1/2 cup finely diced onion
1 (8 ounce) package cream cheese
8 slices bacon (cooked cooled and crumbled)
1 small tomatoes, finely chopped
1/3 cup jalapeno peppers, finely chopped or 1/3 cup use a small 4 1/2 ounce jar of garlic and jalapeno puree

Steps:

  • Cook bacon, cool and crumble.
  • Cut mini pitas in half with scissors.
  • In bowl microwave margarine and onions until soft - about 2 minutes.
  • Add cream cheese and blend with mixer until creamy, fold in crumbled bacon, tomato and peppers and stuff into pitas.
  • NOTE instead of the jalapeno peppers you may use a small jar (just under 4 1/2 ounces)of garlic and jalapeno puree, which is my favorite way of preparing these. This also makes a terrific dip.
