1 large onion
1 clove of garlic
120 g quality chorizo
2-3 cooked potatoes
1/2 bunch of fresh flat-leaf parsley
olive oil
2 large free-range eggs

Steps:

  • Preheat the oven to 180ºC/gas 4.
  • Peel and finely chop the onion and garlic, chop the chorizo, dice up the cooked potato and pick and finely chop the parsley.
  • Gently fry the onion and garlic in a little oil in an ovenproof pan until the onion is soft. Add the chorizo and fry for 2 to 3 minutes.
  • Add the potatoes and cook for 5 minutes more, then crack the eggs on top.
  • Transfer the pan to the preheated oven and bake for 8 minutes, or until the egg white is set but the yolk is still runny.
  • Sprinkle with sea salt, black pepper and the parsley, to serve.

Chorizo-Potato Hash Browns with Black Beans and Salsa Verde image

1 can black beans, drained, rinsed and drained again
Pinch ground coriander
Pinch ground cumin
6 large tomatillos, diced
2 limes, juiced
1/4 cup chopped fresh cilantro
3 tablespoons finely diced red onion
2 tablespoons extra-virgin olive oil
Honey
Salt and pepper
1 1/2 pounds Yukon Gold potatoes, unpeeled, cut into 3/4-inch cubes
Kosher salt
1 tablespoon canola oil
1/2 pound Mexican chorizo
2 tablespoons butter
Salt and pepper
1/2 cup grated Monterey Jack
1/4 cup grated cotija cheese, plus more for garnish
1/4 cup chopped fresh cilantro, plus more for garnish
4 to 6 eggs, poached, fried or scrambled
Green onions, thinly sliced, for garnish
Ancho chile powder, for garnish

Steps:

  • For the black beans: Combine the black beans, 1/2 cup water, coriander and cumin in a small saucepan. Bring to a simmer over medium heat and cook until heated through. Keep warm.
  • For the salsa verde: In a bowl, combine the tomatillos, lime juice, cilantro, red onions, olive oil and honey to taste. Season with salt and pepper. Set aside.
  • For the hash browns: Put the potatoes in a large pot of salted water and bring to a boil over high heat. Cook until very tender, about 10 minutes. Drain and set aside.
  • Heat the canola oil in a large cast-iron skillet over high heat. Add the chorizo and cook until brown and separated into small pieces. Add the butter, then add the potatoes, breaking them up and pressing them down a bit using a potato masher. Stir the potatoes and sprinkle them with salt and pepper. Add the Monterey Jack and cotija. When the Monterey Jack gets melty, stir in the cilantro.
  • To serve: Set a ring mold on a plate and press some of the hash brown mixture into the mold. (If you don't have a ring mold, just spoon some of the hash browns onto a plate.) Unmold and spoon some of the black beans over the hash browns. Top with an egg and some salsa verde. Garnish with cotija, cilantro, green onions and a dusting of ancho powder.

SMASHED POTATO-CHORIZO HASH



Smashed Potato-Chorizo Hash image

1/4 cup apple cider vinegar
1 teaspoon sugar
1/2 small red onion, thinly sliced
1 1/2 pounds baby red potatoes
Kosher salt
8 ounces shishito peppers, stemmed and halved crosswise
8 ounces thin asparagus, trimmed and cut into 1 1/2-inch pieces
1/4 cup extra-virgin olive oil
Freshly ground pepper
1/2 teaspoon smoked paprika, plus more for topping
2 to 3 links fresh chorizo (about 9 ounces total), casings removed
4 large eggs
1/2 cup fresh parsley, chopped

Steps:

  • Position racks in the upper third and middle of the oven; preheat the broiler. Whisk the vinegar and sugar in a small bowl until dissolved. Stir in the red onion and set aside.
  • Put the potatoes in a medium saucepan and cover with cold water by 1 inch; season with salt. Bring to a boil and cook until the potatoes are tender, 12 to 15 minutes.
  • Meanwhile, toss the shishitos and asparagus with 1 tablespoon olive oil and a big pinch each of salt and pepper on a baking sheet.
  • Drain the potatoes and toss with 2 tablespoons olive oil and the paprika; season with salt and pepper. Spread out on a second baking sheet and smash the potatoes using the bottom of a glass. Broil the potatoes on the upper oven rack and the shishitos and asparagus on the middle rack until the potatoes are browned and the shishitos and asparagus are tender, 10 minutes.
  • Meanwhile, cook the chorizo in the remaining 1 tablespoon olive oil in a nonstick skillet over medium-high heat until browned, 5 minutes. Remove to a plate. Add 4 eggs to the skillet and cook until the whites are set, 3 to 4 minutes; season with salt and pepper. Divide the potatoes, shishitos and asparagus among plates. Top with the chorizo, red onion (drained) and fried eggs. Sprinkle with the parsley and paprika.

  • Stir in onion, cumin, and cayenne pepper; cook until onions are soft, 5 to 7 minutes. Add chorizo and increase heat to medium-high. Cook and stir until potatoes are tender (not mushy) and brown and chorizo becomes crisp, 1 to 2 minutes.

Delia's potato hash with chorizo and eggs makes a strong breakfast option. Equipment: You will need a heavy-based frying pan about 8 inches (20 cm) in diameter, a slightly smaller frying pan for the eggs.

5 oz (150 g) chorizo sausage
1 small red pepper
1 rounded teaspoon hot paprika
1 medium onion
10 oz (275 g) Desirée or King Edward potatoes
4 tablespoons olive oil
1 fat clove garlic, peeled and crushed
2 large, very fresh eggs
salt and freshly milled black pepper

Steps:

  • First the onion needs to be peeled, sliced in half and then each half sliced as thinly as possible so you end up with little half-moon shapes. Next halve and deseed the red pepper, slice it, then chop it into ½ inch (1 cm) pieces. After that, peel the skin off the chorizo sausage and cut into pieces roughly the same size as the pepper.
  • The potatoes need to be washed and cut into ½ inch (1 cm) cubes, leaving the skin on. Then place them in a saucepan and pour enough boiling water from the kettle to almost cover them, then add salt and a lid and simmer for just 5 minutes before draining them in a colander and covering with a clean tea cloth to absorb the steam.
  • Next heat 2 tablespoons of the oil in the larger frying pan and, when it's fairly hot, add the onion, pepper and garlic and cook for about 6 minutes, until softened and tinged brown at the edges. Then push these to the side of the pan, add the chorizo and, keeping the heat fairly high, cook for about 2 minutes, again, till nicely browned at the edges. Next, add the paprika and stir everything together, then remove the whole lot to a plate.
  • Now add another tablespoon of oil to the pan and, still keeping the heat high, add the potatoes and seasoning. Toss them around in the hot pan for about 3 minutes, keeping them moving, until they begin to crisp and brown at the edges, then return the chorizo, onion and pepper to the pan and, using a pan slice, keep turning the mixture over. Carry on cooking the whole thing for 5-6 minutes, until it's all really brown and crispy. Then turn the heat down to its lowest setting and, in the other pan, fry the eggs in the remaining oil (see How to fry an egg, below). Serve the hash divided between the two warmed plates with an egg on top of each and have plenty of tomato ketchup on the table.

3 tbsp olive oil
2 cups raw chorizo sausage (- see note 2)

Steps:

  • Cut the potatoes into chunks, there is no need to peel them.
  • Bring a pan of water to the boil and then add in the tablespoon of salt.
  • Add the potato chunks and bring the water back to a simmer. Simmer the potatoes for 10 minutes until just cooked through. Then drain well and set them aside to dry out a little. (see note 4)
