Steps:
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the tomato sauce, beans and jalapeno peppers. Bring to a boil. Add salt and cayenne. Reduce heat; cover and simmer for 20 minutes. , To serve, spoon beef mixture over chips; sprinkle with cheese. Garnish with sour cream.

- Mix all ingredients, but just 1 cup of shredded cheese.
- Transfer to oven-proof dish and top with remaining 1/2 cup cheese.
- Bake uncovered at 350 degrees F for 15 minutes or until bubbly.
- Serve with your choice of chips.
- Enjoy with a cold drink.

SUNNY CARIBBEAN BLACK BEAN AND MANGO DIP
With a seasoned cream cheese base and a black bean, mango, and jalapeno topping, this dip is flavorful, light, refreshing, and colorful. Best made a day ahead, and great served with large tortilla chips(I like Tostitos white corn, restaurant-style chips), rum drinks, beer, Margaritas, and fruit drinks.

Steps:
- In a small bowl, thoroughly mix cream cheese, sour cream, and dried seasonings.
- Taste for seasoning.
- Spread mixture in an 11 inch glass pie plate or other serving plate of same dimension.
- Sprinkle top with minced jalapeno, then black beans, then mango.
- Cover well and chill overnight.
- Just before serving, sprinkle tomato and cilantro over the top.
- Serve with tortilla chips.
- Preparation time doesn't include chilling time.

A co-worker gave me this recipe at a staff birthday party. It has a unique taste and is extremely versatile. It will last for several days refrigerated.

Steps:
- Feel free to adjust jalapeno and garlic according to your taste.
- Combine all ingredients.
- OPTIONAL: For a smoother texture, purée the onions, peppers, garlic, lime juice and cilantro in a food processor, and then mix with the beans and mango.
- Refrigerate for at least an hour to allow flavours to blend.
- Serve with tortilla chips or tostado as an appetizer, or as an additional salad with grilled meat, or use it to fill a pita for an easy lunch.

BEST EVER JALAPENO BEAN DIP
This recipe was always a must have at every Sunday School party. Not my recipe, but an automatic favorite. Thanks Mike for always making it! You can adjust the jalapeno peppers to taste. The amount of cheese was missing from my recipe so I guessed on the amount I usually put in.

- I really recommend storing this in the fridge a few hours or the day before serving, because while you can serve it immediately, it really tastes even better the next day after all the flavors have soaked into the beans and mellowed out perfectly.
- Add your bell pepper and onion and 3 tablespoons water to a small pan and turn the heat to medium-low. Let it cook about 5 minutes and add the garlic and cook a couple of minutes more. Everything should be softened by about 8 minutes. If necessary, add just a tiny bit more water to keep it cooking but all the water should be completely gone before adding it to the beans.
- Add the cooked veggies, lime juice, salt, pepper, cumin and liquid smoke to the processor and process until smooth, scraping the sides a couple of times as needed. I got mine smooth, but still left a few bites of the red bell pepper showing through. Process as smooth as you like.
