Celebrate Cinco de Mayo With John's Cucumber Jalapeño Margaritas image

Rach's husband John gives the margarita a spicy & refreshing twist by adding in muddled fresh cucumber + jalapeño.

Number Of Ingredients 9

½ jalapeño
seeded (optional)
2 to 3 inches seedless cucumber
peeled and sliced
plus 2 slices for garnish
About ⅓ cup silver tequila
About ⅓ cup elderflower liqueur (such as St Germain)
About ⅓ cup fresh lime juice
Ice

Steps:

  • In a cocktail shaker, combine jalapeño, if using, and cucumber and muddle to release juices
  • Add tequila, St Germaine, and lime juice
  • Fill with ice, then cover and shake vigorously to combine
  • Strain into 2 ice-filled glasses
  • Garnish with cucumber slices

Steps:

  • Muddle cucumber-flavored syrup and jalapeno pepper together in a cocktail shaker. Fill the shaker with ice and pour in club soda, vodka, and lime juice. Cover shaker and shake until outside of shaker becomes frosted. Pour cocktail into a glass and garnish with cucumber slice.

2 pounds Kirby cucumbers, sliced diagonally 1/4 inch thick
4 red jalapenos, sliced diagonally 1/4 inch thick
3 small onions, cut into 1/2-inch wedges
3 tablespoons coarse salt
2 cups cider vinegar
1 3/4 cups packed light-brown sugar
1 tablespoon mustard seed
3/4 teaspoon celery seed
3/4 teaspoon ground turmeric

Steps:

  • In a bowl, toss cucumbers, jalapenos, onions, and salt. Cover; refrigerate 2 hours.
  • In a saucepan over medium heat, cook vinegar, sugar, mustard seed, celery seed, and turmeric, stirring to dissolve sugar.
  • Rinse and drain cucumber mixture. Pour vinegar mixture over; let cool. Refrigerate, covered, up to 3 weeks.
