This is my version of a simple garden salad which I changed by adding a small tin of shrimp.

1 head romaine lettuce- rinsed, dried and chopped
2 bunches radishes, sliced
1 bunch green onions, chopped
1 cucumber, cleaned and chopped
3 tomatoes, chopped
3 stalks celery, chopped
1 (4.5 ounce) can small shrimp, drained

Steps:

  • In a large bowl, combine the Romaine, radishes, green onions, cucumber, tomatoes, celery and shrimp. Toss with favorite salad dressing and serve.

A salad made of butter lettuce and shrimp sauteed in butter and lemon. Use your favorite salad dressing or vinaigrette, and vary the amount to your liking.

1 pound medium shrimp - peeled and deveined
2 tablespoons butter
2 lemons, juiced
2 heads butter lettuce
2 tomatoes, chopped
1 avocado - peeled, pitted and diced
2 stalks celery, chopped
1 cucumber, cleaned and chopped
½ cup shredded carrots
⅓ cup vinaigrette salad dressing

Steps:

  • In a large saute pan melt butter over medium heat. Add the shrimp and lemon juice, cook until shrimp just turn pink. Remove from heat and drain.
  • In a large bowl tear lettuce into bite-size pieces, add the tomatoes, avocado, celery, cucumber carrots and cooked shrimp, toss to combine. Top with your favorite dressing or vinaigrette.

1 1/2 pounds large shrimp, shelled and deveined, tail section left on
2 teaspoons fresh lemon juice
1/2 cup canned low-sodium or Homemade Chicken Stock, skimmed of fat
1 1/2 tablespoons unsalted butter
1 large clove garlic, peeled and sliced thinly
1 1/2 teaspoons finely chopped rosemary
1 1/2 teaspoons fresh thyme leaves
1 1/2 tablespoons olive oil
4 ounces bacon, cut into 1 1/2-inch dice
Salt and freshly ground pepper, to taste

Steps:

  • In a medium bowl, toss shrimp, garlic, rosemary, thyme, and oil. Set aside to marinate at room temperature for 30 minutes.
  • Place bacon in a large skillet, and place over medium-high heat. Cook bacon, stirring occasionally, until almost all the fat is rendered, 6 to 7 minutes. Pour off and discard all but about 2 tablespoons of the bacon fat. Add the shrimp, marinade ingredients, and salt and freshly ground pepper to taste; saute, turning frequently, until the shrimp are opaque and just cooked through, about 5 minutes.
  • Remove shrimp and bacon, and transfer to serving dish. Add lemon juice and stock to skillet; cook, stirring up cooked-on brown bits. Cook until liquid is reduced by half, about 2 minutes. Swirl in butter; cook, swirling skillet until butter has melted. Pour the sauce over shrimp, and serve with Lentils with Scallions and Peppers.

3 ounces shrimp, deveined and shelled
3 cups romaine lettuce, shredded
1/2 cup red onion, diced
1/8 cup chickpeas, rinsed
1 ounce Canadian bacon, lean,diced
1/3 cup mandarin orange, canned
1/8 cup kidney bean, rinsed
1 teaspoon olive oil
1 tablespoon cider vinegar
1/2 teaspoon ginger, grated
1/2 teaspoon of fresh mint, chopped
1/4 cup chicken stock

Steps:

  • Heat 1/3 tsp oil in a non-stick saute pan on medium-high setting.
  • Add shrimp, bacon, 1 tsp cider vinegar and 1/4 tsp ginger to pan and saute for 4 minutes.
  • Remove from heat.
  • Add remaining oil, mint, ginger, cider vinegar and chicken stock to a small bowl and mix thoroughly with a whisk to prepare salad dressing.
  • Combine lettuce, mandarin oranges, onion, kidney beans and chickpeas in a salad bowl.
  • Add previously prepared shrimp and bacon.
  • Pour on dressing and toss well.

ROASTED SHRIMP SALAD

2 1/2 pounds (12 to 15 count) shrimp
1 tablespoon good olive oil
Kosher salt and freshly ground black pepper
1 cup good mayonnaise
1 tablespoon orange zest (2 oranges)
2 tablespoons freshly squeezed orange juice
1 tablespoon good white wine vinegar
1/4 cup minced fresh dill
2 tablespoons capers, drained
2 tablespoons small-diced red onion

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel and devein the shrimp. Place them on a sheet pan with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss together. Spread the shrimp on one layer and roast for 6 to 8 minutes, just until pink, firm and cooked through. Allow to cool for 3 minutes.
  • Meanwhile, make the sauce. In a large bowl, whisk together the mayonnaise, orange zest, orange juice, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper. When the shrimp are cool, add them to the sauce and toss. Add the dill, capers, and red onion and toss well. The flavors will improve if you allow the salad to sit at room temperature for 30 minutes. Otherwise, chill and serve at room temperature.

SAUTéED SHRIMP WITH BACON AND MUSHROOMS

5 slices bacon (about 5 ounces), diced
10 ounces mushrooms, sliced
1 green bell pepper, seeded and diced
1/4 cup sliced scallions (white and light green parts)
1 pound large shrimp, peeled and deveined
1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
Tabasco or other hot sauce to taste

Steps:

  • Brown the bacon in a large skillet over medium-high heat. Cook for 5 to 7 minutes, or until crisp. Increase the heat to high. Add the mushrooms, bell pepper, and scallions and cook for 7 to 10 minutes, or until the vegetables are softened and the mushroom liquid has mostly evaporated. Move the bacon and vegetables to one side of the skillet.
  • Add the shrimp to the skillet and cook for 3 minutes, or until just opaque. Stir all the ingredients to combine. Season with salt, pepper, and Tabasco sauce. Serve hot.

SUNDAY'S HEALTHY PARMESAN GARDEN SALAD



Sunday's Healthy Parmesan Garden Salad image

This is a combination of some of my favorite flavors that I tried to create after having something similar at a restaurant. Not to brag, but I think mine came out better :) Even my anti-salad boyfriend loved it and now wants to try other salads! Yippee! Note: I usually use a bit more parmesan, basil, tomatoes and lemon but listed below is the way I got my boyfriend to like it!

4 tablespoons fresh parmesan cheese
1 tablespoon olive oil
2 tablespoons fresh lemon juice
2 tablespoons fresh basil

Steps:

  • Mix the parmesan, basil, lemon juice, and olive oil together to create dressing.
  • Rinse the tomatoes and the romaine.
  • Tear or chop romaine.
  • Halve tomatoes.
  • Place romaine and tomatoes in a mixing bowl or salad bowl.
  • Toss with the dressing.
  • Serve and enjoy!
