Simple and flavorful fresh salsa. Adjust the individual amounts as desired. Serve as a topper for tacos, burritos, etc or just eat with chips.

Ingredients

3 -4 plum tomatoes, seeded and minced
1 sweet onion, minced
1/4 cup coarsely chopped fresh cilantro
1 teaspoon olive oil
1 pinch kosher salt

Steps:

Mix all ingredients and let sit for 15 minutes or so, to let flavors meld.
Try to use kosher salt rather than table salt. It's milder and sweeter.
Note: To make ahead, do your chopping the day before and combine ingredients 20 minutes before serving.

4 ripe tomatoes, chopped
1/4 red onion, chopped
1 jalapeno, minced
8 cilantro sprigs, chopped
3 garlic cloves, minced
Juice of 1 lime
1/4 cup olive oil
1/2 teaspoon salt

Steps:

In a mixing bowl, combine all ingredients together. Toss thoroughly. Let stand 15 minutes before serving.

This is a recipe of my DH Jack's. He makes this often in the summer; we like to use tomatoes from our garden.

Ingredients

8 medium ripe roma tomatoes
1 medium sweet onion
20 fresh cilantro stems
2 garlic cloves
1 tablespoon lemon juice
1 jalapeno pepper (without seeds)
1 serrano peppers (without seeds) or 1 yellow hot pepper (without seeds)
salt and pepper

Steps:

Dice preceding ingredients by hand or use food processor or salsa maker.
Let stand for about 20 minutes in the fridge.
Serve with tortilla chips.
(The onion may be omitted, but not the peppers, for those who don't like onions.).
Serve with chips or over eggs, meat, etc.
