HOMEMADE POTATO CHIPS
Making homemade potato chips is healthy and easy, especially when they're baked in the oven! You'll need potatoes, oil, and salt, plus any other seasoning you want.

- Preheat your GAS oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
- In a large bowl, mix together the potato slices (2 cups) and olive oil (1 tablespoon). Mix well so every surface of every slice of potato is covered evenly- you may want to use your hands for this, since the sliced potatoes may stick together.
- Place the sliced potatoes on the prepared baking sheet, making sure they don't overlap (but they can touch a little on the edges). Sprinkle them evenly with the kosher salt (1 teaspoon) and any other spices you want to use. Bake in the top half of the oven for 15-20 minutes, until golden brown. Turn OFF the oven and allow to sit in oven while it cools off 15-30 minutes (ONLY do this with a gas oven. See notes for electric. This is optional if you're in a hurry, but highly recommended, as it will make the potatoes crispier. Keep an eye on them though- the residual heat can quickly burn them if you aren't careful!).
- Serve potato chips plain or with your favorite dipping sauce.

- Using a vegetable peeler or metal cheese slicer, cut potatoes into very thin slices. Place in a large bowl; add ice water and salt. Soak for 30 minutes., Drain potatoes; place on paper towels and pat dry. In a small bowl, combine the garlic powder, celery salt and pepper; set aside. , In a cast-iron or other heavy skillet, heat 1-1/2 in. oil to 375°. Fry potatoes in batches until golden brown, 3-4 minutes, stirring frequently. , Remove with a slotted spoon; drain on paper towels. Immediately sprinkle with seasoning mixture. Store in an airtight container.

HOMEMADE CHILI POTATO CHIPS WITH SESAME AVOCADO SALSA

- For the homemade chili potato chips: Preheat the oven to 450 degrees F. Line 2 baking sheets with parchment.
- Distribute the potatoes between the prepared baking sheets in one layer. Brush with olive oil and sprinkle with salt and pepper, then flip the potatoes over, brush the other side with olive oil and sprinkle with salt and pepper. Bake, rotating the pans halfway through, until splotchy and brown, 25 to 30 minutes. Keep a close eye on them as they could burn quickly.
- For the sesame avocado salsa: Meanwhile, whisk together the soy sauce, sesame oil, ginger, lime and some hot sauce in a large bowl. Add the avocados and toss to coat, mashing some of the avocados a little bit to bring everything together. Taste and adjust as desired (this is one of those foods that you've eaten half of by the time you're done making it because you'll probably want to taste test it again and again and again...). Top with the chopped cilantro and toasted sesame seeds.
- When the chips are done, immediately sprinkle them with the chili powder. Let cool slightly and enjoy with the salsa.

- Peel, then slice the potatoes very thinly.
- A mandolin does the best job of this and the slices should be as thin as a wafer.
- As you slice, drop them into deep, cold water.
- Bring a deep pan of frying oil to 190 C or 375 degrees F.
- Dry the potatoes thoroughly, then fry them for a couple minutes until they're crisp and golden.
- Drain them on paper towels and then season generously with salt.

- Preheat oven to 350 degrees.
- Cover sweet potatoes with water and boil until tender. They are ready when a fork pierces the potato easily. Should take 20-30 minutes depending on size. Pour off hot water. Rinse with cold water until potatoes cool.
- Peal off potato skin with a fork. Discard the.
- Mix cooked sweet potatoes, cinnamon, vanilla, sugar, salt, milk and butter until combined. Taste the mixture and add more of each ingredient until it is to your liking. The mixture should be thick.
- Unroll pie crust. Add half of the mixture on half of the crust. Leave space on the edges for crimping. Fold the other half of the crust over and crimp the edges. Cut a couple of small slits in the crust. Repeat with the second crust. The final product should look like a calzone.
- Optional: These jacks can also be shaped into individual pastries. Use a large circular or square cookie cuter to make smaller jacks.
- Bake the jacks on a cookie sheet for about 30 minutes or until crust is golden brown.
- Let the jacks cool. Cut each jack into 4-6 slices. Serve alone or with a scoop of ice cream.
