Provided by Natasha Kravchuk

Categories     Easy/Medium

Time 1h15m

Number Of Ingredients 12

2 lbs eggplant (2 large/3 medium/4 small, cut into 1/3" thick rounds)
3 large eggs
3/4 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
1 1/2 cups panko breadcrumbs
1/2 cup grated parmesan cheese
Olive oil (to drizzle over eggplant and 1 Tbsp for the sauce)
1 large or 2 small garlic cloves (pressed or minced)
24 oz good quality marinara sauce
1/4 cup fresh basil leaves (coarsely chopped, (optional, but nice))
1 lb shredded mozzarella (grated on the large holes)

Steps:

  • Preheat Oven to 375˚F. Grease 2 baking sheets. Set up 3 rimmed dishes in this order: In the first one, stir together 3/4 cup flour, 1 tsp salt and 1/2 tsp pepper. In the second, beat 3 large eggs. In the third combine 1 1/2 cups panko crumbs and 1/2 cup grated parmesan. Dip eggplant slices in flour, then beaten eggs, then in the panko/parm mixture.
  • Place breaded eggplant onto greased baking sheets and drizzle tops with olive oil or spray lightly with cooking spray. Bake at 375˚F for 32 min, flipping the eggplant rounds and rotating the pans halfway through (my baking sheets didn't fit on one rack so I put them on separate racks in the top third and bottom third of the oven). Once done baking, remove from oven and reposition rack to the center of the oven.
  • Place a medium saucepan over medium heat and add 1 Tbsp olive oil. Once oil is hot, add garlic and stir 1 min until fragrant. Add marinara sauce and coarsely chopped basil. Bring to a simmer and remove from heat.
  • Spread 1/4 cup marinara sauce over the bottom of a 9x13 or 9x12 casserole dish. Add 1/2 eggplant slices, overlapping if needed to fit, then top with 1/2 marinara sauce and 1/2 mozzarella, Repeat with remaining eggplant slices, marinara and mozzarella. Bake uncovered at 375 for 20-25 minutes or until cheese is melted and slightly golden.

Time 45m

Yield 4 to 8 servings

Number Of Ingredients 9

4 Japanese eggplants, cut in half lengthwise
1/4 cup olive oil
1 teaspoon kosher salt
1 cup jarred marinara sauce
1 cup shredded mozzarella cheese
1/2 cup panko breadcrumbs
1/4 cup freshly grated Parmesan cheese
1/3 cup fresh basil leaves, torn
1/2 teaspoon red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the eggplant halves cut-side up on a rimmed baking sheet. Using the tip of a knife, score the flesh of the eggplant, being careful not to cut all the way through. Rub them evenly with 2 tablespoons olive oil and season with the salt. Roast until tender, 15 to 20 minutes.
  • Remove the eggplant from the oven and divide the marinara evenly over the halves. Sprinkle with the mozzarella. Mix together the breadcrumbs, Parmesan and remaining 2 tablespoons olive oil in a small bowl. Top the eggplant with the breadcrumb mixture and return to the oven until golden brown and bubbly, about 12 minutes. Sprinkle with the basil and pepper flakes.

MINI EGGPLANT PARMESAN

Categories     appetizer

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 18

2 tablespoons extra-virgin olive oil
1 large clove garlic, peeled and smashed
1 shallot, chopped
1/4 teaspoon kosher salt
1 cup jarred tomato-basil sauce, such as Giada De Laurentiis for Target
1/4 cup finely chopped fresh basil
1 teaspoon dried oregano
1/8 teaspoon dried crushed red pepper flakes
1/4 teaspoon balsamic vinegar
1/2 cup all-purpose flour
1/4 teaspoon freshly ground black pepper
1 cup panko breadcrumbs
2 large egg whites
2 Japanese eggplants, sliced diagonally into 1/4-inch-thick slices
2/3 cup olive oil
1/2 cup (packed) coarsely grated whole-milk mozzarella
1/2 cup finely grated Parmesan
Small fresh basil leaves, to garnish

Steps:

  • For the sauce: Heat the oil in a heavy medium saucepan over medium. Add the garlic, shallots and salt. Stir until fragrant, about 2 minutes. Add the tomato sauce, basil, oregano and crushed red pepper. Simmer the sauce until the flavors blend and the sauce thickens, stirring often, about 5 minutes. Mix in the vinegar.
  • For the eggplant: Mix the flour, salt and pepper in a shallow bowl. Place the panko breadcrumbs in another shallow bowl. Whisk the egg whites in a medium bowl until frothy. Dip each eggplant slice in the flour mixture, then into the beaten egg whites, and then into the panko breadcrumbs to coat completely.
  • Heat the oil in a heavy medium skillet over medium-high heat until hot (the surface will appear to be shimmering), 2 to 3 minutes. Add half of the eggplant slices. Cook until deep golden brown, 1 to 2 minutes per side. Transfer the eggplant to a paper-towel-lined plate. Fry the remaining eggplant. (Can be made 1 hour ahead. Let stand at room temperature.)
  • Preheat a broiler. Toss the mozzarella and Parmesan in a small bowl until well blended. Spread 1 generous teaspoon of the sauce over each eggplant slice. Top with a rounded teaspoon of the cheese mixture; spread out to cover and press lightly to adhere. Transfer the eggplant slices to a rimmed baking sheet. Broil until the cheese has melted, 1 to 2 minutes. Transfer the mini eggplant parmesans to a platter and garnish each with small basil leaf. Let stand 2 to 3 minutes before serving.

Time 2h15m

Yield about 4 to 6 main course servi

Number Of Ingredients 22

2 medium eggplant (about 2 1/4 pounds), cut into 1/2-inch-thick round slices
Kosher salt, as needed, plus 1 tablespoon
5 cups fresh breadcrumbs
1 tablespoon dried oregano
1 tablespoon dried thyme
Freshly ground black pepper
Vegetable oil for frying
All-purpose flour for dredging
6 large eggs, beaten
2 tablespoons whole milk
Olive oil, as needed
7 cups QUICK MARINARA SAUCE, recipe follows
2/3 cup grated Parmesan, divided
1 pound fresh mozzarella, thinly sliced
3 tablespoons extra-virgin olive oil
1/2 medium onion, diced (about 1/3 cup)
5 cloves garlic, chopped
7 cups whole, peeled, canned tomatoes in puree (about two 28-ounce can), roughly chopped
2 sprigs of fresh thyme
2 sprigs of fresh basil
1 tablespoon kosher salt
Freshly ground black pepper

Steps:

  • Arrange the eggplant slices on several baking sheets and sprinkle generously all over with kosher salt. Set aside to let the bitter juices weep from the eggplant, about 1 hour.
  • Transfer the eggplant to a colander in the sink, and rinse well under cold running water. Transfer eggplant to a work surface and blot very dry with paper towels.
  • In a large bowl, whisk together the 1 1/2 teaspoons salt, breadcrumbs, oregano, thyme, and season with pepper.
  • Place the flour in a medium lipped plate or bowl. In another medium bowl, whisk the egg and milk together. Dredge an eggplant slice in the flour, then dip it in the egg, and finally dredge it in the breadcrumb mixture. Shake off any excess breading and transfer the eggplant to a baking sheet. Repeat with the remaining eggplant.
  • In a large straight-sided skillet, pour the oil to a depth of 1/2 inch. Heat the oil over medium heat until it registers 400 degrees F on a deep frying thermometer. (The oil must be heated to 400 degrees F. so that the breaded eggplant, when added, will drop the temperature of the oil to the proper frying temperature of 375 degrees F.)
  • Working in small batches, fry the eggplant slices, turning once, until golden brown, about 3 minutes per batch. Using tongs, transfer to a paper towel-lined baking sheet and season with salt to taste. Repeat with the remaining eggplant.
  • Preheat the oven to 400 degrees F. Lightly brush a 15 x 10- x 2-inch-baking dish with olive oil. Cover the bottom of the baking dish with 1/3 of the marinara sauce and arrange half of the eggplant over the sauce. Cover the eggplant with another 1/3 of the sauce. Scatter half of the Parmesan and half of the mozzarella over the sauced eggplant. Repeat with the remaining eggplant, sauce, Parmesan, and mozzarella. Bake until hot and just beginning to brown, about 30 minutes. Serve immediately.
  • Heat the oil in a medium saucepan over medium-high heat. Saute the onion and garlic, stirring, until lightly browned, about 3 minutes. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
  • Remove and discard the herb sprigs. Stir in the salt and season with pepper to taste. Use immediately, store covered in the refrigerator for up to 3 days, or freeze for up to 2 months.
  • Yield: about 3 1/2 cups
