Steps:
- Combine lemon juice, olive oil, garlic, oregano and salt in desired quantities.
- Marinate chicken breasts in seasoning mixture for two hours.
- Seal in a foil packet and bake at 350 degrees for 20-30 minutes or until chicken is cooked through.

CHICKEN GARLIC BITES
Simple and fun to make, great to eat! Prep time includes marinating the chicken. Use matzo meal instead of the breadcrumbs and this is good for Passover as well.

- Place chicken in shallow dish.
- In small bowl, mix olive oil, garlic, and black pepper.
- Pour over chicken.
- Cover and marinate 30 minutes.
- Drain.
- Preheat oven to 475°F.
- Mix bread crumbs and cayenne.
- Coat chicken.
- Arrange in a single layer on cookie sheet.
- Bake 10 minutes or until brown.

EASY CHICKEN SATAY
Great for kids and parties! I use chicken tenders rather than preparing the breasts. Prep time includes marinating time.

Steps:
- Soak 15 wooden skewers in water.
- In a large plastic bag, combine all ingredients and toss to coat.
- Close bag and marinate in the refrigerator for 30 minutes.
- Remove chicken from marinade, discard remaining marinade.
- Thread chicken strips onto skewers, threading back and forth.
- Grill or broil chicken until no longer pink.
- Serve with your favorite dipping sauces!

I got this recipe from a Somersizing mailing list several years ago. It's a protein/fat recipe suitable for those who are doing Level 1 of the program. Enjoy!

Steps:
- Combine the sausage and 1 1/2 cups cheese and spread in the bottom of a pie plate or a 9" x 9" casserole dish.
- Pour the eggs over the top of the meat mixture and top with remaining cheese.
- Sprinkle tomatoes and mushrooms over the top.
- Bake at 350 degrees until a toothpick inserted in the center comes out clean, about 20-30 minutes.
KOTA RIGANATI - GREEK OREGANO BAKED CHICKEN
This recipe was found on greecefoods.com I haven't tried it yet, but it looks like a tasty recipe. Prep time includes marinating time overnight. The recipe may take about 2 hours, but most of that is just waiting for the oven. The only real prep is the potatoes. -Update, still haven't made this, but now I really want to! I updated the recipe to match with Reen's comments. Thanks!

Steps:
- Mix all ingredients except potatoes with chicken and place in a plastic bag and marinate overnight in the refrigerator.
- Bake chicken uncovered at 425 F until slightly browned.
- Add potatoes, cover with foil and bake at 325 F for 1 hour to 1 1/2 hours.
